Science of Sourdough

The slow fermentation process that gives the bread its distinctive sour taste also makes it more gut-friendly. The “wild yeast” and bacteria in a sourdough starter break down some of the carbohydrates and proteins found in flour making the bread prebiotic in nature.

Transfer it to a clean bowl Add finely chopped onion, garlic, ginger, green chili, fresh cilantro, Add cumin powder, garam masala, red chili powder, dry mango powder, coriander powder and salt to taste. Mix well. Add some bread crumbs for binding the mixture. The kebab mixture has a thick dough like consistency, otherwise it will be hard to shape the kebab and it will break while frying Take around 2 TBSP of mixture and shape it into small round flat patties/burger Heat oil in a pan over medium heat. Place the patties and cook for 2-3 min on each sides or until nice brown in color. Remove the kebab on a kitchen paper towel to remove any excess oil. Pizza with a twist/ Cheesy happiness METHOD :
Bread used: Toast Bread
INGREDIENTS : For Pizza Filling Red bell pepper ¼ cup Yellow bell pepper ¼ cup Tomato finely chopped (remove seeds) 1 cup Grated cheese (Mozrella) 1 cup Italian seasoning 2 tbsp Tomato sauce 2 tbsp Chili flakes (optional) 1 tbsp For Cheese dip 3 Tbsp garlic butter (melted) 3 Tbsp grated cheese 2 Tbsp tomato sauce 1 Tbsp Mayo (optional) Pizza Bottom Toast Bread slice from Alma Big and small round cookie cutter
In a bowl add the pizza filling ingredients and mix well. Adjust the seasoning to taste. This is going to be topping to fill the space. Be ready with cookie cutters and bread slices. In another bowl mix melted butter, grated cheese, and tomato sauce. Mix well and keep it ready. This spread work will be used on the base on which the slice will be kept. Now with the big cookie cutter (big enough to get the bigger circle from the bread slice) cut all the bread slices to a circle. Keep aside 4 of the bread circles. Use the smaller cookie cutter to cut the center of the remaining 4 circles. Don’t worry, no part of the bread will go waste. The circle ring and big round slice is what we will use. On big slice which makes for the base apply the cheese dip generously and place the ring bread. The hollow part fill with the vegetable pizza filling. Sprinkle some grated cheese over it. Brush the sides of the bread with some garlic butter. Preheat the oven to 180°C. Place all the bread pizza rings in a greased baking tray and bake for 15 minutes till you get brown sides. The cheesy vegetable disc pizza can be served with tomato sauce or just have it as it is
Recipe by: @aaa.blah__nari Quick tip: With the remaining bread pieces you can make a quick and easy breadpudding.
