Personnel Hygiene ● Follow the employee Illness SOP ● Report to work in good health, clean, and dressed in clean attire. ● Wash hands properly, frequently, and at the appropriate times. ● Keep hair clean and wear approved hair/beard net while working in the food preparation areas. ● Make sure, Fingernails are to be kept short and clean, No nail polish is allowed. ● Bath daily and wear an acceptable amount of fragrance. ● No dangling jewelry or watches are allowed.No jewelry from visible piercings such as ears, lips, nose, eyebrows, tongs, etc.is to be worn during shift. ● Report any illness to the senior on duty..

● बालों को छोटा, साफ रखें और approved बाल/दाढ़ी net पहनें।

● सनि ु श्चित करें , नाखन ू ों को छोटा और साफ रखा जाना चाहिए, किसी भी नेल पॉलिश की अनम ु ति नहीं है ।

● किसी भी लटकने वाले गहने या घड़ियों की अनम ु ति नहीं है । शिफ्ट के दौरान कान, होंठ, नाक, भौहें , चिमटे आदि जैसे दिखने वाले छे दों से कोई भी गहने नहीं पहने जाने चाहिए।

● किसी भी बीमारी की सच ू ना ड्यट ू ी पर वरिष्ठ को दें ।

Cross Contamination ●

Wash Hands Properly.



Avoid touching raw food with bare hands.



Use color coded Chopping boards, Spatula, Bowls, etc.



Always keep vegetables, chicken and meat separate.



Use only dry, cleaned equipment and utensils.



Place food in covered containers or packages, except during cooling, and store in the refrigerator or cooler.



Don’t ever use single utensils for different kinds of food and if you are using them then wash it properly.

दो अलग प्रकार के खाने का मिश्रण ● हाथ ठीक से धोएं।

● बिना Gloves के कच्चे भोजन को न छुएं।

● कलर कोडेड चॉपिंग बोर्ड, स्पैटुला, बाउल आदि का प्रयोग करें । ● सब्जियां, चिकन और मीट को हमेशा अलग रखें।

● केवल सख ू े और साफ किए गए उपकरण और बर्तनों का ही प्रयोग करें ।

● अलग-अलग तरह के खाने के लिए कभी भी एक ही बर्तन का इस्तेमाल न करें और अगर आप उनका इस्तेमाल कर रहे हैं तो उसे अच्छे से धो लें।

Receiving & Storage Procedure ● While receiving the frozen material check any one item as a sample from each box. ● Sample’s temperature Must be above -18℃. ● Write down the received frozen packet's temperature into the Receiving Log book. ● Immediately store received frozen items into the chest freezer (It should be above -18℃). ● Store all the products separately (Biryani rice, Veg protein, Non-veg Protein).

खाना प्राप्त और भंडार करने की प्रक्रिया ● जमे हुए सामग्री प्राप्त करते समय प्रत्येक बॉक्स से नमन ू े के रूप में किसी एक वस्तु की जांच करें । ● नमन ू ा का तापमान -18 ℃ से ऊपर होना चाहिए।

● प्राप्त जमे हुए पैकेट के तापमान को Receiving log book में लिखें।

● एक बार जब आप फ्रोजन आइटम प्राप्त कर लेते हैं तो सभी प्राप्त फ्रोजन आइटम को तरु ं त चेस्ट फ्रीजर में स्टोर करें (यह -18 ℃ से ऊपर होना चाहिए)।

● सभी उत्पादों को अलग-अलग स्टोर करें (बिरयानी चावल, शाकाहारी प्रोटीन, मांसाहारी प्रोटीन)।

350 gm each pkt.

Defrosting

Note:- Take 2 packets of rice for 1 kg Matka biryani.

Defrosting procedure:Keep at room temperature for 3-4 hours. OR Keep in the chiller in between 2℃ to 4℃ overnight. OR Microwave it for 5 minutes (50% medium defrost) as shown in the microwave.

Protein Defrosting Method

Note:- Flip the protein packet at each 1 minute for chicken and each 30 Seconds for Veg and Kheema. Note:- Take 2 packets of protein for 1 kg Matka biryani.

Making Procedure:-

● Once the rice defrosts procedure is done, check the rice packet, whether there is any excess water at base or not if yes then remove water first.

● Now tear the packet with a scissor and ● take the rice into the allocated color coded bowl(1000 ml).



Take the defrosted rice in a microwave bowl and apply spray, made with ghee and water.

● Microwave it for 2:00 Min. (press 7)

Once the biryani is reheated successfully, go with the protein reheating method. Tear the protein packet with the help of a scissor, and put it into the given color coded bowl. After placing protein in the bowl reheat the protein as per images given below:-

Note:- Take 2 packets of protein for 1 kg Matka biryani.

Salan Defrosting & Reheating procedure ● Take out the salan packet from the deep freezer. ● Temperature must be above -18℃. ●

Then defrost the salan for 1 minute at 50% defrost.



Then cut the salan packet and remove it into the 150 ml small bowl.



Then reheat the salan for 1 minute in the microwave.



After reheating the salan it's ready to serve.

Assembling the biryani in Container(500 ml) ❖ First layer biryani rice, second layer protein (vegetable, chicken and mutton), and third layer again biryani rice. ❖

Garnish with freshly chopped coriander.

Step 1: As given in the image below follow as, add 40% of biryani rice into the container. Step 2: Add protein on top of the biryani rice, and spread it properly without damaging the product. Step 3: Add rest of the rice into the container.(Biryani rice must not be broken) Step 4: Add chopped coriander and spread it well as a garnishing.

NOTE:- As given assembly procedure images of veg protein, do the same process for the rest of proteins(Chicken bone, Chicken Boneless, Chicken Kheema, Mutton Kheema).

Note:- Follow the same procedure for all types of biryani.

Final Process -Once the assembly procedure is done, keep the food container in the microwave as per the given image with an open lid.

-Microwave it for 2 minutes (Press 7).

-Check the temperature with the help of thermometer and is should be above 65℃

-Now it is completely ready to serve.

Assembling the biryani in Matka(1 kg) ❖ First layer biryani rice, second layer protein (vegetable, chicken and mutton), and third layer again biryani rice. ❖

Garnish with freshly chopped coriander.

Step 1: As given in the image below follow as, add 40% of biryani rice into the Matka (Approx 400gm). Step 2: Add protein on top of the biryani rice, and spread it properly without damaging the product. Step 3: Add rest of the rice into the Matka.(Biryani rice must not be broken) Step 4: Add freshly chopped coriander and spread it well as a garnishing.

NOTE:- As given assembly procedure images of veg protein, do the same process for the rest of proteins(Paneer, Subz Paneer, Chicken bone, Chicken Boneless, Chicken Kheema, Mutton Kheema, Egg).

Final Process -Once the assembly procedure is done, keep the Matka into the microwave as per the given image with an open lid.

-Microwave it for 3 minutes (Press 8).

-Check the temperature with the help of thermometer and is should be above 65℃

-Now it is completely ready to serve.
