ome lovely news to start with this month. Our gardening writer Beth Otway, who joined VantagePoint in January 2015, has been shortlisted as one of the finalists for the Property Press Awards as the Garden Journalist of the Year for her column in this magazine. This is a marvellous accolade to a gifted horticultural writer who we are very pleased and proud to publish. Good luck Beth!

Our main feature this month is on H Forman & Son, the East End's last salmon smokehouse which was founded in 1905 and is still run by the family. There is a story behind this. For our December 2018 issue, we decided to do a smoked salmon tasting and I contacted various suppliers and supermarkets for samples. I emailed Lance Forman, the owner of Formans which I knew to be one of the finest producers, and he replied immediately to say that he would be happy to let us have some salmon but that he would be coming with it! We agreed immediately and had an absolute masterclass from him in how to evaluate and taste salmon. His salmon was voted by far the best in our blind tasting, so we were delighted to have the opportunity to visit his premises earlier this year and have a guided tour of a fascinating process. If you want the best smoked salmon this Christmas, do give it a try - you won’t be disappointed. Please note that the last date to order is 15th December.

Artisans sharing their skills

Phil Kemp enjoys being introduced to the creative talents of local artisans at Dobbie & Rose Handwoven Homewares and Hazelhouse Jewellery – and the opportunity to create your own art at their workshops.

ebecca Harvey-Browne (below) runs the Dobby & Rose Weaving Studio in Churt where she prepares handcrafted woven homewares and also runs various workshops. Rebecca was introduced to her creative world at Godalming College where she did a lot of screen printing which motivated her to go on to do a degree at the University for Creative Arts in Farnham. Her firstyear studies included Weave on which she rapidly became hooked and which inspired her to develop her successful creative career.

And it provides the opportunity to shut-off from everything and to just lose yourself in what you are doing!” The courses are held in her barn studio overlooking the surrounding Churt countryside. “We have regular visitors from the field next door including badgers and deer! It’s beautiful and very inspiring from the moment you walk into the barn.”

Rebecca’s slogan - ‘Traditional Weaving Meets Modern Design’ - perfectly encompasses her thinking. “I’m very passionate about keeping the skill of weaving alive as there is the worry that these older crafts may disappear. By introducing people to the craft and showing them the way to adapt it to suit more modern interiors widens its appeal.”

Rebecca creates a wide range of handwoven homewares that are available to buy, from lampshades and cushions to pouches, and she also offers made-to-order accessories. And for those that come along to the workshops: “They have their own very bespoke piece of artwork and things that they have actually woven and created themselves.”

“My Frame Loom course enables people to make real textural pieces like wall hangings - and with smaller looms everyone from children all the way through to adults can use them. It’s a great introduction to the craft.” Other courses introduce people to larger looms and more choice of fabrics, patterns and colours. And her two-day course gives hands-on experience in

glass artworks include ‘suncatchers’ for displaying outdoors, variously shaped glass boxes and different styles of dishes, and of course Mark makes a striking range of glass jewellery.

Mark Laird (right) runs Hazelhouse Jewellery in the north-west corner of Surrey in Camberley. As a fused glass and jewellery designer he works with a range of materials including lampwork glass and fused glass.

“My studio has three kilns, from the ‘baby’ kiln which is used for firing glass fairly quickly, a bigger kiln which is the workhorse of the studio and is on most of the time, to the largest kiln which is used when I’m running classes as I can get everyone’s pieces in there together.”

He has been working creatively with glass for over ten years, and his strategy of attending courses run by internationally renowned glass masters ensures that he is fully connected with the creative trends of his art. These glass artists include Dale Chihuly and Craig Mitchell Smith both from the USA, and Miriam Di Fiore in Italy and Cardiff-based Ruth Shelley.

“I have beginners workshops which are standalone evenings or afternoons where you can come along and with some guidance make something you can be proud of. The youngest I’ve had for those workshops are 10-11 year olds who attend with an adult, and they produce wonderful art that can be displayed on a windowsill or shelf. In our longer workshops, which may be over the course of a couple of sessions, we will create with you a piece of art for a wall.”

Mark creates an incredible range of different artworks not just during the workshops he runs but also making them available for people to buy for putting on display in their homes. These include eye-catching pictures made on a sheet of glass using a combination of glass powder, crushed glass, fine threads of glass - and on some he also adds handmade glass flowers. Other

Mark also runs a Glass Club that meets over the course of a month. The idea is for you to come along with your own ideas and implement what you want to do with guidance. “And I’ve got regulars who’ve been coming for five years or so – and a number of these have bought their own kilns so they can create their art at home. But they still come back attracted by the sociability of the club and they like to sit and chat about glass.”

H Forman & Son – London Cure Smoked Salmon Phil Kemp meets with Lance Forman, whose great-grandfather founded this world-renowned smokery for curing fresh Scottish salmon over a century ago, to see first-hand how this gourmet delicacy is produced.

out and curing fish was effective with the smoke providing protection. An alternative method used by Scandinavians was to bury salmon in salt – which is where the term ‘Gravadlax’ originated, with ‘grav’ from grave and ‘lax’ meaning salmon.

nderstandably Lance Forman is very proud of their reputation as the world’s longest standing producers of London Cure Smoked Salmon, with well over 117 years’ experience resulting in smoked salmon being one of the most popular gourmet foods internationally.

“To prepare smoked salmon you take the fish and remove the head and tail, split the fish in half and remove the backbone - then you have two fillets. You then sprinkle on salt and leave it for up to 24 hours. You will lose somewhere between five and ten percent of the weight. That’s the first step of the curing method.”

“My great-grandfather Aaron ‘Harry’ Forman was an immigrant from Odessa in Ukraine, fleeing the anti-Jewish Pogroms in the 19th century. Along with other immigrants he and his family settled in the East End of London. Harry had set up a little café in Whitechapel with his family, but it was his son Louis who had seen other caterers selling popular smoked fish that prompted Harry to set up his smokehouse business in 1905.”

The salt is there to suck out the moisture from the fish which starts to preserve it. The next step is to place the fish in kilns to dry them out.

Lance explained that in the very early days salmon smoking wasn’t to produce a gourmet food but was an efficient way of preserving fish before refrigeration became more efficient. Drying

The online retail business has grown and grown – and at Christmas it goes completely bonkers to a point we’ve had to turn off the orders for Christmas because we’ve reached capacity! And this online business saved us during Covid as in our wholesale sales side half of our business is in supplying shops, with the other half supplying restaurants, caterers, and hotels. Literally overnight the latter half collapsed – but people still have to eat and they don’t have to eat in a restaurant or hotel, they can eat at home. And there was difficulty accessing supermarkets.”

Forman’s are not just smoked salmon producers. Far from it. “Just over 20 years ago, when we had to move our factory, a lot of chefs at the time were saying to us that they love our smoked salmon – but asked can’t you make other foods? And this was at the turn of the millennium – around the time of the so-called dot-com bubble – a good opportunity to start up our online business as an artisan producer focussing on the best of British food. And people were also starting to show interest in food provenance and so on.”

Lance emphasised the fact that unlike a retail shop that stacks their products on shelves all of theirs is bespoke and freshly made to order. And there are hundreds of product lines in their Forman and Field catalogue.

“We called it Forman and Field rather than H Forman & Son as we wanted to differentiate it

I thoroughly enjoyed a tour around the smokehouse with Lance and to see his team hard at work at every stage of their production process – and the tasting platter of a variety of fish including of course their smoked salmon was absolutely delicious! And as a little aside, which I found absolutely fascinating, as part of a Zero Waste project Forman’s worked with an artist who wanted to tan smoked salmon skins completely naturally without chemicals to turn them into artworks. Lance revealed some of the results which included creating fish leather labels for bottles of English sparkling wine!

Russian-style buckwheat blinis are a classic dinner party canapé and, if you have the time to spare, they are so easy to make at home. For an exciting dinner party starter, try making your own large blinis so that each guest gets to enjoy one beautiful plate.

Good quality smoked salmon is essential for this showstopping dish, in which smoked salmon is the star of the show. It’s important to use the freshest salmon you can find to make the delicious cured salmon element, and Forman’s Fresh Scottish Salmon is just the ticket.

Ingredients 60g buckwheat flour; 85g cup all-purpose flour; 1/2 teaspoon salt; 1 teaspoon yeast, instant or rapid-rise; 230ml milk, warm; 30g unsalted butter, melted; 1 large egg, whites and yolk separated; room temperature

Ingredients 200g Forman’s Smoked Salmon; 225g Forman’s fresh Scottish salmon; 50g sugar; 50g sea salt; olive oil; 1 shallot, finely chopped; 2 unwaxed oranges, zested, then pith removed and cut into segments; 2 tsp brown sugar; 6-7 chives, finely chopped; 1 unwaxed lemon; mascarpone; Keta caviar; salt and pepper, to taste.

Makes 4 large blinis

Serves 4

Method 1. Mix together the dry ingredients in a large bowl. Make a well in the centre and pour in the milk, then whisk until smooth. Cover the batter and let rise until doubled in size (approx. 1 hour). 2. When doubled, stir in the cooled melted butter and egg yolk. In a separate bowl, beat egg whites until stiff. Fold whites into the batter, then let rest for 20 minutes. 3. Place a large frying pan over a medium heat, then brush lightly with melted butter. Pour in some of the batter to make a 10cm blini and cook until you start to see bubbles on the top; about 1-2 minutes. Flip the blini over and cook for another minute or 2 until golden on the bottom. Keep warm covered with foil in a low oven. 4. Mix the crème fraiche, dill, shallot and lemon zest in a bowl. Season to taste with salt and pepper. 5. To serve, lay a blini in the middle of a small plate. Top with a generous spoonful of the crème fraiche mixture, followed by 50g of smoked salmon. Garnish with a sprig of dill and freshly cracked black pepper and serve immediately.

Method 1. To make the cured salmon, place the fresh salmon in a dish and cover with a mix of 50g sugar and 50g sea salt. Refrigerate for at least 5 hours; preferably overnight. 2. To make the orange confit, sweat the chopped shallot in some olive oil until soft, then add the pithless segments of two oranges, the brown sugar and 1 tbsp water. Cook over medium heat for 15-20 minutes until you achieve a jam-like consistency. Allow to cool. 3. To prepare the tartare, roughly chop the cured and smoked salmon and mix with the chopped chives and a splash of olive oil. Add the zest of one lemon and one orange and a little juice of each, then season with salt and pepper to taste. 4. To assemble the tian, half fill a metal ring with the salmon mixture and make a slight dip in the centre. Place a teaspoon of the orange confit in the well and top with the rest of the salmon mix to approx. 5mm below the top of the ring. Spread the mascarpone on top and decorate with a spoonful of keta, then carefully remove the ring and serve.

Jimmy’s 12 wines of Christmas

Jos. Prüm Riesling Kabinett, Germany, 2012 (9.5%, Taurus Wines nr. Cranleigh, £39.99) which I tasted this year as part of a Prum vertical and was the winning wine for its complexity complimenting freshness but aged notes and medium-dry. A richer alternative would be the Pegasus Bay Riesling, Waipara, New Zealand, 2019 (13.5%, Waitrose Cellar, £16.99) an off-dry style, fuller body, with ripe stone fruit, sweet spice and honeyed notes.

he festive season is upon us, whether you subscribe to Ebenezer Scrooge’s bah humbug or as excited as Will Ferrel’s Elf, there is no escaping the showdown of Christmas adverts nor avoiding countless repeats of crooners such as Frank Sinatra, Andy Williams or Dean Martin that reverberate from every retail outlet.

Of course the type of evening dinner you have can dictate your wine. In our house we typically rustle up our favourite meal from that year, and this year it has all been about Georgian gastronomy. Think various spices, walnuts and hearty cuisine including the original stuffed-crust pizza bread, kachapuri. With this I’d go for Shumi Iberiuli, Khikhvi Qvevri Amber, Georgia, 2020 (14%, tasteofgeorgia.co.uk, £20) which is made in large clay pots with skin contact producing a rich, rounded orange wine, with acacia, paprika, walnut and spice. But this wine also compliments pork dishes, especially with apple sauce or pigs in blankets!

I’m a sucker for the holiday season; family, friends, food and a detailed wine list that needs to be curated to span the celebratory itinerary (I’m not so keen on presents nor my expanding waistline). Below I have outlined some of my tops drops over the key holiday dates sourced from across Surrey and the world at large – some of these are splashout wines because, well, it is Christmas. Christmas Eve We typically structure this evening as a gentle precursor to the big day. The kids are allowed one present each from under the tree which is easier said than done, and once they’re tucked up in bed (!) we launch into ‘It’s a Wonderful Life.’ I keep the wine choices on the lighter, fresher and brighter side with a more firmer and alcoholic red to compliment the cascade of tears to final scene with Jimmy Stewart and the entire Bedford Falls (for this try the Ridge Estate Zinfandel, Lytton Springs, Sonoma, California, 2015, 14.5%, Wine Unlimited, Dorking, £44.99)

Christmas Day Every Christmas morning wether you’re starting with breakfast or presents demands a bottle of bubbles. Try the Charles Heidsieck Brut Reserve, Champagne, NV (widely available £50) which is one of my go-to Champagnes made from nearly 50% reserve wine meaning that this is complex, rich, toasty with superb freshness. This is nearly as good as Krug, at a third of the price. A valuefor-money option is the excellent Colmant, Cap Classique Brut Reserve, South Africa, NV (12.5%, The Vine King, Reigate, £23.99) which is creamy with a lifted freshness. Try both with some fabulous smoked salmon from H Forman & Sons, a perfect combination.

Sunset is usually around 4pm and that’s when the first curated wine surfaces. This is a delightful aperitif to dinner and I often start with a lower alcohol but complex style such as the iconic Joh.

The key thing to consider with Christmas lunch is that we have plenty of roasted elements, and often gravy. This requires wines of a certain intensity, so much so that often the main meat (or alternative) doesn’t matter. Try a wonderfully rounded, creamy and nutty Valserrano Rioja Blanco Gran Reserva, 2015 (13%, davywine.co.uk, £40) or an ageing and complex Pinot Noir such as Felton Road ‘Cornish Point’ Pinot Noir, Central Otago, New Zealand, 2010 (14%, Wine Unlimited Dorking, £59.99). The melting pot of personalities and sheer time of close quarters requires wines of powerful alcoholic intensity just to ride the storm. The wine has got to be really good, just so it can scupper any heated ‘discussion.’ and quality – then try the Villa Cafaggio Chianti Classico Magnum, Italy, 2018 (13.5%, Waitrose Cellar, £30). This double bottle looks stylish on the dinner table and is decent kit, full of red fruits, earthy spice, cedar and tobacco.

I have selected the superb biodynamic wine of Montirius, Le Clos, Vacqueyras, Southern Rhône, 2007 (14.5%, Wine Unlimited, Dorking, £32.99) which easily puts any Châteauneuf-du-Pape to shame; it is powerful yet elegant, with volumes of red/black fruit, spices and a soft gamey finish.

When the evening cheeseboard is presented it’s time for a volley of fascinating wines. If you’re like me and have to feature Comté, then you must feature a wine from the same region, Jura. The Benoit Badoz, Vin Jaune, Jura, 2014 (15%, The Vine King, £36.55) is a dry, full-bodied, oxidised wine (think sherry but without the added alcohol) with notes of nuts and spices that compliment any hard cheese. For blue cheese try the fantastic Donnafugata Ben Rye Passito di Pantelleria 2018 (half bottle, 14.5%, Taurus Wines, £44.99). It’s unctuously sweet, but fresh too, full of apricot,

Celebrating self-watering containers

compost soup I forged a plan to correct this error: three holes were drilled in each of my Gardman Plant Tower pots; the holes were positioned just above the planter’s reservoir, allowing excess water to run out. This simple adaptation transformed my growing in Gardman Plant Towers and these plants produced a decent harvest. The initial setup of the Autopot is rather fiddly. The pipes need to be laid out and connected, and the trays and floats assembled correctly. However, once installed, due to the large size of the reservoir, the Autopot requires minimal effort. Simply fill the reservoir with water and fertiliser every 2-3 weeks (check weekly during heatwaves). I only had one problem: a float got stuck in the ‘open’ position causing my Autopot’s tank to overflow the tray and start draining the reservoir. Thankfully, wiggling the float released it. Apart from this one incident, my Autopot 4-Pot System performed exceptionally well, maintaining a consistent supply of water to plants’ roots with minimal intervention required. It produced fantastic plants with a bumper harvest! The Quadgrow is simpler to set up than the Autopot. It features two connected ‘SmartReservoirs’ that together hold 30L of water; Quadgrow plant pots sit in recesses (two above each tank). Inside each pot, capillary matting runs through the compost down into the SmartReservoir below. Capillary action draws water and fertiliser up to the compost and the plant’s roots. The Quadgrow has a smaller reservoir so requires more frequent filling than the Autopot (check every other day in hot weather). During intense heatwaves, my Quadgrow plants consumed their entire 30L tank of water in 2-3 days. Despite the Quadgrow producing larger and bushier, more impressive-looking plants, the overall yield was significantly less than that achieved by the plants grown in the Autopot 4-Pot System. NB: All of my self-watering containers were filled with Coco & Coir Bloom All Purpose Compost; I used the fertilisers that were recommended by the manufacturers of each product.

If you’ve got a penchant for container gardening, I’d like to introduce you to self-watering containers: literal lifesavers for plants and gardeners! I’m here to show you effective yet simple to use products that will enable you to enjoy success growing a wide range of edible crops like the chilli peppers that I grew. Gardman Plant Tower pots include an insert that drops into the bottom of the pot, creating a reservoir. Cones in the insert are filled with compost, these utilise capillary action to draw water up to the plant’s roots. 3. As you follow the path around the lake, you will notice that there are trees, shrubs and reeds by the water. Frensham Little Pond is a haven for breeding water birds and so we have created a buffer zone for them to protect them and their young. If you look carefully into the lake, you will see the nesting rafts we have built for visiting terns.

The 55 hectares of Frensham Little Pond provide a haven for birds and wildlife. This walk offers a treasure trove of delights from the views over the tranquil lake, to the vigorous climb up to Snowball Ridge, and the promise of warming sustenance at the Tern Café. The sandy soil makes for dry-ish paths so you can enjoy a stroll here at any time of year and it makes an ideal family walk on Boxing Day!

4. The path follows the edge of the woodland alongside a boundary fence. At this point it is skirting a small wetland area which is a sanctuary for water and woodland birds. After 100 yards the path turns sharply right through the woodland and crosses a broadwalk over the marshy ground. Look out for woodland birds such as jays, tits and larks. Among the reeds you may be able to spot or hear sedge warblers and reed warblers. You will come out at the edge of the woodland.

1. Leave the car park along a flat path signposted to the cafe through the Scots Pine trees. Unless you want a drink before you start, walk behind the café keeping to the flattish land, walking through deciduous trees and round the edge of the lake. You will get your first glimpse of the pond.

5. As you come out of the wood take the path to the right keeping the trees on your right hand side as you walk back towards the lake. It was drained during the Second World War to avoid being a navigable landmark for German bombers attacking Aldershot. It was then used for tank training before being refilled in 1949. By the water you will spot a couple of places that have been fenced off for dogs to splash about without disturbing the waterfowl.

2. Follow the path as it bends round to the right and comes close to the water and you will see the medieval dam. The pond has changed very little since it was created. Continue following the path as it bends to the right along the lakeshore.

and you will begin to climb up to the ridge. To your left is a large area of heathland which in summer is ablaze with purple heather and humming with bees and butterflies. On your right the trees change from deciduous broadleaf trees to Scots Pine and conifers. 7. At the top of the ridge you will come to a cross roads in the trees. Take the path to the right. This is Snowball Ridge, and is a lovely walk through the trees along the ridge. Listen out for the birds, such as firecrest, woodpeckers and nuthatch. There are some benches up here so you can enjoy the great views before beginning your descent back down to the lake. 8. As you come down the hill you will see the welcoming café. Congratulations! You have successfully circumnavigated Frensham Little Pond and here's an opportunity to reward yourselves with a refreshing cuppa and a piece of cake or a light lunch. Petworth Community Garden

Despite its tucked away location, the garden is buzzing with life and as well as being a place to grow fruit, flowers and vegetables, it’s a place that helps people grow too! Amongst the raspberry canes and greenhouses people make friends, gain skills and improve their mental and physical health.

icture a garden where juicy raspberries grow next to scented sweet peas, bees and butterflies flutter from brilliant yellow sunflowers to budding tomato plants, and the laughter of people gardening fills the air.

Recently the Petworth Community Garden was chosen to receive a special tree from The Queen’s Platinum Jubilee “Tree of Trees”. Kate Green said, “We’re delighted to receive this tree in recognition of the hard work of our team and volunteers. Our garden is about involving everyone, no matter what their ability, using the natural environment to improve health and wellbeing.”

This is the Petworth Community Garden, tucked away at the back of a housing estate on the outskirts of Petworth, which provides a wide variety of community projects for all ages in the local area. From humble beginnings in 2005 the garden was started by small group of low-income locals, who wanted to 'Grow Their Own' organic fruit and vegetables on an overgrown allotment.

You can support the Petworth Community Garden by buying their 'Jammy Dodgers' homemade preserves or rural crafts at Petworth's Christmas Market on Sat 3rd December 2022.

Over the following 16 years, with a lot of hard work and willing volunteers, the garden has grown and been transformed into a beautiful community space. It now features raised allotment beds with incredible variety of seasonal produce, plus wheelchair accessible paths running between herb beds and wildlife gardening areas. In addition to the outdoor spaces, there is a solar-powered activity shed, composting toilet and a large polytunnel.

Each week there are a daily outdoor and rural activities at the garden, accessible to a wide range of people including low-income families, older or more isolated locals, and people with mobility or additional needs. The most popular group is the ‘Learn & Grown’ session on Tuesdays, where people come together to grow and harvest their own food. There is also a ‘Plot to Plate’ cookery group to learn how to make seasonal, cheap and healthy meals from the fruit and vegetables grown at the garden. The ‘Men’s Shed’ takes place every Wednesday and local men meet and make beautiful rural crafts such as birdhouses, bug houses and wine racks! While their ‘Thriving Thursdays’ is quieter, therapeutic horticulture session, to support those needing a smaller group, such as older people with dementia and locals with mental health support needs. The Midhurst Society Thursday 15th December Guests are welcome to their special Christmas event at the South Downs Memorial Hall, Midhurst GU29 9DH. They are delighted to welcome the Siena Singers for their debut performance which starts at 7.30pm. They are a group of 16 a cappella singers who rehearse at the church of St Catherine of Siena, hence the name. The Siena Singers will sing a selection from 400 years of Christmas music. Entrance for visitors is only £3, and delicious nice home-made nibbles and wine will be served after the performance. Grayshott Folk Club Friday 16th December 7.30pm They always strive to get the very best seasonal entertainment they can afford and this year, they've really pushed the boat out. After years of hoping to get them to Grayshott, they've finally persuaded St. Agnes' Fountain to include them in their annual Christmas Tour. This will be their twenty-second year of taking seasonal and festive songs around the country. The band features Fairport Convention's Chris Leslie, who plays amongst other things, fiddle, mandolin, tenor guitar, bouzouki, ukulele, banjo, oud, whistle and native American flute and anything else he can lay his hands on!
