Welcome to our first Tiger College Cookbook! We know how important eating is to help you get the fuel you need to make it through the semester with lots of energy and a full tummy. This cookbook was created with recipes from your parents, faculty, and staff, in hopes to help you find your way around the kitchen with recipes that have been tried and tested. Cooking on your own can be a challenge, especially when you have a busy schedule, so we have accumulated various recipes, some easy and some more challenging, to help accommodate. Learning to cook is a process but we believe all of our Tigers are up to the task. Just remember, you may not always be successful the first time around, but like with everything, practice makes perfect. So whether you mixed up sugar with salt, overcook something, or forget an ingredient, have fun, experiment, and push your boundaries.

Background & Hint I did a lot of searching and trying when it comes to good old American pancakes, and this is the recipe I come back to because the recipe is very simple but you still end up with fluffy and tasty American style pancakes....maybe you will like it as well. It’s done quickly, and it’s a great breakfast option, or if you just want to have something basic and sweet that you can build up with your favorite toppings...I know I always do =)

Marija’s Pasta Salad Ingredients • 300g of fusili pasta • 1 red pepper • 1 purple onion • 1 cucumber • 7-8 cherry tomatoes

Directions • Cook the pasta as per instructions on the box, strain, and let cool • While the pasta cools, cut the pepper, onion, and cucumber in cubes • Slice the cherry tomatoes in halves • Mozzarella should be cut up in small pieces, if the small mozzarella balls, cut them in half

• Mix all ingredients together in a bowl • 1 pack of mini mozarella balls or one mozzarella

• Drizzle with olive oil and aceto balsamico and mix the salad • Season with salt and 2 teaspoons of Italian seasoning (this can be less depending on what you like) • Put in the fridge for an hour so it can cool off, store in fridge (good for two days in the fridge)

Tips when seasoning, it is important to use less and taste before adding more so that you season to your liking!

want to spent a lot of time cooking. The nice thing is that this recipe is amazingly flexible for substitutions. First comes “classic” version, which I calibrate for 2 eaters. Consider all measurements as “circa” and use more or less as you feel. Croatian names are in parentheses to make shopping easier.

• 3. Set a second smaller pot with a cover and only 2 cm of only lightly salted water to boil for the broccoli • 4. Cut the broccoli in small pieces of about 2 cm • 5. Put broccoli in the second pot, cover, and steam on low-medium heat for 5-10 min. Broccoli should be soft, but “al dente” and not mushy. Drain. • 6. Put the pasta into the boiling water, reduce heat, and cook as required. Drain. • 7. Put olive oil in a large pan on medium heat. Put in the anchovies and let them dissolve in the olive oil

Ingredients • 180 g pasta – use a short pasta, and see below for more tips • 350 g broccoli • 5 pieces of anchovies (inćuni), preferable in olive oil • A couple tablespoons (or more) of quality olive oil • 40 g pine nuts (pinjoli) • Salt, pepper

• 8. Toss the drained broccoli into the olive oil and mix with a spoon, reheating the broccoli in the oil. Season with salt and pepper • 9. Serve in soup plates: First a layer of the pasta, then broccoli and olive oil, then sprinkle with roasted pine nuts. Add more olive oil if you’re a fan. • Enjoy! Drink some good, cold white wine with your meal – unless you still have to study accounting in the afternoon.

Here are all the tips and variations, read before you start cooking: • Hot tip: Try 100% chick pea pasta (slanutak) or 100% red lentil pasta (crvena leća), available at dm or even at some supermarkets. They taste much more interesting than the plain pasta. Even 100% buckwheat pasta (heljda) is very attractive in this recipe, if you like the strong taste of it • I like to use *lots* of olive oil in the pan. And then add some more on the plate. The quality of the olive oil *does* matter: Aim high. • I also like to use *lots* of anchovies (they are quite salty, so go easy on the added salt)

• Pine nuts are available in most supermarkets now. They’re fancy and kind of pricey. You can easily substitute them with sunflower seeds, again *lots* of them, which you also toast just like the pine nuts • I also like to cut up some black olives, stone removed, and sprinkle on top together with the pine nuts or sunflower seeds

• If you hate anchovies or fish, leave them out. You’re missing out on a great taste, though. In that case, use more salt everywhere. A good substitute is to sprinkle feta cheese on top, or Grabancijaš cheese, a Croatian cow version of feta, available in supermarkets if you look • If you hate broccoli, use the long, broad, flat green or yellow beans easily available (zelene or žute mahune). Cut in 3-4 cm pieces and cook just like the broccoli. Delicious! • General tip: Heat your plates if you feel fancy. And cool that white wine. I’d take a young Malvazija. Or a white Dalmatian islands wine if you feel fancy, like Pošip. But Jamnica bubbly water with a slice of lime will be delicious, too. … just make it your own! That‘s the best part about cooking, once you have a bit of experience!

Mama Baković’s Pasta with Chicken Dinner/ Lunch

• Wash and drain peas and add into pan • Continue frying for 5-6min while adding water if needed • Once pasta is cooked drain it and pour into pan • Continue cooking for another 2-3min. (if too dry add little water)

Academics Spinach Gnocchi

Ingredients • Pack of gnocchi (500g) • 1 block of frozen spinach (450g) • 1 red onion • 200ml of cooking cream • All spice (ex. Vegeta) • Parmesan or grana padano • Butter • Salt

Directions • Take the spinach out of the freezer an hour before cooking • Dice the red onion and simmer on butter in a frying pan at medium-high heat, add 2-3 shakes of salt to speed up the process • When the onion is soft, add the block of spinach to the pan and stir as the block melts into the onion and butter. Turn the heat to medium. • Once the spinach has softened, add the 200ml of cooking cream, 1 teaspoon of all spice and let simmer for 5 minutes. • During this time cook the gnocchi as per the instructions on the package • After 5 minutes, add your grated cheese to the spinach mix and stir and let simmer for 2-3 minutes. Taste the sauce to see if you need salt. • Add the gnocchi to the mixture and stir.Enjoy!
