The Ocean Breeze December 2022

A publication for members of The Ocean Club of Florida

Did You Know? Did you know that Victor Gil our lifeguard is a junior at Park Vista High School. He recently swam against the entire state of Florida. He placed 10th in the 200 free relay and 18th in the 100 breast stroke for the state of Florida. (Watch out Michael Phelps.) Did you know that Kyla Blankhorst our other lifeguard is aspiring to be a firefighter in South Florida. She has held her EMT license for 2 years and just recently passed her National registry exam along with 1152 hours to obtain her Paramedic License. She is looking forward to ensuring the safety of our members and staff at The Ocean Club. (Bay Watch’s next star.) Did you know that Steven Lobdell is a an excellent singer and sang in the Swing Club in High School? (Maybe we can replace the Christmas carolers.) Did you know that Chef Anthony has his level one sommelier WSET certification and has a passion for NewWorld & Old-World wines? Did you know that Melissa Beausoleil was the H.R. Director for 9 years at St. Andrews Country Club in Boca? Did you know that according to Myers-Briggs personality type indicator, our General Manager is an INTJ? Did you know that Warren Beaudry, Maintenance Director, caught Mark McGuire’s National League’s record tying Home-Run Ball worth hundreds of thousands of dollars and chose to return it to Mark McGuire.

Chef Anthony’s Culinary Chronicles December Ocean Club of Florida Membership as we dive into the Holiday season, I would love to take the time to review our Food & Beverage amenities and offerings of our a la carte dining. *Lunch Service: 7-days a week from 11 a.m. to 3 p.m. Offering our a la carte menu, daily entrée features, soup feature and catch of the day. Our salad bar and Sunday brunch display will be coming soon as well. *Dinner service: Thursday through Monday Offering a well-rounded menu featuring fresh seafood and classic dinner selections. We also showcase a catch of the night and a Chef inspired special, in addition to our nightly comfort foods classics special rotation. *Dietary & Preference: please inform your server of any dietary restrictions, as the majority of our menus can be modified for your needs. *Special Requests: please note, you are not limited to our a la carte menu even with its full variety. We also offer our 48 hour special request menu on our website. It is extremely user-friendly, in addition, you can reach out to me directly at [email protected]. As our dinner service's popularity increases, we have expanded the hours of operations, beginning at 530 p.m. I would also like to share the importance of getting you to your table at your reservation time. It ensures the best experience provided for you and your guests. If you plan on enjoying some time at the Gazebo Bar before dining, we ask that you come earlier than your reserved dinner time. I want to ensure everyone understands the operations' details on why this is so important. For instance, if the kitchen receives 100 orders at once, it strains the dining team and kitchen operations. Thus, getting to your table at your reserved time helps us immensely. Because we are not a traditional restaurant, we don't utilize a hostess to control the seating flow. Once again, thank you for your collaboration in ensuring we can provide the best service at the highest standards you deserve from your private club.

Chef Anthony’s book suggestion of the month: “We Are What We Eat” Alice Waters urges us to take up the mantle of slow food culture, the philosophy at the core of her life’s work.

Chef Anthony R. Marazita

2022 - 2023 Book Club Schedule Our welcome to Season EIGHT of the Book Club of the Ocean Club, bowed to the unfortunate storm, Nicola. But we celebrate regardless. Launched in November 2015, and now to season 2022-23. We have elected simply to move the Eighth Season Book club list forward. Join us all season, in the Clubhouse, the second Thursday of the month at 4:00 p.m. Contact: Edee Bjornson [email protected]. “The reading of all good books is like a conversation with the finest minds of past centuries”. RENE DESCARTES. December 8, 2022 “Fossil Future” by Alex Epstein. There has been enormous interest in this book. The topic is so important, and the policy implication so immediate, that this discussion promises to be essential to our wider understanding of the issues. Brownouts, rationing, outright power failures, and unpredictable weather events occurring recently in several of our states is a wakeup call for a realistic re-assessment of US energy policy. Is the present energy agenda economically and strategically unsustainable? According to the federal Energy Information Administration, global demand for energy will rise nearly 50% by 2050, with fossil fuels still accounting for roughly 75% of world supply. A McKinsey & Co. report shows that achieving net-zero emissions by 2050 would require nearly $6 trillion in new spending globally every year for the next 30 years—roughly equal to one-third of all tax receipts by every government in the world. Even if that were possible, it wouldn’t resolve the severe economic costs of energy-supply volatility throughout the transition, particularly for the poor. So, realistically fossil fuels or nuclear still must account for roughly 75% of world supply. This book is a deeply researched compendium of data, assessment of climate science, and sound policy recommendations, with an interesting take on background philosophy. Energy is essential to flourishing. Is climate Walden Pond or the Okeefenokee swamp in your view? Book Just out.

Board of Governors Meeting for Ocean Club of Florida November 14, 2022 Call to Order The Board immediately recognized Joe & the staff with a hearty round of applause for their efforts to quickly & effectively deal with the mold issue this autumn, AND for carefully “battening down” the club in anticipation of the possible hurricane on October8, 9 & 10 … and then turning around and opening everything up. General Manager’s Report

Mold Remediation Joe updated the board on the anticipated timing for completing the “re-construction work” related to the mold remediation. (The remediation is complete, with the mold eradicated.) The construction work should be complete by second week of December … with some rooms done earlier. The coordination of finished painting still must be worked out around the dry-wallers. Enough of the clubhouse will be usable that in the coming days we can start handling more inside dining and other indoor events. Continued Upgrading of Outside Facilities We do have the official “certificate of occupancy” from Ocean Ridge for our major ground level renovation, replacing the temporary certificates previously issued. In recent weeks, the following improvements have been completed: • Artificial turf installed that extends our outside eating area and avoids the complications of real grass (mud) with tables & chairs. • The outdoor speakers/sound system is now operative. • The two TV’s in the Gazebo Bar are installed (for use for major events … with the sound muted.) • The major dock renovation is complete with the recent plantings. (The current ice machine is being relocated to eliminate the noise issue created in the new outside seating area.) Governors and members should be encouraged to check out this area of the club … as our dock facilities are now up to the high standards we should expect. Among others, these efforts are still underway: • The plumbing for the water station leading to the beach should be installed shortly. • Various plans for improved outdoor lighting in the dining areas are being explored and should be installed early in the prime season now starting. (The low lights that were installed on the pool deck were deemed a safety hazard and have been removed.) • Wind screens, with the club logo, will be installed shortly on the new fencing surrounding the tennis courts. Other: • Joe received board approval to proceed with securing all the necessary permits to expand the lawn area … which involves removing sea grapes and relocating the existing fencing. • A question was raised about the current diving board … and whether we can install a higher-quality board that is in keeping with the high standards of the new pool/pool area. Joe is exploring ways to reduce the cost of this replacement, which currently is estimated at $15,000.

President’s Report • Mitch Engel announced that Allen Weaver, as chair of the Long-Range Planning Committee, will form a separate committee to lay out a process and timetable for renovating the remainder of the clubhouse (all but the the locker rooms.) This is anticipated to be a multi-year effort, allowing for member involvement & input, plus allowing time for the club to rebuild its capital reserves following our most recent major project. •

Mitch also announced that Allen Weaver will form a special committee to explore a more attractive summer membership program that is consistent with the club’s culture and financial needs. This committee will also develop a recommendation on what our involvement should be with reciprocals. Allen is targeting for this committee to bring recommendations to the board during January – therefore allowing time for identifying desirable candidates to kick off the new program over the coming summer.

In follow-up discussions regarding the member survey, the issue of gaining an accurate count of members who are year-round Florida residents was raised … as well as identifying what our real user base is among current members over the summer months (which includes tennis members). The staff has the data needed to complete these analyses, which could add context for decisions on any new summer program being considered.

Treasurers’/Finance Committee Report • Larry Ritter provided an update on our operating budget, which is forecast at a deficit for the year … due to labor costs, inflationary cost of goods, rising insurance premiums, rising real estate tax, etc. • He also reported details on capital spending and the current balance ($887K), which we’re striving to build-up in anticipation of the projected clubhouse renovation. • A healthy discussion was held on the need to start becoming more transparent with our financial information & begin orienting our membership on the anticipated costs that will be required to continue to operate our club at the quality level members expect. • We need significantly more operating revenue moving forward … which suggests another large dues increase, adding members (by raising the membership to the by-law cap of 450 members and re-introducing a summer program,) increasing usage fees where applicable, and driving higher usage wherever practical. • The board strongly agreed greater transparency is needed for members to understand the context of increases they can anticipate. The goal is for members to view themselves as club co-owners, rather than customers. It was agreed that educational & background materials should be prepared for the membership, with this process started as soon as possible. There was strong support for including wider club industry data for context … and involving materials from outside experts (e.g. Club Benchmarking) to provide a broader view of what is required to be a true premium club. • Following a discussion from the October BOG meeting, the board approved raising the number of members from 445 to 450 (which, again, is the cap according to our by-laws.) House Committee • Judi McCarty reported on various new initiatives or amenities … e.g. the availability of a mahjong board and a backgammon game for member use in the pool area …. details on the four guest speakers already lined up for our speaker series … the staff’s development of a drink menu for the Gazebo bar. • Susan Hooper reported on plans to continue the “Club Table” … and a new function on our website that allows members to reserve a seat at the Club Table.

Pool & Beach Committee • Chris Spencer reported on the slow progress and potentially large cost of restoring buoys to mark-off our member area in the ocean and avoid interference from boats and jet skis. Various environmental bodies have made approvals difficult … and their required techniques for securing the buoys could cost as much as $100K. Tennis & Fitness • Ashley Parriott reported on the success of recent tennis events (e.g. men’s member guest) was reviewed. The Club received rave reviews on the courts, the events themselves, and especially the food provided by Chef Anthony. • The list of planned tennis events for the season was described and commended by the board. X. Membership Committee • Suzy Lyman praised the hard work put in by the entire (and expanded) committee over the summer and the months since. The due diligence on candidates has ramped up in depth as well as the growing number of candidates. • On behalf of the committee, Suzy proposed 5 fully-vetted member candidates for admittance, and one new spouse that should be added to an existing membership. The board approved all, as recommended.
