One of the most impressive things about Punjabi food is its variety. While meat lovers can never have enough of the evergreen Butter Chicken, Bhuna Gosht, Tandoori Chicken and Amritsari Machchi, vegetarian fare is equally delightful. Sarson ka Saag, Chole Bhature and Dal Makhni are just a handful of vegetarian Punjabi specialities with fans across the globe. Think of Punjab and you can imagine its earthy heritage of lush green fields and robust lifestyle. What makes Punjab different from the other states is its culinary treasure, it is a state synonymous with food. Punjabi food is a lot like Punjabis rich, robust and full of life. Punjab is home to authentic tandoori food. It is believed that the ‘tandoor’ originated in Persia and was introduced to India by the Arabs. Back in the day, people living in the Punjab region were the first ones to learn the art of cooking with the tandoor. It is believed that tandoori chicken was invented in Peshawar as recently as the 1930s and became popular thereafter. Despite being the land of five rivers, you won’t find much seafood on the menu. Fish is their favourite but not in curries. 1.  BUTTER CHICKEN INGREDIENTS

For Gravy: -2 tsp Oil -2 to taste Butter Cubes -3 gram Cloves -1 Cinnamon Stick,sliced -1 tsp Mace -7 Cardamom -4 Tomatoes, chopped -1 tsp Garlic -1 tsp Ginger -1 tsp Ginger-Garlic Paste -1 1/2 tsp Red Chilli Powder -1 tsp Kasuri Methi -2 tsp Honey -1 Green Chilli -2 tsp Cardamom Powder -1 tbsp Cream

METHOD

1.Heat 2 tsp of oil in a pan with butter. 2.Add cloves, cinnamon stick, mace and cardamom. Saute and then add chopped tomatoes, garlic and ginger. Mix well and then grind well. 3.In another pan, heat another two cubes of butter, along with ginger garlic paste. 4.Add the tomato puree made from the mixture. Now add red chilli powder, kasuri methi, honey and finally the roasted chicken pieces. Let it simmer. 5.Add green chilli, cardamom powder and cream. Mix well. 6.Serve with a teaspoon of cream over.

2.TANDOORI CHICKEN INGREDIENTS

For Gravy: -1 cup plain greek yogurt -juice from ½ lime -1 Tablespoon chili powder -2 teaspoons paprika -2 teaspoons turmeric -1 teaspoon garam marsala -3 garlic cloves minced -3 bone-in skinless chicken legs

METHOD

1. In a medium sized bowl combine the yogurt, lime juice, chili powder, paprika, turmeric, garam marsala, and garlic. Add the chicken legs and let marinate for 1-2 hours. 2. Preheat oven to 400 degrees. Line a baking sheet with a wire rack and place the chicken on top. Bake for 20 minutes and then flip the chicken baking for 20 more minutes until cooked throughout.

3. Dal Makhani INGREDIENTS For Gravy: -2 Cups sabut dal -8 cups water -2 tbsp salt -1 tbsp ginger, sliced -2 tbsp butter -1 tbsp oil -2 tsp shahi jeera -1 tsp kasoori meethi -2 cups tomato puree -1 tsp chilli powder -1 tsp sugar -1/2 cups cream -garnishing green chillies

METHOD

1.To the dal, add water, 1 Tbsp salt and ginger. Cook until dal becomes tender. 2.In a heavy based pan, heat butter and oil. Add shahi jeera and kasoori methi. When they begin to splutter, add tomato puree, remaining salt, chilli powder and sugar. 3.Stir-fry over high flame, till the oil separates. 4.Add cooked dal and bring to boil. The consistency should be such that the dal should move around freely when stirred, otherwise add a little water. 5.Leave to simmer, uncovered, till well blended. Stir-in cream and once it gets heated through, serve immediately, garnished with green chillies

4.Murgh Malaiwala INGREDIENTS

For Gravy: -1 cup Cream -3 Green chillies, -chopped1 Onion, chopped -2 1/2 cups Milk -1 tsp Green cardamom powder -1 tsp Ginger -2 tbsp Coriander leaves -1/2 tsp Dry ginger powder -1 tsp White pepper powder -1 tsp Kasoori methi -2 tsp Garam masala -A pinch of Saffron -2 tsp Almonds, chopped -to taste Salt

METHOD

1.Heat a pan and add cream, onions, green chillies, and cook till the onions are soft. 2.Now add the milk and the marinated chicken, mix well. 3.Add green cardamom powder, chopped ginger, dry ginger powder, coriander leaves, white pepper powder, kasoori methi, garam masala, a pinch of saffron. Let it simmer. 4.Saute well and cook for some time (about 7-10 minutes). Add salt. Mix well. 5 Saute well and cook for some time (about 7-10 minutes). Add salt. Mix well.

Add water as per need and whisk to make a batter of medium consistency. Next, cut the onion into rings and dip the rings in this batter. Coat the rings with breadcrumbs and directly drop them in hot oil. Fry until golden brown in colour and serve with a dip of your choice.

To make pinwheels, first a dough using refined flour, salt and milk is kneaded. Next, small balls of dough are rolled out into strips of 1-2 inch width. Now all you need to do is spread pizza sauce on the strips, add finely chopped veggies of your choice and roll them into pinwheels. Place all the pinwheels on a baking tray, add cheese on top and bake in an oven for 12-15 minutes.

7. Stuffed Mushrooms Stuffed Mushroom is another great appetizer that will be loved

by all. Stuffed with a mixture of onion, garlic and cheese, this dish is super easy to make. All you need to do is saute onion and garlic for a few minutes and then add seasoning of your choice like salt, black pepper powder, oregano, mixed herbs, chilli flakes etc. Now clean the mushrooms and trim the stalks. Fill the stuffing in the mushrooms and add some grated cheese on top. Bake these Stuffed Mushrooms for 15 minutes and your dish is ready to be served.

How should mushrooms be cooked? Mushrooms cook best in a quick, high-temperature roast. Cook your mushrooms uncovered in a pan at 400 degrees Fahrenheit for 20 minutes, or until they are slightly browned.

1. Vegetable Pulao -Heat 2 tsp oil in a cooker. Add 1 bay leaf, 1 inch cinnamon, 4 cloves, 4 peppercorns and 1 tsp cumin seeds. Saute for a few seconds. -Now add 2 sliced onions to the cooker and saute till colour changes to golden. -Add 1 tbsp ginger-garlic paste and saute for a few seconds. -Add 1 finely chopped tomato and cook till it turns mushy. -Now add ½ tsp turmeric, 1 tsp red chilli powder, 1 tsp coriander powder and salt as per taste. -Time to add the veggies. Use 2 cubed potatoes, ½ cup peas, ½ cup cauliflower florets, ¼ cup chopped beans and 1 chopped carrot. -Pour 2 cups of water into the cooker and give a mix. -Lastly, add 1 cup of rice, give a stir and cover with a lid. -Pressure cook for 2 whistles and let the pressure release on its own. -Add a final garnish of coriander leaves and your Pulao is now ready to be served.

2.Vegetable Seviyan -Heat 2 tbsp oil in a pressure cooker. -Add 1 tsp mustard seeds, 1 dry red chilli and 10-12 curry leaves. Saute for a few seconds. -Now add 1 chopped onion and saute for a minute. -Also add more chopped veggies like 1 carrot, 10 green beans, ¼ cup cauliflower florets and ¼ cup peas along with ½ tsp red chilli powder. -Saute the veggies with spices for about two minutes. -Now add 1 cup roasted seviyan to the cooker along with 1.5 cups of water. -Cook for just 1 whistle and let the pressure release on its own. Your dish is now ready to be served. Enjoy!

3.Gujarati Khichdi -Soak ½ cup daliya and ¼ cup urad dal in a bowl for 5 minutes. -Meanwhile, heat 2 tbsp ghee in a cooker. Add 1 tsp mustard seeds, 10 curry leaves, ¼ tsp hing, 1 dry red chilli and ½ tsp cumin seeds to it and let them splutter for half a minute. -Drain the water from soaked daliya and urad dal. Add both to the cooker. -Time to add spices like ¼ tsp turmeric, ½ tsp red chilli powder and salt as per taste. -Now add chopped veggies like ½ carrot, ½ potato and 3 tbsp peas. -Pour 3 cups of water to the cooker and stir. -Cover the cooker with a lid and pressure cooker for 3-4 whistles on medium flame. -Once cooked, mix in ¼ tsp garam masala and 2 tbsp coriander leaves. -Your Khichdi is now ready to be served.

4.​Veg Pasta -In a pan, heat 2 tbsp oil. Add 4-5 minced garlic cloves along with 1 chopped onion. Saute for 1-2 minutes. -Now add 2 tbsp pasta sauce and 2 tbsp water. Give a mix. -Add 1 cup pasta to the pan along with ¼ cup of corn. Also add salt as per taste. -Pour 2 cups of boiling water to the pan, give a stir and cover with a lid. -Let the pasta cook for 10 minutes. -After 10 minutes, add 1 diced capsicum to the pan along with some grated cheese as per taste. -Add ¼ cup boiling water, if it seems a bit dry. -Cook for 3-4 minutes more. -Season the pasta with black pepper powder, oregano and chilli flakes. -Cook for one more minute and switch off the flame.

4.​Chicken Rice -In a bowl, add 500 grams of boneless chicken. Season it with ¼ tsp salt, 1 tsp red chilli powder, 3 tbsp curd and salt as per taste. -Mix well and let the chicken marinate for 30 minutes. -In a pot, heat 2 tbsp oil. Place the marinated chicken in it and fry from both sides until golden brown in colour. Once cooked, remove the chicken pieces. -In the same oil, add 1 tbsp oil more. Add 2 star anise, 2 bay leaves and 1 inch cinnamon stick. -Now add 2 sliced onions and saute till golden brown in colour. Also add 1 tbsp ginger-garlic paste and give a stir. -Transfer the cooked chicken pieces to the pot and give a mix. -Time to the add spices like 1 tbsp coriander powder and ½ tsp garam masala. -Pour 100 ml of coconut milk and 100 ml of water to the pot and give a stir. -Adjust salt as per taste and let it come to a boil. -Once a boil comes, add 2 cups of rice and mix. -Cover the pot with a lid and let it cook for 10-12 minutes or until the rice is fully cooked. -Once cooked, garnish the dish with coriander leaves and serve hot.

Love Spicy Food? Eating Too Much Chilli May Cause Mental Issues A recently conducted scientific study has claimed that a spicy diet may cause dementia.

There is no spice in eating without that extra tinge of spice in our foods. Indian cuisine is famous for its spicy offerings in almost every meal. Green chilli, red chilli powder or black pepper, we mindlessly feed our body with a load of various spices. While it pleases our mind to a great extent, it may not be really good for the mind’s health. A recently conducted scientific study has claimed that a spicy diet may cause dementia. For the unversed, dementia is a term used to describe deterioration of mental health. It may include memory loss, decline in reasoning or thinking ability or even more serious problems like Alzheimer’s disease. Now, think and think hard before adding that another dose of spice in your meals.  33

The research that was published in the journal Nutrients, studied 4,582 Chinese adults, aged more than 55. It was found that those adults who regularly consumed more than 50 grams of chili every day, showed faster cognitive decline. It was also noticed that the problem was more severe among thinner people. People with low to normal body weight may be more sensitive to chilli intake as compared to overweight people.

Till date, spices in foods were considered healthy. Chilli contains a component called capsaicin, which is known to speed up metabolism, aid in fat loss and prevent vascular disorders. This is the first time that chili intake has been associated with brain impairment.
