We need months like these to remind us how our shared heritage and our diversity unites us as people, and it is therefore with great pride that we present to you our Mashujaa issue based on the “Nightlife” genre. This month, if you are looking to celebrate your Shujaa, then we’ve got it right for you. In this month’s issue our team had a blast on their endeavor to bring the best of Nairobi’s nightlife. Nairobi, City under the sun, roars to life as dusk falls. In this issue we have traversed the city’s nightlife- unlocking the aesthetic culture in the 24 hour economy city. In this read, you will witness a terrific compilation of cities best buzzing clubs, if you looking for a place to enjoy a thrilling night out. On served, we have brought the best of healthy dishes you can indulge before stepping out for a fun night. Kenyans love it healthy and that’s why we went with ways to have your ugali in style. With a bid to bring, Pwani vibes to Nairobi, we have 'Kachari za Muhogo' courtesy of Rina cooking oil. To celebrate some of our shujaas in the F&B industry we have set two pages to appreciate our heroes including our all-female team that will present Kenya in the annual ‘wine olympics’ in France. Fossil fuels have dominated the world’s primary energy supply for the last century, but a transition to a more integrated and low carbon energy system is now gathering momentum. The transition may seem slow because the replacement energy providers — mainly wind and solar PV — start from a very low share. The quest to lower the carbon footprint of fossil fuel production and consumption is accelerating, both technologically and in terms of affordability, such that the next decade will witness some key tipping points in the energy landscape. The present shift in the energy mix is both market and policy driven, with climate-related concerns, amplified by youth activism, expected to have a significant regulatory impact. Add the bell pepper, red onion, and minced garlic and allow to cook until softened for 3-5 minutes 4.Add the tomato, tomato paste, salt, and spices together with ¼ cup of hot water. Cook for 5-8 minutes 5.Add the liver and let it cook for 10 minutes under medium heat 6.Once cooked, add your Herbal Mchuzi and coriander. Cover and let it simmer for 3 minutes FOR CREAMED SPINACH 1.Sauté the onions in oil until translucent. Add the blended tomato, salt, coconut milk and let this simmer for 2 minutes 2.Add in the spinach, stir and let it cook in low heat for 3 minutes and serve 3.Served as a side dish, goes well with Ugali and the liver with Avocado Ugali x Liver Wet Fry

The Secret to Smoky Grilled Corn Lies in the BlueBand Spice Rub. Seasoned with classic bold barbecue flavor, this grilled corn is a perfect home backyard barbecue staple. Combined with the charred goodness from the grill, the trifecta of chili sauce, BlueBand margarine, and paprika create a spicy, smoky crust that makes this side irresistible. Ensure the heated pan is well greased before starting the grill. Melt the BB before generously coating the corn. Once the corn is charred all over, brush with the chili sauce and paprika. Hit it with a squeeze of lime for extra flavor INGREDIENTS 2-3 ears of corn , 1-2 Tbs of chili sauce and 4 Tbs of BlueBand Margarine INSTRUCTIONS 1.In a heated grill pan, melt 2 Tbs of BlueBand Margarine. 2. Add corn in the greased pan. Grill evenly by turning often, until half cooked 3. Evenly spread BlueBand Margarine all over the corn. 4. Servings- 4 Cook - 35 Mins INGREDIENTS 5 – 8 green bananas, 250 grams beef cubed, 3 tomatoes cut into cubes, 1 onion, chopped 1/2 cup of coriander, chopped, 1 tbsp Winnie’s Pure Health Herbal Sea salt, 1/2 cup of cooking vegetable oil, 1 tbsp Winnie’s Pure Health Afya Mchuzi, 1 tsp black pepper, 1 tsp paprika and 1/4 cup of curry powder 1 8 . Every community in the world has its signature foods. Kenya is no different. You can try a number of different local delicacies in Kenya which will satisfy your taste buds in every way possible. Internationally, we are famed for our nyama choma and ugali downed with a bottle of Tusker. However, in the midst of all this glory, Kenya has its fair share of weird foods, they may differ from tribe to tribe but here is a roundup of the most unusual local delicacies that require an acquired taste. Cow blood Drinking blood isn't as traumatic to the body as you think. The maasai community pierce a vein on the cow to draw some blood, then mix it with milk and put it on gourds before they drink it. Other communities here cook the ‘liquid meat’ - it hardens and tastes like liver. Termites When it rains in Kenya termites come off their nests and swarms happen when colonies have winged female and males and they have to mate. Some people take this opportunity to catch the insects. They eat them raw (after removing the head which is too crunchy because of the hard jaws) or fry them in a pan. They taste better when cooked. Chicken head and feet Next times you are enjoying that baked chicken don’t throw away the feet and head. When washed thoroughly, boiled then put to roast the becomes a little gelatinous in texture. It’s the proper seasoning that makes it so pungent and strong-tasting, with an acquired taste. Basically the mandazi is split open stashed with anything ranging from chips/ frys and mutura (intestine-encased mixture of minced pieces of cow or goat meat, tripe, and cooled blood that's been flavored with onions, salt, pepper, and chili).Very unusual but delicious! Mashakura Pretty much summed up in the name, this is often a main dish served on a platter with one or more side dishes, such as a salad or french fries. In Kenya the mashakura dry platter is made of Kuku Kienyeji, mukimo, boiled maize, boiled cabbages with sprinkling of kachumbari. Goat head Considering how many places it’s eaten, perhaps it’s unfair to deem this weird. Still, it’s made mostly of goat head roasted on flames to burn off the hair and to give it some flavor. The head is then boiled for hours before being split open to eat all the gooey meat inside including the brains! The goat head is boiled for many more days, and people keep drinking the soup. 2 9 . We were served to a delightful fried brioche with Mombasa crab salad with cucumber liquid gel and a splash of lemon mayonnaise. Paired with dehydrated apple this cushioned well as a perfect opener for what was to come. Bone Marrow Deconstructed to a perfect Kenyan classic the Oxtail ragout was jelled with cheese & herb gratin. Confit Duck Treated to one of the most luxurious of foods in French cuisine this gently cured duck drumette bathed in its own fat and slowly cooked to falling-off-the-bone perfection is everything to die for. Also in it was the duck grilled breast paired with whisky marmalade sauce and hibiscus liquid gel. Some roasted garlic potato puree gave it some flare, while the charred zucchini completed this sinful combination of silky meat and crackling skin. Rib-eye Onto the star of the show was the Rib-eye. Rib-eye roast on the bone is always a crowd-pleaser. The medium rare steak paired well with some hearty mushroom cream and béarnaise. The part where they could both complain of how they got infected with some STIs and secretly treated them without any of us noticing. As for me, the worst had already happened.
