any said the project was ‘impossible’ – but building a five storey basement to provide additional customer services and staff facilities beneath Mayfair’s exclusive Grade II listed Claridge’s Hotel is now nearing completion. The new basement levels house an extensive range of facilities including two spas – one very much treatment-led with a swimming pool and gym, and another including a further 25m swimming pool, which will be available for Claridge’s guests, plus members. There is also a wine cellar, bakery, in-house chocolatier, and plant area. Following a £40m investment, the magnificent 300-year-old Grade II* listed Heythrop Park manor, set in 440-acre grounds on the edge of the Cotswolds, opened its doors in September as an opulent luxury hotel.The massive renovation commenced after the property in Enstone, Chipping Norton, was purchased by adult-only hotel group Warner Leisure Hotels in 2018. Renowned for its beautiful architecture, stunning gardens and rolling rural estate, Heythrop Park was built for the 1st Duke of Shrewsbury in 1706-1711 and was one of the first estates to marry the interior with the exterior – ensuring that it captures the remarkable vistas on offer. @sohoplace opened its doors for its historic first performance last month. The eagerly awaited @sohoplace is at the heart of a £300 million mixed-use regeneration project and is the first purpose-built theatre to open in London’s West end in 50 years @sohoplace was created in response to theatre impresario Nica Burns’ vision for a flexible, contemporary theatre. The new venue offers unimpeded sightlines, outstanding acoustics, ample legroom and high levels of thermal comfort, marking a new departure for contemporary performance space in London’s West End. With all this and more it’s time to sit back and tuck into another helping of PREMIER HOSPITALITY. ■

R&S ROBERTSON R&S Robertson supply contract lighting to the Hotel and Leisure sectors. T

he massive renovation commenced after the property in Enstone, Chipping Norton, was purchased by adult-only hotel group Warner Leisure Hotels in 2018. Renowned for its beautiful architecture, stunning gardens and rolling rural estate, Heythrop Park was built for the 1st Duke of Shrewsbury in 1706-1711 and was one of the first estates to marry the interior with the exterior – ensuring that it captures the remarkable vistas on offer. Much more recently, the building became a conference centre for a banking group and subsequently a hotel, before being taken over by Warner Leisure and refurbished from scratch to become one of their ‘Hotel of the Future’ properties. Main contractors for the project were Overbury. Award-winning design agency, DesignLSM have created a breathtaking new interior with a completely evolved aesthetic,

celebrating both the historic architecture, and founding owners of the estate. Hotels Heythrop Park is a stunning listed building with 333 rooms, including a modern section constructed in the 1960s. All of the rooms were stripped back to shell state, whilst being respectful to the listed architecture within the manor house, which is of great historical importance.

“We came up with the strategic positioning for the Heythrop Park project and considered how we could deliver Warner’s desired guest experience for them.” Paying homage to the baroque era, but keeping the modern traveler in mind, DesignLSM have created a distinctive design narrative for the property that runs across the sprawling estate, taking influence from the Duke’s Grand Tour in Italy and his close working relationship with his architect – Thomas Archer; alongside design inspiration woven in from the subsequent owner – Thomas Brassey. Holly Hallam commented: “Heythrop Park is a stunning listed building with 333 rooms, including a modern section constructed in the 1960s. All of the rooms were stripped back to shell state, whilst being respectful to the listed architecture within the manor house, which is of great historical importance.

“The interior has also been completely reconfigured and repurposed in line with the new hotel concept, whilst retaining listed features such as a beautiful atrium and galleries within the original manor house, as well as restoring a stunning orangery connecting the historic building to the more modern section. The orangery was originally a long and rather narrow space, which we have transformed from a circulation space into a really beautiful room in its own right with bespoke wallpaper and furnishings.” She added that the whole interior has been designed to take advantage of the surrounding parkland vistas, with the landscaping also being designed at the same time to marry up the two. »

In operation for 13 years, Sparcstudio specialise in Spa, Wellness and Hotel Design. Working on the Heythrop Park project has been our first opportunity to bring our specialist spa design skills to a Warner Leisure Hotel property and to work with the WLH team to develop and enhance the WLH Spa offer. Some examples of our work include the £14m Sopwell Cottonmill spa, South Lodge Spa for Exclusive collection (which has just won Sustainable spa of the Year 2022), refurbishment works at Penny Hill Park, Dormy House Spa and Calcot spas in the Cotswolds, Champneys Mottram Hall, Rockliffe Hall spa and the Luxury fitness clubs for the Aspria group in Europe & Third space at Tower Bridge. Over the past 10 years we have developed the Forest Spa concept for Aqua Sana Spas at Woburn, Longleat & Longford Forest, Ireland, (which last week picked up two Tatler Awards for Best Day Spa, & National spa of the year). Sparcstudio has also recently completed work on a new £8m Hair and Beauty Salon on the fifth floor of Harrods Knightsbridge store. We always aim to create a unique product with a real ‘sense of place’, individuality and luxury and an elevated guest journey and experience. ■

DYSK AIR CONDITIONING Established in 2004, DYSK is an independent distributor of Toshiba, Samsung, and Panasonic air conditioning products. The company prides itself on its old-fashioned value of customer service and sets a high service standard and is committed to customer satisfaction, ensuring promptness, accuracy, and reliability. We offer our services to installers, specifiers, and endusers to deliver comprehensive support including design and application, product support, sales support, specialist logistics and customer product training. At Heythrop Park, we worked alongside the design consultant and prepared all pipework schematics and design to assist our client, Sol Mechanical Limited. We replaced nine old VRF systems with brand new Panasonic HVAC air conditioning equipment, with full leak detection to 199 bedrooms. We are extremely proud to have been asked to look at this largescale project and thank our loyal client, Sol Mechanical Limited for choosing to work with us. At DYSK we work on a variety of projects including large scale hotels, big commercial offices, cinemas, and residential properties ranging in value of 5k – 500k. ■

Appealing to the existing loyal Warner guest as well as attracting new visitors, DesignLSM has focused on three key principles to enhance the overall guest experience – relaxation, exploration and entertainment. The designers also bridged the gap between the18th century charming manor house and its contemporary extension – creating an engaging aesthetic that runs

through the whole estate; including the Orangery, seven lounges, three restaurants, two bars, a ballroom, theatre, spa complete with treatment rooms, outdoor hot tubs and fire pits and a theatre, as well as an 18-hole golf course. Each interior space has its own design identity that encourages a journey of discovery for guests. »

Hotels This has been a tremendous project for DesignLSM. We have worked closely with Warner Leisure Hotels from the very beginning – offering our strategic expertise to curate the proposition, creating and defining several new F&B concepts as well designing a new narrative and an immersive interior design across all of the front of house rooms in this grand estate.

The Market Kitchen restaurant with its soft colour palette, fresh biophilic patterned upholstery and wall paneling was inspired by the traditional kitchen garden, while the Brassey Bar, echoes Thomas Brassey’s love of engineering and background in the railways, housing traditional industrial patterns and materials - think dramatic beamed structures, metal detailing, rich leather banquettes, and intimate lighting. Each space compliments the architectural language of the property, delivering atmospheric and inviting spaces with a contemporary feel and elegant grandeur – encouraging a sense of welcome, comfort and continued exploration. Holly Hallam concluded: “This has been a tremendous project for DesignLSM. We have worked closely with Warner Leisure Hotels from the very beginning – offering our strategic expertise to curate the proposition, creating and defining several new F&B

concepts as well designing a new narrative and an immersive interior design across all of the front of house rooms in this grand estate – influenced by, and respecting its historical roots, whilst bringing it forward into a new era of enjoyment and adventure.” Simon Thompson, Managing Director of Warner Leisure Hotels, said: “We’ve seen firsthand that the rise in demand for domestic breaks is here to stay as people recognise

the treasures we have on our doorstep. “The appetite for summer breaks is huge this year as people are no doubt looking forward to a holiday season free of limitations. The last couple of months have brought an influx of bookings and we’re over the moon to welcome guests new and existing through Heythrop Park’s doors in September to showcase some of the best the UK has to offer.” ■

JAMESON SEATING LTD Jameson Seating Ltd are suppliers of curtains, soft furnishings, blinds, upholstery, and furniture to the contract industry. We supply hotels, restaurants, pubs, care homes, holiday lodges, spas, conference rooms, show homes, night clubs, serviced apartments, and anything else our clients require. Some of our recent projects include the completion of 10 new lodges at West Midlands Safari Park – Red Panda lodges, Giraffe lodges and Rhino lodges with a further four Tiger Lodges completing in August which we’re excited to work on. As well as a number of other projects, we are currently rolling out around 250 apartments for Butlin’s Minehead and 24 high end lodges at Landen Gwel An Mor in Cornwall. At Heythrop Park we manufactured and installed curtains, pelmets, cushions, throws and hardware to all of the bedrooms, public areas, office space and some staff accommodation. We also re-upholstered some existing furniture. Heythrop Park is a very prestigious project, and we are super proud to be involved. We have worked with Warner Leisure Hotels for many years throughout their entire estate, but this is by far the largest. It is exciting to see the hotel take shape and how the designers are turning the building into beautiful spaces for people to enjoy. ■

Restaurants In South Africa there is a word, ‘Ubuntu’ – a word that Mandela loved, and that captured his greatest gift, his recognition that we are all bound together in ways that are invisible to the eye, a oneness that we achieve ourselves by sharing with others and caring for those around us.

T

he imaginative interior design of the venue on Curzon Street was carried out by Design Partnership Australia, with ECSEC Ltd as main contractors and Yonda Interiors as project managers. Set over basement and ground floor levels, the 324 m2 interior accommodates 128 covers. The experience begins at the door where the patron encounters a vertical wall art installation designed by Calvin Janse Van Vuuren, depicting the journey between Africa and Britain with a monochrome relief of people, animals, and well known geographical and architectural references. The journey storyline highlights the traditional great migration of animals twice a year across the African plains, the sharing of stories between people, and provides a modern take on the new migration of trade between the two continents.

The design palette includes hand woven Sisal rope, ‘smoke’ mirrors, leather, bespoke printed bench fabric, handmade Ndebele tiles on the front counter and central wall, and natural timber flooring. Callie van der Merwe of Design Partnership Australia commented: “In South Africa there is a word, ‘Ubuntu’ – a word that Mandela loved, and that captured his greatest gift, his recognition that we are all bound together in ways that are invisible to the eye, a oneness that we achieve ourselves by sharing with others and caring for those around us. “This giving and sharing is something that we have tried to capture. As the food offering expresses this idea of sharing by the way the menu is designed, so the spaces within the restaurant echo this concept in the careful layouts of various intimate, private, and more public spaces. “Another word commonly used’ in

Africa is ‘Boma’ – a term used to describe an enclosure designed for the safety of people and livestock, and also a place for storytelling and coming together. In this case, the entire restaurant’s ground floor and basement is expressed as two separate ‘Bomas,’ with beautiful bespoke knotted and hand-woven rope tapestries designed by Roberto Zambri. »

Restaurants For me, stand-out elements of the interior include the bespoke South African fabrics used which are unique to the brand, the banquette seating and rope detail on the ground floor which add an extra layer of intrigue; the wine wall at the stairwell and most of all the monochrome relief art installation at the entrance, which is particularly impressive.

“In this way, Meat & Wine provides an ideal setting for coming together, socialising, sharing stories, and enjoying great food and wine.” She added that that the project was not without challenges, since the space was originally designed for offices and there were resulting restrictions in terms of services installation, available ceiling heights and general ability to function as a restaurant venue. In addition to these considerations which impacted the design, there was the fact that the original interior presented something of a rather introverted and claustrophobic envelope. The entire design was therefore based on manipulating the perception of space and volume to improve the customer experience, increase ‘dwell’ time and therefore promote business. To this end, strategically placed bronze mirrors have been used to expand the scale of the

entrance, as well as the perimeter woven wall installation. Clever concealed lighting also played its part in ‘manipulating’ the space to create a very comfortable, warm and embracing ‘cocooned’ space. Tommy Clarke of Yonda Interiors said: “We have worked with the client before having previously carried out projects for them at two of their other restaurants. This project had a 20 week programme that started on site in February this year. Our work included interior and sourcing all the UK suppliers required for the scheme. We also acted as ‘eyes and ears’ for the designers, who are located in Australia, in addition to advising on UK-required standards for different elements of the project. “For me, stand-out elements of the interior include the bespoke South African fabrics used which are unique to the brand, the banquette seating and rope detail on the ground floor which add an extra layer

of intrigue; the wine wall at the stairwell and most of all the monochrome relief art installation at the entrance, which is particularly impressive.” In terms of challenges for the main contactors, Mike Swift from ECSEC Ltd said: “These included installing all the mechanical and electrical services required by the restaurant on a site which had previously been offices. Further challenges included works to a light well at the front of the building, required in order to extend the basement, as well as to create the new external space outside – plus the installation of a new staircase.” Callie van der Merwe concluded: “This is the first project of its kind for us in the UK. Although I have personally worked and lived in the UK for a year, this was by far the most difficult – as it was done at distance – but was also by far the most rewarding upon completion.” ■

Shisha Lounge Now we have finally finished the whole building this really is the icing on the cake. Downstairs we run a very busy restaurant, so this is a nice edition to allow our customers to relax and finish off the evening as well as being something for ourselves to be proud of.

A

fter a year and a half of renovations, the luxury shisha and dessert lounge has finally opened its doors and is attracting exclusive clientele with its high-end interior. PREMIER HOSPITALITY spoke with Owner and Designer Sunny Mohammed who ran and managed the project. He said: “This project means a lot to us. The space above our restaurant has been empty for 15 years. Now we have finally finished the whole building this really is the icing on the cake. Downstairs we run a very busy restaurant, so this is a nice edition to allow our customers to relax and finish off the evening as well as being something for ourselves to be proud of.” The project involved a full-scale refurbishment of the space, which previously lay empty, the room was stripped, and the walls were taken back to brick for re-skimming. Once this stage was complete the design process began which allowed Sunny to focus on the interior and final fit out. “We dealt with most of the design in house. We wanted more of a high end look, so we chose a marble finish accentuated by golds and blacks. We made sure to use all the best products and fitters; we are in the construction industry ourselves which helped us to pick the best.” added Sunny. »

Shisha Lounge We dealt with most of the design in house. We wanted more of a high end look, so we chose a marble finish accentuated by golds and blacks. We made sure to use all the best products and fitters; we are in the construction industry ourselves which helped us to pick the best.

The venue oozes luxury with a sophisticated mix of high-end fabrics and textures which decorate the space. One stand out feature is the stunning marble staircase crafted from black onyx complimented by a gold brass trim. The staircase is illuminated by a stunning bespoke lighting fixture which really dominates the space. LED lighting strips have also been included within the walls and across the ceiling adding contrast

to the dark colour scheme. Sunny wanted to create a space of grandeur and decadence, juxtaposing the ultra-modern look of the lounge with the inclusion of classic touches like ornate vintage mirrors which add character and charm to the design. The furniture and soft furnishings are made from rich velvet in a jade green hue, something often associated with high end fashion brands, cementing

Maison De Fumee as an exclusive and premium venue. Due to health and wellbeing regulations, Shisha Lounges are required to be at least 50% open to the air and can not be enclosed. This posed a challenge when designing the new space as Sunny wanted to keep the same high class look and feel running throughout the entire space. »

SND LIGHTING SND Lighting specialise in all things lighting for both domestic and commercial developments and can offer bespoke lighting options for luxury projects. We have great partnerships with many UK & European suppliers who produce high end statement lighting which helps us offer the very best to our clients. We work closely with interior designers to source and supply lighting for their projects which takes the pressure off them as we handle all the procurement. We added the retractable pergola first, then worked on separating the areas with our triple glazed bifold doors. This allowed us to have a dining element on one side and a smoking element on the outside.

The transition from the interior to the outside area is seamless with similar furniture and fittings occupying both spaces. This was achieved with the addition of a retracting pergola, which allows the roof to be removed so that guests can enjoy the natural light on fine evenings, whilst also sheltering them from the elements through the winter. Sunny explained: “We added the retractable pergola first, then worked on separating the areas with our triple glazed bifold doors. This allowed us to have a dining element on one side and a smoking element on the outside.” Whilst completing the works on Maison De Fumee Sunny also completed a renovation of the VIP Room in the Farmhouse Restaurant below. This is an exclusive space bookable for parties, events and for VIP guests. In contrast this part of the project elapsed a mere 3 weeks due to the smaller scale of the space. The VIP Room is finished to a similarly high standard, giving its guests a taste of what is to come if they venture upstairs for a visit to the Maison. The room’s walls are covered in a durable marble like material, which was also used to crate the hand cut table which is the centre piece of space. ■

FIVE STOREY BASEMENT REDEVELOPMENT MANY SAID THE PROJECT WAS ‘IMPOSSIBLE’ – BUT BUILDING A FIVE STOREY BASEMENT TO PROVIDE ADDITIONAL CUSTOMER SERVICES AND STAFF FACILITIES BENEATH MAYFAIR’S EXCLUSIVE GRADE II LISTED CLARIDGE’S HOTEL IS NOW NEARING COMPLETION.

he new basement levels house an extensive range of facilities including two spas – one very much treatment-led with a swimming pool and gym, and another including a further 25m swimming pool, which will be available for Claridge’s guests, plus members. There is also a wine cellar, bakery, inhouse chocolatier, and plant area. In addition, there are luxurious and extensive back of house facilities for staff, including a full catering kitchen, restaurant and rest area, changing facilities, showers and laundry. The project also includes the construction of a three-storey roof level extension, which will incorporate additional rooms. has been undertaken by a huge project team, including overall scheme architects Blair Associates, together with Arup and McGee. The project was carried out because the hotel owners wanted to enhance the services and capacity offered to guests but needed more space to do it. The hotel’s location meant that extending at street level was not feasible, so an alternative solution was found – excavating under the hotel’s Art Deco wing. The project required constant monitoring for movement, noise and vibration, as the new underground levels beneath the hotel’s 80-year-old concrete raft basement were excavated and constructed – all without interruption to hotel services above. To add to the complexity, all materials going in and out of the site had to pass through a window opening, as any other method would involve transporting them through the hotel. Michael Blair, Managing Director of Blair

Associates Architecture Ltd commented: “We became involved in the project due to our track record of specialising in listed buildings and hotels, having also carried out projects at the Connaught and the Ritz, together with other top hotels. This has been a very long project and as architects, we were one of the very first people to be involved.” Challenges of the scheme started with planning because of restrictions relating to listed buildings, as well as digging the basement below a fully operational hotel. The scheme is challenging both from an architectural and engineering standpoint, with a solution that was not at all obvious at the outset and the final solution involved hand digging down 32 metres for each pile 64 times (for the 64 piles used). Once each pile was completed, a hydraulic jack was placed between the top of the pile and the bottom of Claridge’s original concrete raft, exactly below the

existing supporting columns in Claridge’s ballroom above, so as each pile was installed, it balanced the whole building. Michael Blair continued: “Whilst this was happening, weddings, other events and speeches were going on within the ballroom and those concerned had no idea of what was going on below!” In addition, a series of steel rings, each approximately 2m wide had to be manoeuvred into position right down to the bottom level. Soil was removed through a single opening concealed behind a hoarding, where it was deposited onto a truck. Currently the works are completed, except for the second, larger spa, which is still at the design stage. Michael Blair concluded: “The opportunity for failure was great on this scheme, however it has been a success and the team did a fabulous job with no problems at all and zero work accidents. The client is over the moon.” »

Situated three floors down, Claridge’s Spa is a haven of wellness and tranquility featuring the hotel’s first ever swimming pool, steam room, sauna and seven treatments rooms. The space has been designed by interior architect Andre Fu and draws inspiration from the East. This project is a continuation of Andre Fu’s longstanding relationship with The Maybourne Hotel Group, having previously worked on several of their hotels, including a bar at The Maybourne Beverly Hills, a penthouse suite at The Berkeley, and a spa at The Maybourne Riviera. The Spa at Claridge’s is an epicentre of wellness, showcasing healing rituals, a knowledge of restorative body work and the latest bio-innovation to amplify emotional, physical and spiritual wellbeing. The service is to the Claridge’s five star standard and the space is filled with touches of the iconic timeless glamour synonymous with the hotel. Claridge’s Spa offers both a best-in-class list of resident brands including Josh Wood, Augustinus Bader and FaceGym, and an ever-evolving roster of visiting wellness masters, featuring nail artist Harriet Westmoreland and acupuncturist Ross J. Barr, ensuring guests are expertly treated, head to toe. Guests will cross the iconic monochrome

lobby and embark on a journey to a sensorial space of calm serenity. The reception area Includes a floral artwork by Damien Hirst and a towering water feature that toys with elements of light and shadow, punctuated by the sounds of flowing water and energy cleansing music. Andre Fu’s design is influenced by his own visits to traditional Japanese temples and Zen gardens in Kyoto. PREMIER HOSPITALITY spoke with Fu, who explained the inspiration behind the design: “The spa is highlighted using natural elements integrated throughout the space – solid French limestone, natural oak and water. These elements emphasise the sense of authenticity that is at the foundation of my personal design aesthetics. “Another standout feature of the spa is the rotunda, a meditative, dimly lit cylindrical space that features a suspended Japanese glass artwork by Victoire Bourgois. Falling water trickles down the installation, creating a multisensory atmosphere with relaxing sound and visual elements.” The heated swimming pool is central to the spa, framed by a striking, multi-vaulted ceiling and stone columns. Cabanas set back from the water offer privacy to relax and unwind. In addition to private consultation spaces, the treatment rooms are oak paneled, and each treatment is

personalised to the individual, inspired by the ancient Japanese concept of omakase (leaving another to decide what is best). The piece de resistance is Josh Wood at Claridge’s – a dedicated hair and beauty space within the spa, where celebrated British hair colour expert Josh Wood brings his hand-picked dream team of A-list stylists to the hotel. This collaboration sees his first home in Mayfair, and a 21st century reimagination of what haircare looks like in hotels. Most of the design work for the new spa had to be completed remotely due to pandemic travel restrictions. This posed a challenge for Hong Kong based architect Andre Fu, making onsite visits during most of the process impossible. Despite the logistical challenges, the final result is a stunning and luxurious space for guests to enjoy. Fu concluded: “It is always an honour to be asked by The Maybourne Hotel Group to do a project in one of their notable spaces. Getting the opportunity to create the first ever spa at this historical location and bring elements of my signature style was a great privilege. I was given a lot of freedom to express my ideas about what the space should look like.” »

MAINTAINING EXCELLENT AIR QUALITY DURING EXCAVATION WORKS AT 5-STAR HOTEL IN MAYFAIR In 2019, the world famous Claridge’s Hotel began excavating a five story ‘iceberg basement’ which would house a swimming pool, gym, wine store and chocolatier, alongside new staff quarters and a conference centre. Hotel owners Maybourne engaged contractors McGee to engineer a solution to their ambitious plans. They stipulated that all work had to be carried out while the hotel, tea rooms and restaurants were in full operational use, and given the prestige of the hotel, guests would need to be completely undisturbed. McGee mined a series of vertical shafts, installed new pilings and dug out five three-metre high basement levels to accommodate the new facilities. This intensive and dangerous work required a thoughtful health and safety plan, and one of the key challenges they faced was being able to provide adequate ventilation into the basement excavation where construction personnel were working. The project called for 30,000m3 of

material to be excavated – a feat that would produce enormous amounts of dust, and without a suitable ventilation solution, the tunnelling and digging simply wouldn’t be able to go ahead. RVT Group, specialists in health hazard control, were asked to assess the project requirements and propose a suitable solution. RVT consultants assessed the cavernous environment that had been opened up by McGee’s contractors and determined that the Ventex® Centrifugal Fan 300M (6000m³ Airflow/hr) and the Ventex® 450S Centrifugal Fan (20,400m³ Airflow/hr), would provide ample ventilation. RVT installed galvanised ducting as well as extensive lengths of flexible ducting to ensure the correct airflows reached the necessary parts of the shafts to ensure safe work. RVT also provided a series of Dustex® and Ravex® filtration units to ensure that dust and fumes (including diesel fumes) were safely extracted and filtered away.

The Green Key programme is run in England by the environmental charity Keep Britain Tidy, and internationally by the Foundation for Environmental Education. Green Key is eligible for hotels, small accommodations, campsites, holiday parks, conference centres, restaurants, and visitor attractions. The scheme provides a well-

proven framework for an establishment to work with its environmental management on sustainability issues, including awareness raising. The high environmental standards expected of these establishments are maintained through rigorous documentation and frequent on-site audits. After achieving the prestigious international award, the establishment can use it in its PR and marketing. For guests, a Green Key shows that the establishment is committed to reducing the environmental impact of their stay. Held to recognise the innovators transforming the sector across the globe, Hotel & Resort Innovation Expo also presented industry awards, a celebration of the innovations, services, and solutions that have made an outstanding impact on the sector over the past 12 months. This was an invaluable opportunity for visitors to elevate their industry knowledge and gain an upper hand on the competition. Each finalist showcased their product or service to a panel of industry giants in front of a live audience. The awards made for an entertaining and educational break from the hustle and bustle of the show floor. Gary explained why The Hotel & Resort Innovation Expo stands apart from other events for the hospitality industry. “First and foremost, our event is very much a marketplace for business decision makers, who can come here to find all the products and services which they might need. We also have a particular focus on things such as sustainability, so we have introduced the packaging part of our event. We also wanted to have an emphasis on innovation and technology where we can showcase the latest products and services available to the industry.” He continued: “We spend around a year or so working on each show, and they really are a labour of love. That is what our whole company is about, our love for this industry. We create world leading exhibitions and we’re very proud of that.” ■

THE HLF GROUP The HLF Group are a manufacturer and supplier of contract standard furniture to a wide range of industries including hospitality, leisure and residential projects. PREMIER HOSPITALITY caught up with Owner and Founder Rachel Conroy at The Hotel & Resort Innovation Expo, where she explained more about the company. As manufacturers, The HLF Group can deliver a full turnkey service, whilst bringing the benefits of their economy of scale to the final customer. HLF manufacture and supply contract standard furniture for trade only accounts as well as to the public. One of the benefits of this is that there is no minimum spend, therefore a customer can order one item right through to a full container of items. HLF aim to give their customers a bespoke hands-on retail experience at trade prices. Due to

sourcing products directly from their own factory, HLF’s products are customisable, with the ability for customers to change sizes and fabrics to suit their needs. HLF also specialise in project work, whether that be a full holiday park refurbs, furnishing a new retirement home or installing furniture in a full build to rent block. HLF’s products are high quality, with features added to enhance each items durability. HLF use reinforced foam and high thread count fabrics to ensure that their furniture is able to withstand heavy usage, perfect for the commercial environments which they supply. Rachel explained why The HLF Group decided to exhibit at the Hotel & Resort Innovation Expo, she said: “This is the first time that we have done this show, we do supply to some hotels already, but within our current range of sectors that is probably the smallest. Strategically,

we decided to come to the show to help us to target businesses in this sector, because a lot of our products tie really well into the Hospitality industry. For example, we have a huge range of mattresses and lovely accent chairs which are great for use in guest rooms or hotel lobbies” She continued: “Our goal now is to continue growing organically as we are, whilst strategically growing our smaller sectors. We are also expanding our range by developing some new products, including living and dining ranges which are also made in the UK.” ■

POLY AI WITH MICHAEL CHEN, HEAD OF PARTNERSHIPS Poly AI has created a conversational voice assistant technology which can be used across a wide variety of industries to provide customer service and complete tasks over the phone. This is the next generation of voice assistant technology, capable of handling true humanlevel conversations, interpreting different dialects, accents and even languages instantly. The technology replies in real-time and can resolve customer queries, make reservations, understand instructions, and recommend appropriate services. Poly AI’s product can directly help the hospitality industry by providing an automated solution which reduces the amount of time that employees need to spend on the phone. In the hotel sector, Poly AI can be used to answer phones on the front desk, meaning that callers spend less time on hold and that new guests can be greeted and checked in with ease, improving customer satisfaction. PREMIER HOSPITALITY met with Michael Chen, Head of Partnerships for Poly AI at the Hotel & Resort Innovation Expo. He explained why Poly AI decided to attend the show: “We are here today to discover which trends we can tap into within the hotel sector, and we also hope

to find new partners to collaborate with. It is important for us to be here because we want to know what our clients care about; we want to understand the pain points which hoteliers have. We are also interested in learning more from our fellow technology partners and finding out how we can be part of the broader conversation within both of these industries.” He continued: “One thing which we have learnt is that labour is a big concern for the industry, companies are finding it difficult to hire enough staff to keep up with demand. As a large part of the hospitality sector was impacted by Covid, a number of staff left the industry and have not come back. This is a particular problem for hotels as there are brand standards which must be upheld in order to open up the hotel completely and maximise their revenue. The way we can help is by removing the need to have a dedicated person to answer the phone, we can take a large number of calls and let guests ‘self-serve’ their queries without having to be transferred to a human operator. This improves the experience for the guests entering the hotel.” Unlike previous technologies, like IVR or touch tone systems, which require callers to press a button to select different

options, Poly AI’s product can imitate human conversations and is completely customisable. For each deployment, Poly AI’s machine learning scientists asses the types of callers expected to dial into the system. Then adjustments are made to allow the product to understand potential callers better. Michael explained: “Our product understands regional accents and slang terminology. This is something which is missing from a lot of other solutions, as these tend to be developed in the West Coast of the US that are usually based on just speech recognition technology. What we offer is a more specialized service, leveraging speech recognition, natural language understanding and dialogue design to build a more focused and robust solution. Furthermore, we work with our clients and partners to create a solution which really understands their customers. T

he 4,500 sq. ft venue, operated by Inception Group, opened on 14th October when the Grade II* listed redeveloped Battersea Power Station, complete with over 100 shops, restaurants, cafes, and events venues, opened its doors to the public. The 1950’s inspired interior design takes its cue from the power station’s architecture and history. At its peak, Battersea Power Station produced a fifth of London’s electricity, supplying power to some of London’s most recognisable landmarks, such as the Houses of Parliament and Buckingham Palace. Working in tandem with Control Room A, Control Room B managed the distribution of power generated by the power station’s turbines. Control Room B was completed in 1955 as a counterpart to the original Control

Room A, built in the 1930’s. Control Room B was built in the austere Modernist style of the post-war period and the space is defined by the dramatic arc of the original stainless steel control desk, set against a backdrop of full height anthracite-coloured switchgear racks. The walls and octagonal columns feature original faience tiles in a delicate pale blue, contrasting against the beautifully brutalist machine aesthetic of the control panels. The original control room fittings, desks and switchgear complex are defining features of the new bar space and have been fully restored as part of the wider regeneration of Battersea Power Station. The space has been arranged in a circular configuration, inspired by both the arched form of the existing historic stainless steel control desks and by the radial forms of the original power station turbine blades. »

Cocktail Bar We couldn’t have been more excited to open a bar within the most iconic part of one of London’s most important landmarks. Having lived in Battersea my whole life, it’s amazing to have played a part in the most exciting redevelopment project for many years and to bring this space back to life.

The design for the bar involved the creation of a spectacular turbine-inspired, metallic sculptural centrepiece, paying tribute to the character and form of Battersea Power Station’s electric, industrial history. An illuminated canopy adorned with delicately perforated metal fins encircles an existing central column, lending a sense of energy, movement and permeability. Alan Ellis MD of Ellis Design Studio added: “The design of the bar, with its radial canopy, seeks to capture the forms and momentum of the original power station turbines. The semicircular sweep of arced feature lights is designed to suggest the capturing of a moment in time between rotational movements, thereby creating a sense of tension, anticipation, and dynamism.” The bar is fabricated almost entirely of metal in a variety of forms and finishes. Amber hued, domed textured lights to the

bar front are suggestive of the viewing portholes into the original coal furnaces, which powered the turbines. Bespoke lighting to the bar top and canopy was inspired by a brutalist aesthetic and was fabricated from fluted glass, antique brass and patinated aluminium. The outer edge of the bar is surrounded by a dramatic wing-like arc of metallic lights, signifying the rebirth of the power station. Furniture and upholstery selections were informed by mid-century patterns and pastel-hued palettes, providing a softer juxtaposition to the coolness of the original metals and tiles within the space. Staff donning utilitarian boiler suits in a nod to the Power Station’s employees back in the 1950s, are ready to shake up and serve a selection of innovative cocktails. Each drink is influenced by the power station and the 1950s control room through vessels and ingredients used. With a setting

so unique this really is the ultimate drinking destination for any occasion. Charlie Gilkes, co-founder at Inception Group, said: “We couldn’t have been more excited to open a bar within the most iconic part of one of London’s most important landmarks. Having lived in Battersea my whole life, it’s amazing to have played a part in the most exciting redevelopment project for many years and to bring this space back to life.” The power station is also home to a 24,000 sq. ft Arcade Food Hall from JKS Restaurants, office space and a unique events and leisure offering, including the chimney lift experience. In addition, there are 254 apartments with residents moving in from last spring, and a new six-acre riverfront park which is already open to the public. ■

relle is the first venture in the Midlands for hospitality group, D&D London, joining its portfolio of more than 40 diverse restaurants, bars and a hotel in the UK, Paris, and New York. Orelle’s interior, within a brand new 25 storey building, has been created by architects Doone Silver Kerr, now incorporated into Ryder Architecture. Quantity surveyors and project managers were PSE Associates, who successfully steered the project to completion on time and within budget, despite many interesting challenges. Interior fit out contractors were McCue. The interior design pays tribute to the site’s heritage as the former National Westminster House, whilst drawing influence from the nearby Jewellery Quarter. Features include the original cast aluminium banking hall doors, an abstract triangular pattern based on the NatWest

identity, finely detailed golden metalwork, and richly veined marble floors. Located on the 24th floor, Orelle’s 3,767 sq. ft double-height restaurant is set against a backdrop of unrivalled, 360-degree panoramic views across the city and beyond, making it a unique addition to Birmingham’s food and drink scene. The restaurant wall also showcases a hand-painted mural by local artist, Anita

Roye, whose father worked in the Jewellery Quarter. This specific piece of work takes inspiration from an uncut gemstone and seeks to evoke the energy that Birmingham people bring to the city. On the ground floor, Orelle’s 38-cover café and 28-cover outdoor terrace serves freshly prepared breakfasts, brunches, lunches, and afternoon tea. In the evening, the space evolves into a cocktail bar. »

Restaurants Challenges of the project included the fact that as we were working in a brand-new shell building, there were several other floors being fitted out at the same time, with various contractors all vying for the use of just one goods lift and the loading bay being restricted to small 10 tonne vehicles.

Orelle’s restaurant features a modern French menu served by a team led by executive chef, Chris Emery, who joined Orelle following positions at The Alice in Oxford and Jason Atherton’s Michelin-starred restaurants, Pollen Street Social in London, and The Clocktower in New York. Offering a contemporary take on classic French recipes, Emery’s menu has been designed to showcase the best of British produce and celebrate the stories behind locally sourced ingredients. Dishes include blackberry cured ‘Truite’ for starter; ‘Porcelet’ suckling pig and ‘Citrouille’ tagliatelle for mains, and a venison, grouse, and chicken wellington ‘En Croute’ for sharing. Alongside Emery’s menu is an extensive list of wines, spirits and more than 20 cocktails that have been created by Tiago Bastos. Craig Burley, PSE Associates project manager for the Orelle development said: “As quantity surveyors and project managers for all D & D developments over several years, we have evolved an excellent working relationship with them and fully understand their requirements.” The interiors for Orelle were initially in a shell and core state, and the fast track fit out works included the completion of all floor, wall and ceiling finishes, the installation of all mechanical and electrical services (including air conditioning, lighting and fire suppression systems), the installation of new bars on both the ground and 24th floors and the installation of a bespoke catering kitchen on the 23rd floor and installation of all interior finishes and furnishing and bespoke artwork. Craig Burley commented: “Challenges of the project included the fact that as we were working in a brand-new shell building, there were several other floors being fitted out at the same time, with various contractors all vying for the use of just one goods lift and the loading bay being restricted to small 10 tonne vehicles. Also, the Commonwealth Games were held in the middle of the construction programme, and this added numerous issues with restrictions on delivery times and routes to the site. “This was a very complex project to manage, and all the contractors did an excellent job of finishing the project on time and on budget.” ■

The venue over the waters edge has got a brand-new look with a complete overhaul of the interiors. Completed by JMDA, Pitcher & Piano Birmingham now boasts a new and explosive concept featuring warm green hues with tastes of burnt oranges and coral. Speaking to PREMIER HOSPITALITY MAGAZINE, Holli Fletcher from JMDA said: “We have a long-standing relationship with Marston’s and were asked to come on board to re-imagine the Pitcher & Piano brand. In the past we had primarily worked on pub refurbs with them, so working on one of their bar concepts was a great opportunity to add to our portfolio. »

Marston’s wanted to raise the bar and push Pitcher & Piano head and shoulders above the competition.” Brass feature lighting leads guests to the bar and dance floor, enclosed by a pianoinspired bar apron. The back bar is a simple, yet refined brass and mirrored detail with an extravagantly lit signage piece overhead. The space on the ground floor is divided by feature ribbed fixed seating, enclosed by uplit rods. A glimmer of orange leads you downstairs, enticed by a custom sign written logo wall. The moody hues continue and sit amongst ribbed timber detailing and glass crittal doors to create a VIP area, complete with conduit feature lighting and Birmingham-inspired artwork pieces. A bright orange mid-height banquette sits

before an aged mirror wall and uplit lighting. Externally, the site boasts four outdoor seating areas with two overlooking the iconic canal at Brindley Place. Custom lit signage and butterfly canopies sit pride of place and are accompanied by green and coral furniture pieces. Holli said: “The client was extremely happy with the project! The exterior area on the ground and lower ground floors includes an al fresco space to make the outdoor space feel like an extension of the internal. It is edged with box hedges and festoon lights. There is also a private dining space that can be booked for drinks occasions and celebrations. The bar offers fresh food alongside bottomless brunches and a range of classic house and sharing cocktails and a premium range of spirits, wines, beers, and soft drinks. Holli concluded: “This project was important for us to be involved with as it adds another successful concept brand to our portfolio. Working closely with our clients, we tailor the approach to each individual's needs and requirements. Our Interior Design concepts have their own identity, and the substance of our process has created a series of successful brands, Pitcher & Piano now being one of them! We look forward to refreshing the face of the beloved British brand across the UK in the future.” ■

esigned for the lunchtime crowd, both venues – one at Houndsditch and the other at Charlotte Place, Fitzrovia – boast bright, cheerful interiors designed by BusbyWebb, who were also responsible for the branding. MoMoMo was founded by Sanjeev Chibber and Arthur Magoulianiti, after Sanjeev noticed that there was nowhere in London serving his favourite Asian snack. Momos are prevalent in South Asia but have been widely adapted by numerous regions and cuisines, using different ingredients, flour, stuffings and accompaniments. To make the momo, the dough is thinly rolled, then, the filling is placed in the centre and the momo dumpling is formed into its widely recognised shape. Variations include the momos shaped with a small gap, to allow for broth to enter the dumpling, delivering an intensified flavour. »

Restaurants The concept demanded something ‘fast, casual and cheerful’, so we created a suitably playful personality for the interiors. Jay Mojaria, a winning contestant on Million Pound Menu developed the menu. Our work included coming up with a name and logo, designing the ‘dumpling’ characters which are featured within the spaces, and the interior spaces themselves.

Momos are steamed, fried or pan-fried. Pan-fried momos are often regarded as ‘pot-stickers’ as they gain a crispy bottom layer when fried in a hot pan. Designed for casual dining, each of the two new venues features a ‘grab and go’ counter, as well as seating, with Charlotte Place also having an outdoor seating area. Nick Wills, co-founder of BusbyWebb said: “We were approached to pitch our branding and interiors proposal by Mark A Wood Ltd, an independent hospitality consultancy. Once engaged, this was followed by a workshop with the client geared to identifying benchmarks, competitors and understanding the aims and objectives for the new brand. The concept demanded something ‘fast, casual and cheerful’, so we creating a suitably playful personality for the interiors. “Our work included coming up with a name and logo, designing the ‘dumpling’ characters which are featured within the spaces, and the interior spaces themselves.” The two venues, both previously food outlets, are similar in look with ‘unique design pillars’ allowing for both continuity and flexibility for further roll-outs which are planned. The interior design is based on the Himalayan region and includes a palette of bright colours with multi-coloured perforated metal fins hanging from the ceiling inspired by prayer flags, and designed to help navigate customers. One of the key design features is a bespoke mural specially created by an artist for each site and based on the defining characteristics of the location. Each mural depicts the ‘journey’ of the momos from the Himalayas to that location, with neon

anthropomorphic MoMoMo characters that blink throughout the day. The exteriors incorporate green wooden slats in front of the window. This slatted language is replicated on tables and benches. Other aspects of the design include a terracotta tiled counter, illustrated menu boards, digital payment area and fridge and colourful seating and tables with solid block wooden stools. The Houndsditch project, carried out by main contractors Oliva Contracts completed in the Spring. This was followed by the Charlotte Place scheme, which was installed by the client’s own property development team. Nick Wills commented: “It’s great to work on new, interesting brands, particularly when the product is an unusual cuisine.” ■

he reimagined restaurant debuts a stylish lounge bar, as well new menu additions, reworked cocktails and more. The stunning re-design engulfs the totality of Chotto Matte’s furniture from floor to chairs and tables to ceilings, featuring hues of green, purple, and orange. Tropical foliage is also abundant throughout the restaurant, as a nod to the Peruvian landscape. All the brand’s most iconic features still remain in the new design, including Japanese lava stone, shou sugi ban wood, and a variation of wall art inspired by Tokyo’s contemporary urban culture. Displaying urban flair and avantgarde design features, Chotto Matte’s Soho restaurant delivers an unforgettable ambience, which is both vibrant and electric. Guests can still enjoy the theatrics of the sushi counter and upstairs open kitchen, which is complete with a newly updated robata grill. PREMIER HOSPITALITY spoke with Andy Martin, founder of SUPERFUTURES, the company responsible for re-designing the Soho restaurant. We always integrate a lot of art and other creative pieces into our design concepts. The most Iconic element of Chotto has always been the idea of graffiti which draws inspiration from the Tokyo subculture.

In 2018 Andy created a new studio specialising in innovative restaurants, hotels experiential spaces. Chotto Matte’s long-standing relationship with Andy meant that the SUPERFUTURES was the obvious choice when looking to redesign the restaurant’s Flagship. Andy described the new design and said: “This time the design is more luxurious, due to the maturing clientele which have grown with Chotto, their expectation is that little bit higher in terms of quality of materials and comfort.” Soho’s new look offers an insight into an elevated design direction and a preview of what’s yet to come for the brand as they look to expand further across the world stage, with locations confirmed in San Francisco, Los Angeles, Nashville, Philadelphia, Manchester in the UK and Doha and Riyadh in the Middle East. The restaurant’s unique concept is designed to

seamlessly adapt to each of its locations, whilst the unmistakable essence of the brand remains at the forefront. NOBLE RUSSELL AT CHOTTO MATTE SOHO We were delighted to be part of the stunning refurb of Chotto Matte Soho. Andy Martin Associates approached us to carry out all upholstery and associated joinery works for both ground and first floor areas. Having created sculptural upholstered furniture for the designers in the past we were able to bring the proposed visuals to reality throughout the scheme. Our inhouse design team worked closely with the client, designer and main contractor. We produced technical drawings for sign off and developed prototypes for lounge and bar seating units. We liaised constantly with the designers and contractors to ensure all of the seating dovetailed together with other elements on site. The restaurant comprises a Lounge

and Bar area on the ground floor and restaurant on the first floor. We produced six off bespoke bar sofas and a complementing reception unit all fully upholstered in Vescom Mohair fabrics. The most challenging aspect of the project was the private lounge split into three intimate seating areas. We created a sculptural rear upholstered wall with integral seat and backs that fitted seamlessly between different floor levels and was capped into the feature wall behind. LED plinth lighting adds to the drama. The restaurant features a long run of new seating with sweeping curved ends. We also undertook the manufacture and install of the American Black Walnut joinery that capped the unit to the wall incorporating three planter boxes and a waiter station.

Three existing seating units were given a complete overhaul and reupholstered to match the new scheme. The new interior showcases Noble Russell’s expertise in contract management, design, manufacture and final installation. Noble Russell is a bespoke contract furniture design and manufacturing company servicing the high-end hospitality market. “In the new Soho design, we have included a 3D art piece as a development on the concept of graffiti and tagging. We like to use art as a way to rich depth, which allows us to be more dynamic with our design.” Reflecting on the project, Andy said: “Despite us doing other Chotto Matte’s since, this one was special because it is the first one that we ever did for the brand. GÓNGORA CERÁMICA At Góngora Cerámica we specialize in handmade ceramics. We are currently working with the fifth generation who are specialized in traditional pottery, and the sixth generation who are specialized in artistic and contemporary ceramics, as well as in design. Together, we are capable of materializing any desired project. Chotto Matte approached us for the renewal of their tableware, knowing our company first-hand and how we work. We jointly designed the type of dishes they needed, betting on what is handmade, the familiarity of the workshop and offering them exclusivity with the typology. In addition, they trusted us to create their new image, through the design of Superfutures, covering part of their new restaurant with large modular tiles, forming an exclusively handmade mural, which makes it unique. It means a lot to us that such a special place took notice of us, a small family workshop in Úbeda, to make their new crockery and their new architectural project, emphasizing that they wanted the feeling to be seen in each one of them. ead designers for the project, which is now heading smoothly towards completion, are Jojo Macnamara Interior Design, working with main contractors Charnic Interiors, who have been commended for their high standard of work. Working with a Grade II listed building such as Stanwell House requires striking the right balance between creating a contemporary environment, whilst also being sympathetic to its character and history. Much of the building’s previous interior was removed, taking it back to its original structure, whilst preserving and showcasing historic elements, allowing the stunning venue to realise its full potential. Lance Bartlett, general manager/ director of Stanwell House said: “When we purchased the hotel, it needed a lot of upgrading. We ran it for the first year and then decided to close for the refurbishment. “We have retained the building’s traditional character, whilst providing contemporary comforts throughout, in a project that has been ongoing until January. Local trade is particularly important to us – and they love the hotel’s original character, so it was really important to preserve this. The whole hotel is being transformed from top to bottom, inside and out – including the creation of new outdoor areas. This includes new additions such as the new bar and events space, the redesign, and in some cases, reconfiguration of all public spaces throughout, the redesign of all the bedrooms and the installation of brand-new bathrooms – as well as all-new building services. The exterior of the building has also been refurbished and new external areas are being created within the beautiful gardens. Jojo Macnamara said: “The design brief was to enhance the hotel’s classical Georgian elegance, whilst adding chic contemporary elements.” »

WARD ELECTRICAL SERVICES LTD

An impressive and elegant brand-new reception area has been created within a space previously occupied by the bar, and features Lewis & Wood wallpaper, a new reception desk, new lighting, parquet flooring and finishes with a colour palette of soft greys, burgundy and creams. A new bar space has been created within the hotel’s former bistro. Having also repurposed part of the kitchen to extend the area, the space has been completely reimagined and now seats up to 50 guests. When visiting the refurbished bar, guests will be transported to a cosy and inviting space designed to mimic the look and feel of a classic wine cellar. The bar area will feature a palette of soft green tones, dark wood, brick walls and marble features, as well as retaining the log burner, which has always been a favourite spot on a cold winter's day. Walls generally feature panelling and Barnaby Gates wallpaper,

and there is also a snug area, a bespoke designed new bar, and a section with a ‘wine wall’ illuminated by feature lighting, with brick slip walling. Jojo Macnamara said: “The orangery is a beautiful big space, and here we have created a real feast for the eyes with lots of planting and a relaxing atmosphere. We have completely replaced the glass apex ceiling, installed new lighting, a new bar, new fixed seating and high-level planting, whilst retaining the lovely original flagstone flooring. The colour palette comprises fun, bright finishes including greens, blues, whites, pinks and oranges. “The dining room features Colefax & Fowler floral wallpaper in pink, purple, yellow, green and blue shades, complimented by antique mirrored glass on the walls, green leather and velvet seating and marble-topped tables, creating a beautiful, bright, chic space.” »

Formed in 1975 (incorporated in 1998), Ward Electrical Services Ltd has established itself with a vast knowledge and expertise in the electrical contracting industry. We offer a complete design, engineering, installation, and commissioning service for the full range of electrical elements within a building. At Stanwell House we were appointed to carry out the electrical installation works alongside Charnic Interiors as part of the £3 million refurbishment of this Grade II listed building. Our works comprised the full electrical mains infrastructure, lighting, small power, fire alarm and data and audio upgrade works, along with a new incoming supply to the site to cater for the new kitchen load. Working closely with the project team we also provided the electrical design development from the initial outline architectural layouts working within the parameters of the Grade II listed building consents and logistical challenges of the site. Having worked with Charnic Interiors for over 40 years on several Marriott, Hilton, and Four Seasons projects, we pulled together our knowledge and expertise to enable this property to be sympathetically restored to a high specification. Hotels We are very pleased with the way it has turned out and very excited about re-opening. It was a huge investment and we had to make it work – which I am very confident we will. The contractors have done a very good job and I feel that the completed scheme will be a great addition to Lymington.

Of the hotel’s original 29 bedrooms, two former bedroom suites have been converted into a stylish events space for conferences and private dining, and all of the remaining bedrooms have been completely refurbished with new decor, flooring, furniture, curtains, fixtures, fittings and lighting, as well as completely new bathrooms. External works to the building include the heritage refurbishment of windows by a specialist company, as well as repainting of the building in the original colours in keeping with the required guidelines. Original outdoor lighting has been refurbished and new lighting added. Externally, new spaces are being created, including an outdoor bar and grill complete with planting and seating, as well as a courtyard dining area. Jojo Macnamara commented: “Charnic Interiors are doing an amazing job – I can’t fault them. They are certainly experts in

refurbishment and know how to take on this type of project. We are lucky to have such a great team on site. The Owners are also very happy – they really love how the project is turning out and have been very closely involved throughout. “It has been a great project for me, and I feel that everything I have done previously has led me to this. It has been wonderful being involved in progressing the scheme to its final stages.”

BACKYARD CINEMA, THE UK’S MOST MAGICAL CINEMA EXPERIENCE IS LEAVING THE CAPITAL FOR ITS PREMIER IN MANCHESTER THIS AUTUMN. AFTER NEARLY A DECADE OF REINVENTING WHAT IT MEANS TO WATCH A MOVIE IN LONDON, BACKYARD CINEMA HAVE NOW TURNED THEIR ATTENTION TO THE NORTH FOR THEIR VERY FIRST EVENT OUTSIDE OF LONDON.

he Immersive experience will be nesting down for the winter upon the rooftop of Manchester’s Depot Mayfield. This now iconic venue began life as busy train station before it was left derelict and disused for 33 years. The space was granted a new lease of life in 2019 with a £1billion regeneration project which has transformed the surrounding area. Now the venue is a cultural heart of the city, home to Escape to Freight Island, The Warehouse Project and the new 6.5-acre Mayfield Park. PREMIER HOSPITALITY caught up with Dominic Davis the founder of Backyard Cinema: “We have been wanting to come up to Manchester for a long time. We knew that we wanted to venture out of London and try other cities and Manchester has always been top of the list; I love the city and the culture. When we found Depot Mayfield, it was a no brainer. It is pretty exciting for us to be up there with The Warehouse Project and Escape to Freight Island.” Dom continued: “We look for disused venues and aim to bring them back to life, there is a certain romance to it; we have been doing this since 2015. We started off by putting a cinema in locations where you wouldn’t expect to find one, breweries, warehouses, attics even council

chambers; then we moved on to converting buildings and creating our own venues.” Backyard Cinema always try to preserve and highlight the original aesthetics of their adopted venues, the Depot Mayfield project is no different. Backyard purposely left Mayfield’s classic red brickwork untouched, choosing not to fix or cover up any blemishes. Instead the team focused on cleaning and restoration to enhance the buildings character. The crowning jewel of Backyard’s new location is the famous iron structure which functioned as the original platform roof, which has been accentuated with lights so that guests can admire it once again. The old platform waiting room has been converted into the main communal bar which guests can visit to stock up on refreshments before settling down the for the film. This is another area which Backyard Cinema wanted to keep authentic, Dominic told us: “In the bar area we decided to keep the train station aesthetic. We have used classic green tiles, old school seating, iron cladding and have tried to keep as many of the original features as possible. For the communal areas we wanted to highlight the space that we are in, but for the cinema experience our goal is to transport our audiences to another world. Our aim is that once our guests enter our magical shop doors the real

world is left completely behind.” At Backyard Cinema audiences can expect to be transported on a magical journey to a cinema like no other. This is a truly interactive experience, where guests will explore movie-grade sets, through tunnels of trees and magical doors to eventually discover the Enchanted Forest and home of the Lost Theatre. Simeon Aldred from Broadwick Live commented on the venue’s latest partnership: “Backyard Cinema has built a first-rate reputation with audiences for creating immersive and exciting film experiences in landmark venues, and so it seemed like a natural partnership for Depot Mayfield. This building played a central role in Manchester’s industrial past and is now a major driving force in the city’s booming cultural scene, as well as acting as a catalyst for the regeneration of the surrounding area.” The purpose-built 330-capacity, indoor winter cinema will grace the platform of Depot Mayfield for a limited 10 week run from Friday 21st October. The immersive experience is set to be a hit with over 5000 tickets sold in the in the first hour of their presale release. From new releases to cult classics Backyard Cinema x Depot Mayfield will be the most magical place to watch a movie this winter. ■

he restaurant serves seasonal dishes inspired by the diverse South East Asian and Mediterranean cultures that make up modern Australian cuisine. Each site has its own unique menu giving each restaurant a real sense of individual identity. Dishes in the new Soho restaurant include BBQ pork rib dumplings, pho ga consommé; grilled

prawns, fermented chilli butter, Typhoon Shelter crumb; and a Belted Galloway bone-in ribeye, tare, oyster and tarragon butter. 65 specially selected bottles from independent winemakers populate the drinks list, accompanied by a bespoke cocktail list and speciality coffee. Milk Beach take quality very seriously, with the restaurant owners even going as far as to start their own London based

coffee roastery ‘Album Coffee Roasters’ earlier this year, in order to supply both restaurants with freshly roasted coffee every week. Milk Beach’s new location occupies the rose-tiled building next to Foyle’s on Charing Cross Road, better known as Ilona Rose House, a multi-purpose space designed to house offices and creative venues. »

Here the new restaurant Comprises of two main spaces – a 90-cover indoor dining room and bar, and a heated outdoor courtyard providing space for 65 guests to enjoy all year round. The new restaurant aims to bring a slice of Sydney to Soho. PREMIER HOSPITALITY caught up with Alessio Nardi from A-nrd, the London based interior design studio which worked on the project. Alessio said: “The restaurant’s design was inspired by the Sydney coastline, and the art deco architecture of its beachside buildings.” One of the design’s stand out features is the unique in-situ Palladiana floor which runs throughout the whole restaurant. Milk Beach Soho’s new bar is also a showstopper, at an incredible 8m long, crafted from textured stucco and terracotta, there is plenty of space for guests to enjoy a pre-dinner cocktail. The restaurant area is illuminated by three bespoke, handmade rattan lights which add interest and authenticity to the space. Alessio concluded: “We truly enjoyed working with Elliot Milne and the whole Bluecrow team to bring this project to life. It’s an impressive site tucked away in the middle of Soho with an incredible outdoor space which is rare in the area.” ■

reated in response to theatre impresario Nica Burns’ vision for a flexible, contemporary theatre, @sohoplace offers unimpeded sightlines, outstanding acoustics, ample legroom and high levels of thermal comfort, marking a new departure for contemporary performance space in London’s West End. The new theatre is part of a wider mixeduse development designed by architects Allford Hall Monaghan Morris in close collaboration with Derwent London, Crossrail, Transport for London and Arup, comprising office space, retail and a new public plaza. The theatre’s 600-seat auditorium was designed by architects Haworth Tompkins and theatre consultants Charcoalblue in collaboration with engineers Arup and stage engineering specialist, Tait. The team have created an intimate yet welcoming room with multiple possibilities for artists and audiences to explore. Embedded at the heart of the new building, the auditorium’s seating and balcony fronts are designed to follow the theatre’s inky blue and deep golden timber material palette. The house lighting also draws influence from the theatre’s ‘starlit sky’ design. An innovative modular system of seating and balconies allows the auditorium to be reconfigured easily and quickly, offering greater flexibility and functionality to provide for a variety of performances. PREMIER HOSPITALITY spoke with Simon Allford co-founder and director of Allford Hall Monaghan Morris, who described the new facilities as: “A wonderfully calm, flexible, yet intimate auditorium, where the actors have access to get the best dressing rooms, rehearsal rooms and club/bar in the West End. There are also three great crush bars all linked by a wonderful pair of marble stairs, so the audience briefly become actors in their journey on an architectural promenade.” »

Theatre Experience This project was a wonderful, collaborative journey which spanned over two decades. We had a number of designers and contractors all working in sync with our two clients. It is great to finally see the construction finished and let the magic of the theatre take over. I can’t wait to enjoy being just another member of the engaged public, delighting in the restaurant, bars and performances.

Food and beverage is now an intrinsic part of the theatre experience. Nimax Theatres, the theatre operator for @sohoplace, chose to use a specialized team to design the venue’s new food and beverage and kitchen facilities. CW Consulting were enlisted to provide full project management, quantity surveying and contract administration services for the hospitality fit-out works. This involved the construction of a new basement kitchen and a dumbwaiter which allows a singular kitchen to serve the ground floor restaurant and multiple upper bar levels with ease and efficiency. The use of the dumbwaiter allows the theatre to unlock its full food and beverage offering potential, something which is more difficult for older, more traditional theatres. PREMIER HOSPITALITY also spoke with Chris Wall, founder and managing director of CW Consultancy who said: “This was an exciting and challenging project as we had to integrate all the design elements to make the kitchen work. The mechanical extract, canopies, and power outlets were all designed to fit the equipment and the space.” He continued: “The client put a lot of trust in our ability to deliver and made decisions quickly, which in turn enabled us to complete the job to a high standard and under budget. As this is the first new build theatre in London in 50 years, the project

came with a lot of responsibility, but it is also the most enjoyable job I have worked on in 35 years.” Simon Allford shared the same enthusiasm about this historic project and said: “This project was a wonderful, collaborative journey which spanned over two decades. SHOP4HANDLES

T

he hotel has a distinctly boutique feel, its 41 guest rooms, including 7 suites, have been expertly designed by Bowler James Brindley. PREMIER HOSPITALITY caught up with the company’s three co-founders: Ian Bayliss, Stephen Crawley and Lucy Southall, to discuss the design process behind bringing these historical Georgian townhouses back to life. Stephen said: “We worked with the client and operator to create the brief, which evolved over time. On this project we had to complete lots of research into the history of the building and its different uses. The hotel is created from a row of 6 Georgian townhouses, these were originally used for residential purposes, then converted into retail units in the Victorian period. KPF Architects also completed an extension on the building which was a modern yet elegant addition

to the rear of the hotel. As a result, the hotel has a unique look, as design influences from contemporary architecture, Georgian architecture and Victorian architecture work in harmony with each other.” The building’s period exterior is what really makes this hotel unique. Ian described the challenge this posed during the design process: “Usually as designers we get period properties to work with and discover elements which we would like to keep, like skirting boards for example. DESIGN & CREATE Design & Create Ltd was established by a small complementary team of highly skilled individuals working in a clean modern environment to specialise in fine and bespoke fitted joinery and furniture, high end residential and commercial fit-outs, using both modern and traditional woodworking skills. We have worked on large scale commercial projects in London including No.1 Knightsbridge, DeVere Gardens, Harrods, Selfridges, and Fortnum and Mason and have completed work for Latimer Hotel, Beaumont Hotel and Tortwoth Hotel both in main circulation areas such as the bar, restaurant and function rooms and supplying bedroom furniture. At Sun Street Hotel we manufactured and installed the fitted joinery in each of the 41 bedrooms as well as the bedside cabinets, dressing tables and bathroom vanity units, carefully using a designed mix of wood veneers, marble, solid brass, and glass. The opportunity to work on a project where all our expertise and skills could be incorporated into the manufacture was great. Hotels We took inspiration from a lot of the typical Georgian colours, faded browns and blues. We then took our favourites of those and played around with them, making them richer and deeper. We used the colours to create different zones, if guests stand in the first house and look along the ground floor space, they will notice each area is a different colour and therefore has a different atmosphere to it.

He continued: “For example, the ceiling heights change as you go up the building, from high ceilings on the first floor to restricted on the upper floors. It was a challenge to work out how to design the space appropriately for that, whilst keeping the building’s authenticity. We loved being able to put a sense of grandeur back into the building.” Bowler James Brindley’s research into the building’s history informed almost every aspect of the design. The hotel was originally designed by renowned architect and portraiture artist George Dance the Younger, in tribute to this, portraits decorate the hotels corridors. The hotel also sits close to the site of the Whitechapel bell foundry, Ian described how this influenced one of the hotel’s signature features: “The Whitechapel bell foundry was a world famous foundry that made bells for some incredible places. We thought that this had a nice link to the

hospitality industry through the service bell. We decided to create a custom chandelier which hangs over reception, made from 41 miniature service bells, one per room of the hotel. It’s a stunning 2.5 meter installation hung from the reinstated plaster mouldings which we created. The bells in the installation bring connotations of elegant period hospitality, tying the building’s history and its new function together.” In keeping with the theme of elegant hospitality, the service at Sun Street Hotel is notably discreet – guests are greeted by the traditionally uniformed doorman, and the hotel prides itself on attentive, intuitive five-star service with attention to detail throughout. The hotel’s style is elegance personified, with extravagantly beautiful décor and finishes. The design uses traditional Victorian and Georgian colour palettes, enhanced for a contemporary twist. Lucy explained: “We took inspiration

Guests and non-residents can enjoy the elegant, wood-panelled Restaurant’s intimate feel, while the outside Courtyard is a buzzing space on warmer days for drinks and al fresco dining. There are multiple cosy bar areas and lounges, a light and bright Orangery for breakfast, a Tasting Room, and a hidden Sun Terrace on the third floor which is perfect for balmy evenings. Stephen explained what the project meant to Bowler James Brindley: “We formed our studio in 2014 and hadn’t been in business for very long when we were commissioned to do this project. Taking old buildings and reinventing them for the next generation is something which we have always dreamed of doing, retaining the original character and architecture. We were lucky enough to work for a brilliant client, we’re really proud to have completed this project.” ■

he project has been carried out for hospitality entrepreneur Khaled Dandachi together with US-based company Noble 33, owned by Tosh Berman and Mikey Tanha and known for its ever-evolving lineup of unique, social dining restaurants stateside and abroad. The restaurant is based on Noble 33’s Sparrow Italia high energy fine dining concept.

Project managers for the Mayfair development were Cotton Thompson Cole, who specialise in the project and cost management of restaurant developments from initial concept through to handover. Main contractors for the fit out were Stebar Interiors Ltd, who won praise for their work on the project. Sparrow Italia is the newest dining destination to join the Noble 33 portfolio, curating a modern twist on traditional Italian and Mediterranean dishes. The menu highlights fresh seafood, homemade pastas and a selection of classics that exude bold flavours and high-quality, sustainable, and organic ingredients. The new site is split across three floors, serving 150 covers with a capacity of 189 across all floors: A ground-level brasserie, a terrace dining room on the indoor/outdoor first floor, a parlour dining room on the second floor, and a cigar lounge third floor. The restaurant's design features include

neutral tones with small accents of emerald and blue, with modern light fixtures, and the use of marble, tile insets, and wood, all contributing to the romantic coastal Italian and Mediterranean aesthetic. Noble 33’s Corporate Executive Chef, AJ McCloud leads on the menu development, aligned with the brand’s ‘mission for better eating,’ as he produces exceptional menus that exude bold flavours, high-quality and a focus on sustainable ingredients. The food is complemented by adventurous mixology that uses fresh, seasonal ingredients and the finest spirits to craft dynamic cocktails, all rooted in the flavours of Italy. Khaled Dandachi said: “I have wanted to open a restaurant in London for the last five years and have a great relationship with Noble 33, together we have been looking around for a long time with the aim of bringing something special and unique to the city.” »

One element of these works involved the extension of the restaurant out into the firstfloor roof area, which was achieved by the addition of a glass enclosure and presented a considerable challenge. The third floor, which was originally back of house offices and storage, was stripped out to provide new dining space, with other works including extensive remodelling of the customer WCs, introducing larger bars and the addition of some very special bespoke features to achieve the required look. All of the bars, wall panelling and ceiling panels are bespoke made by specialist fabricators. A further major challenge of the project was in the supply of specialist materials for a fast-track construction fit out of just 14 weeks (a factor affecting the whole sector). However, this was overcome. Andrew Bridge commented: “It was lovely to work on the building again and carrying

out the project has been an absolute pleasure with great teamwork from everyone involved – particularly Stebar who are wonderful contractors and have done a good job. THE HISTORIC MOUNT JULIET MANOR HOUSE WELCOMES VISITORS BACK AFTER A COMPLETE REDESIGN OF ITS BASEMENT AREA, INTO A LUXURY IMMERSIVE GUEST EXPERIENCE.

he space is nominated for a prestigious Fit Out Award in the Fit Out Project of the Year – Hospitality (Hotel) category. The awards are Ireland’s premier event in design and construction and aim to celebrate excellence in the execution of world-class fit outs. The awards offer a great opportunity for companies from all over Ireland to come together, collaborate, and showcase their work. L’Estrange Designs undertook the project, which completed in January 2022, transforming the vaulted basement of the manor house into a space designed to be discovered and enjoyed by guests. The refurbished basement area is complete with a bar, enchanting private cinema room, a conference space and luxury bathrooms. Careful consideration has been taken over every aspect of the design to exude luxury and relaxation, even down to the women’s

bathroom, where a custom blush tone marble make up counter sits, accompanied by velvet seating, creating a serene space for a moment of self-care. While maintaining the structural boundaries of the vaults, the bar was redefined in situ, with a new luxury red marble bar counter-top, complemented by a custom designed red leather and marble panel bar front. Bespoke oak whiskey cabinets next to the bar form a focal point on the guest journey, drawing them through the hallway to the bar directly. The 1757 bar is named so in honour of the year that the house was built, referencing the history of the manor house in its foundations. L’Estrange Designs described the delicate balance between transforming the space and retaining the house’s historical features: “As the designers on this project, we wanted to closely reference the history and culture of the building, while also creating a unique

and contemporary balance to exude a 5 star guest experience. Our goal was to maintain the spirit of the estate, while entirely reimagining the full level of the Manor House.” Throughout, a rich colour palette inspired by historic hues of deep burgundy, hunter green and elegant navy have been introduced, to bring warmth and heritage into the unique space. A key factor of the design was to highlight the beautiful architecture of the vaulted ceilings, with a focus on warm, atmospheric lighting implemented throughout. Functionality and usability were the starting points of design, with the layout of customer zones redefined by custom deep button back leather booth seats in earthy tones. The tactility of the space is further enhanced by tartan wool fabrics and aged brass detailing. Rethinking the inner room of the basement was also a key aspect of the refurbishment project. Previously, this space served as a snooker room, but was not fulfilling the potential it had to offer. One of the early decisions on the project was to repurpose this space, and to create a luxurious private cinema room for guests to enjoy. As a vaulted space, this was not an easy task, and many studies were undertaken to ensure when the floor was tiered and screen in place, every seat provided a 5 star view. This versatile space now offers experiences for families, for romantic date evenings, and even corporate presentations. ■

The Georgian architecture of spacious, airy rooms throughout the house combined with the woodland and coastal walks located within the 300 acres. A long-time member of Ireland's Blue Book Dunbrody House offers an authentic Irish country house experience. Located on the dramatic Hook Peninsula on Ireland’s south coast, Dunbrody House is owned and operated by husband and wife team Kevin and Catherine Dundon. This hotel reflects their joint passion for excellence in all areas – fine food and friendly, relaxed service combined with luxury accommodation

all within the centuries-old walls of this beautiful Georgian property. The hotel has just re-opened after completing Phase 1 of a major refurbishment and more development is planned for 2023. What began as a small refurbishment to freshen up the hotel’s interior, became a huge reimagining of the interiors whilst following similar colour schemes so as to not lose the impression of the 200-year-old historical building. In the end around two-thirds of the suites have been renovated as well as the whole of the downstairs area and the public spaces. Working with two separate interior designers, Kevin and Catherine wished to provide the interiors with a more midcentury art deco feel, choosing a lot of Liberty London prints and quirky soft furnishings. The couple also worked with a local antique company to help restore the antiques within the Dunbrody Country

House Hotel that needed care. Continuing the theme of restoration, the original floors of the country house have been uncovered, removing the carpet that previously ran throughout the hotel. Some features of the hotel have been moved around to accommodate the new renovations and Kevin and Catherine worked with Hugh Wallace, the award-winning architect and founding partner of Douglas Wallace Consultants, on the technical engineering of this process, as well as the certifications and licenses of the building. The work took place over four months, with the hotel being closed for business during this time and reopening in April of this year. “The feedback from this project has been fantastic, our guests are constantly gushing to us about how wonderful the new renovations look. We have more pride than ever in our hotel, and love showing guests around. It has been 25 years since the last major refurbishment on the building, so we have been able to give it a whole new lease of life all at once. The house really lends itself to all sorts of designs, patterns and colours – we are really thrilled with the result.” said Catherine Dundon, co-owner of the Dunbrody Country House Hotel. ■

ollowing four years of development, Fairgame is revolutionising the funfair, offering guests the chance to re-awaken their inner kid in a state-ofthe-art, adults-only playground – for the ultimate night out. The venue was designed by A Modern Practice Ltd (A.M.P), with DDI Projects as main contractors.

The building was originally three public houses knocked through to create one big unit, which was an empty shell with shopfronts. The construction works included everything from floor screeding to the installation of partitioning, mechanical and electrical works, decoration, joinery, installation of staircases and a fire sprinkler system. Fairgame brings fairground favourites

back – from whac-a-mole and roll-a-ball derby to duck shoot and water gun clown. Every game has been redesigned and is hooked up to RFID wristband tech, so that players can log scores, track leader boards, and battle it out for Fairgame’s giant pink teddies – as well as bragging rights. Fairgame doesn’t just represent a revolution in the fairground experience, it’s a revolution in fairground food too. »

Entertainment Venue The idea of a fairground is fairly rich in visual material – but for me, the challenge is how you edit and use that material to create something unique and interesting. I wanted to avoid cliches and to produce something original and ‘fun’ but with stillmaintaining a degree of design integrity.

Customers can enjoy some of London’s most exciting street food vendors, including Burger & Beyond, Rudy’s Pizza Napoletana and masters of Mexican, Dos Mas Tacos. Loaded with Prosecco-infused candy floss, Hackney Gelato, boozy sweets and toffee apples, Fairgame’s Candy Stand is suitable for all children aged 18+. An expertly crafted drinks menu is available from the venue’s three ‘Bumper Bars’. Fairground-themed signature cocktails have been created in collaboration with one of the world’s best bartenders – and with small-batch artisanal spirits, classic boozy slushies and London-brewed craft beer – there’s something for everyone. Food and drinks packages can be purchased in advance, with pre-paid tokens loaded onto gamers’ wristbands when they check in. Traditional fairground elements including luminous carousel booths floating above the space, fairground mirrors and rubber duck installations have been woven into this modern riverside location. The result is a space designed to be enjoyed whether eating, drinking, playing – or all three. The concept was launched by experienced entrepreneurs Richard Hilton, founder of Gymbox; Paul Campbell, founder and owner of Hill Capital Partners LLP (who currently sits on the and board of Hawksmoor, Blacklock, the Alchemist

and Yard Sale Pizza), and renowned entertainment lawyer, Andrew Myers. Fairgame’s first site is backed by a £3.5 million investment from BGF – the UK and Ireland’s most active growth capital investor – and £1.5 million from a consortium of private investors. Patrick McKinney of A.M.P said: I have worked with Richard Hilton for over 15 years. When I was told about the concept, I

Entertainment Venue Fairgame is a totally immersive experience where guests can eat, drink and be a kid again. The fairground has been enjoyed for generations and now we’ve combined the games everyone loves with state-of-the-art technology in an unbelievable setting. Guests will have the ultimate feeling of nostalgia: a proper ‘those were the days’ moment – now back as an epic night out.

“I wanted to avoid cliches and to produce something original and ‘fun’ but with stillmaintaining a degree of design integrity. The design was geniunely a team effort, it is always great to work with good clients who were fully engaged with the design process. “I was particularly interested in the temporary nature of and the materiality associated with fairgrounds – reflected in the design of the venue’s bar, which includes a visible background structure in multi-coloured anodised aluminium, which looks as though it can be deconstructed and re-assembled somewhere else.” The venue is a fairly dark space, which is enhanced by ‘pops’ of colour, together with spectacular lighting from a lighting specialist INTO. Recognisable signature fairground elements such as waltzer booths and hanging ferris wheel pods also feature in

the design, adding extra character. Patrick McKinney added: “It was a difficult building to work with in terms of challenges – the inevitable integration of services especially in relation to the three kitchens and the acoustic issues (sensitive tenant on the floor above) that arose at a very late stage of the process. “Everyone loved it at the initial launch, with many positive comments about the venue, which looks – and is – amazing. “This was a fantastic big project to work on, and very enjoyable for me.” Dean Thornton of DDI Projects said: “We have worked for Richard Hilton previously, on his leisure club projects. Our work on this scheme included involvement in design and programming at pre-contract stage, approximately five months prior to commencement. The construction itself involved finding solutions to bring the design ideas to life within a build

programme of around 25 weeks. “This is DDI’s first competitive venture into the F&B sector. We were at the soft launch earlier and there were three different kitchens all doing different menus. The food was absolutely amazing. Exhibition has been brought back to life by the team who own the Exhibition building – Grade A Alternative, a family owned property business that previously opened Haunt, a Manchester-based coffee shop and aperitivo bar on Peter Street.

xhibition is nestled within the Grade II listed building of St George’s House on Museum Street, just off Peter Street in Manchester’s bustling city centre. The building was the site of the Museum of Natural History in 1909, and the interiors have been stripped back to reveal the original shell. Steeped in rich history, the building sits on the site of the 1817 Peterloo Massacre and is the very place where the body of Hannah Beswick (the Manchester Mummy) was found. Exhibition has been brought back to life by the team who own the Exhibition building – Grade A Alternative, a family owned property business that previously opened Haunt, a Manchester-based coffee shop and aperitivo bar on Peter Street. More than 60 jobs are being created as a result of the venue, as well as widening opportunities for smaller independent businesses with takeovers of its deluxe kitchen spaces. Ed Meziani, interior designer at Grade A Alternative since 2017 said: “Grade A Alternative are property developers specialising in offices. Since 2020 however we have decided to take on our ground floor retail spaces to create independent venues we can be really proud of. Expanding greatly on the traditional food hall concept, Exhibition offers an exquisite dining experience with global inspiration and local heart, with space for 200 covers

Ed continued: “In December 2020 we started stripping out the site to shell state ready for work to commence. We loved the food hall concept - but with the addition of much finer cuisine and with greater emphasis on the shift from day to night. “One thing I am particularly pleased with is the large format porcelain tiles adhered to the kitchen walls supplemented by warm white lighting. ollowing the huge success and praise for San Carlo Cicchetti in London’s Piccadilly and Covent Garden, the Knightsbridge restaurant offers opulent and elevated authentic Italian dining. Open seven days a week and offering contemporary Italian dining, the menu – as the name suggests – offers an elevated and refined take on cicchetti, the authentic Italian plates typically served in traditional bácari (informal bars) in Venice. Located on Hans Road, adjacent to Harrods, Cicchetti Knightsbridge is serving up freshly prepared regionally inspired plates, mostly using ingredients sourced direct from artisan producers in Italy and perfect for sharing. Expect a buzzing atmosphere, and the impeccable service synonymous with the San Carlo family of restaurants. Guests can start with an aperitivo such as a Bellini Veneziana with white peach juice and exclusively sourced prosecco alongside perfect-for-picking crostini and stuzzichini, including Prosciutto San Daniele with gnocco fritto and burrata with Parma ham and black truffle. The menu will feature seasonally inspired choices and Cicchetti classic signature dishes including the everpopular and decadent black truffle ravioli; burrata with smoked aubergine and toasted hazelnuts; and black salt sea bass with herb and olive oil salmoriglio alongside new dishes, unique to Knightsbridge. »

This is very exciting as it’s our second project with San Carlo and in a very high-profile location. Given all of the challenges of the last few years it’s great to see our client taking on new site and building our continued relationship with them.

SPC

Spread across two storeys, the 100-cover restaurant required a full strip-out and refit of an existing restaurant site, including repositioning the kitchen in the basement and forming a new private dining room as well as new rear windows and shopfront. The restaurant also now features a standalone bar and a private dining room seating 18. The elegant and timeless interiors reflect classical Venetian architecture, and the work of some of the city’s most influential residents – such as Carlo Scarpa – is referenced throughout the scheme. Using plenty of varnished wood and a light and fresh palette, design details evoke the water taxis and luxury yachts synonymous with the region. The use of bespoke marble finishes and materials is consistent throughout the venue. The floor is polished marble throughout and the walls a high-gloss timber panels with mirror infills and brass

detailing. The ceilings on the ground floor are an off-white polished paint finish with reinstated skylights to the rear. The main bar is of cipollino marble with the basement PDR having similar finishes with a golden polished paint finish and fabric ceiling detail. The toilets have green verde ming and red onyx marble floors and walls with mirrors and painted panel details above dado level. »

According to Greg Austin of Fettle Design, the interior designers of Cicchetti Knightsbridge, “The bar and back bar are made entirely from marble. Ordinarily, we would design a bar that is made up from slabs of marble or faceted details to corners however the design of this required the contractor to source a block of the cipollino marble for the solid edges, corners and uprights, creating a monolithic effect. “This is very exciting as it’s our second project with San Carlo and in a very highprofile location. Given all of the challenges of the last few years it’s great to see our client taking on new site and building our continued relationship with them.” Managing Director Marcello Distefano commented before the opening of the Knightsbridge restaurant, “We are utterly delighted to be opening a third branch of Cicchetti in the capital and to have secured

Revolution PRESTON ‘BRINGING THE ULTIMATE PARTY TO PRESTON’, THE NEW REVOLUTION BAR ON FISHERGATE HAS DRAMATICALLY EXPLODED ONTO THE TOWN’S SOCIAL SCENE, WITH A CELEBRATION OF SOUND AND SPECTACULAR VISUAL EFFECTS LIKE NO OTHER.

esigned by BARK design Studios, the venue, based on ‘pure hedonism,’ where even the ladies’ room rocks with party-popping music and lighting at the touch of a button, has proved a big hit with revellers. The main contractors for the all-new revolution Preston site were THWG. Joel Barker, Managing Director of BARK Design Studios said: “We have been working for Revolution bars group for just over a year now, with Preston marking our first venture into creating an all-new venue for the client and their growing portfolio. “The site was previously known as The Fishers Bar – a former bank building located over a single floor with an additional mezzanine area which we have transformed into a huge capacity late night party space. The works included a comprehensive strip out of the original interior to expose as much of the surviving character as possible. “Each Revolution Bar is different to the next, and we are given complete freedom in designing the interior concept – which to us, is all about responding to a building’s architecture with the spirit and energy of a revolution bar. In this case, we had a huge open space packed with character and traditional detailing which made a great canvas for us to provide the ultimate party space” »

Bar & Restaurant It was a big venue to take hold of, but the process of transforming it was very organic and enjoyable, resulting in the creation of a really atmospheric design. Feedback from the client has been brilliant, with nothing but ‘good vibes’. They also really bought in to what we were trying to create within the space and ran with it.

Just inside the entrance is an area dedicated to daytime lunch/brunch and early evening cocktails. To the left is a retained original fireplace, enhanced by a new, feature mural portrait above, which is illuminated at night. To the right side of the entrance is a comfortable seating area leading to a raised private space known as ‘The Good Vibes Room’ illuminated by a colourful neon sign with further drama added to this area by what the designer’s term ‘the exploding drums’ installation on the ceiling. Joel Barker commented: “This musical element not only acts as a double entedre to the ‘good vibes’ message, but also gives a real sense of the punk rock attitude that reinforces the Revolution spirit.” A huge spectacular 10 m long feature bar with illuminated lettering behind dominates the centre of the downstairs space. The bar has been designed to convey a premium, high specification feel during the day, and illuminates and pulsates dramatically in time with the musical rhythms at night. Another key element is the large, illuminated feature ceiling, which helps to visually ‘bring down’ its exceptional height and also draws the eye to the end of the room. A series of seating booths set on different tiered levels are arranged overlooking the bar, and there is a dance floor and a DJ area to the rear of the space. The eye-catching DJ pulpit with ‘exploding’ light bursts behind

can be seen from the venue’s entrance and provides yet another high octane party feature. The overall effect of the design is that the whole place pulsates to the music creating a multi-sensory experience. The mezzanine level is designed to change the pace a little from party to an ‘escape oasis’ with hanging planting and comfortable seating, overlooking the main space. At Revolution Preston, even the ladies room rocks, with a ‘Push for Party’ button on the wall, turning the room into a live disco complete with music delivered through speakers and spectacular light effects. Joel Barker commented: “This particular feature really dials up the excitement and has proved exceptionally popular, as well as something of an Instagram sensation. It is all part of our concept to provide the space with as much hedonism as possible.” The overall design palette is one of the raw, urban stripped back effect of an ageing

concrete building, layered with ‘pops’ of neon and colour, dramatic graffiti artwork and spectacular lighting, giving a ‘high energy warehouse party vibe’. Joel Barker concluded: “This project was a journey to say the least – we had numerous challenges with the building (which had been left empty for several years), which naturally caused difficulties. “It was a big venue to take hold of, but the process of transforming it was very organic and enjoyable, resulting in the creation of a really atmospheric design. Feedback from the client has been brilliant, with nothing but ‘good vibes’. They also really bought in to what we were trying to create within the space and ran with it. “I can’t speak highly enough of all of the contractors on the project – they were brilliant. We were challenged to bring the ultimate party to Preston – and we certainly consider it ‘mission accomplished!” ■
