Wine was not prized mainly as a source of pleasure or even sustenance but, instead, as a means of communion with one’s god or gods. The process of making wine is said to be a magical process as the fermentation methods used doesn’t require the hands of the human being. Being a natural process, meant that the transformation of fresh grape juice will be turned into alcoholic wine.

HISTORY

Wine has a long rich and truly fascinating history. Ever since in ancient Mesopotamia or perhaps even before, this remarkable beverage has fulfilled our thirst, empowered our passion and loosened our tongues to devour this elixir. Wine is sensual and sensorial. A token for gatherings, a celebratory for success, and the drink of conviviality. Wine has been revered, blessed, and enjoyed throughout the ages by rulers, popes, and ordinary people.

TRACES

The earliest known traces of wine are from Georgia, Iran (Persia), Armenia, and Sicily. Wine reached the Balkans by 4500 BC and was consumed and celebrated in ancient Greece, Thrace and Rome. Throughout history, wine has been consumed for its intoxicating effects.

GIFT FROM GOD Wine made people feel good and it seemed to produce a spiritual connection to a supernatural or transcendent realm. This is believed in ancient cultures, from Neolithic Transcaucasia, where wine was first drunk regularly to Anatolia, Egypt, Greece, and Rome and wine was deemed to be a gift from the gods. Especially in classical Greece and then in Rome, where drinking became commonplace, the heady beverage also provided indulgence and sometimes unchaste for the rich and a nourishment for the poor.

KINDA DRUNK The type of drunk you get from wine is said to be warm and cosy, making the individual feel relaxed- kinda drunk. Not the drowsy and you start doing things you will normally will never dokinda drunk. But you will still be you, but feel more warmth within you- kinda drunk.

Scientists have found an 8000-year-old pottery is the evidence of the earliest grape wine making in history. The earthenware jars contained residual wine compounds and they were found in two sites south of the Georgian capital, Tbilisi. The jars contains images of grapes and a man dancing.

The qvevri is an earthenware vessel used to store and age wine for thousands of years and it is becoming the unofficial symbol of the country! Archaeologists have named Georgia 'the cradle of wine' as they have traced the world’s first known wine creation back to the people of the South Caucasus in 6,000BC. Georgians discovered that by squeezing the grapes and creating grape juice could be turned into wine by burying it underground for the winter. Some of the qvevris that were buried in could remain underground for up to 50 years or more!

HOW TO TASTE

Professional tasters undertake a sensory evaluation of a wine based on appearance, aroma, flavor, body, complexity, finish and overall quality.

Clear or cloudy (Not a problem because unfiltered wine can be cloudy and perfectly fine) Colors, hinted with both grape variety and age while the transparent strands of alcohol that run down the sides of a glass after swirling it or drinking from it indicate a high sugar and/or alcohol content. Recognizable aromas or flavors on the nose and palate can imply grape variety, oak, and the wine's origin.
