EDITOR'S NOTE

THE INCOME INSURANCE COOKIE-CUTTER;

FONTERRA POSITIONS FOR THE WAVE haven’t been so lucky in the past three years? Agreed – It is hard to scheme for all. The cookie-cutter approach will always leave segments of people and business worse off. At the time of print, the scheme for me had work to do. Once in place in 2024, though, the one thing there is no doubt of is that it will mean more costs to the end consumer through the flow-on effect. Once again, much of the scheme’s additional costs for business owners will be passed on and filter through the supply chain, compounding upon each other along the way, too. The result is higher prices. Take my regular order at Pizza Hut… extra-large stuff crust pepperoni which pre-pandemic was $12; I am now paying $23. Now look at the statistics of food cost increases, with a recent report of a 7% increase compared to the same time last year. So, in my head I do a worst case scenario, tripling the 7% for three years of pandemic to 21% and without the knowledge of the flow-on effect then scratch my head at how there can be a near 100% price increase on my pizza? But that is exactly what happens, though, and has been happening. Freight/transport costs, fuel prices, salary increases… they all mount and all compound along the supply chain like interest. Each touch point raises the bar – and a little bit more, just to be safe – and that little bit more adds up at each point. The hardest part of business in today’s world is to maintain standards… because that Pizza Hut pepperoni favourite of mine

looks nothing like it did three years ago – ‘where’s the cheese’ and ‘what happened to the pepperoni’ are the first two things I say during ‘unboxing.’ You see, a business owner doesn’t know the future in today’s world and while raising prices is a good way of negating the increasing costs, cutting corners adds a safety net. Unfortunately, flow-on from that is a diminishing brand. Today’s business world is about keeping your head above water until you can ride the wave on the other side of all of this and to not spread yourself too thin – to focus on the knitting right in front of you. And some are achieving this well. Fonterra’s recent annual results showed good signs for a country that also relies on its primary industries… the $583 million dollar profit although slightly down showed that the company’s strategy of relinquishing international assets and focus is working – albeit aided by a “great milk price”. Fonterra, under chief executive Miles Hurrell, has refocused on the ‘local’ and to get more value from New Zealand’s 10,000 farmer shareholders. Fonterra will pay an annual dividend of 20c per share which is in line with last year and has injected $13.7 billion into the economy. With the potential easing of geopolitical events, the company is well-positioned to ride the wave. Hopefully, that will mean more cheese on my pizza, too. Publisher/editor Greg Robertson

ith inflation kicking off, it is tough to be a consumer. However, personally, it is tougher to be a business owner because you are the double-whammy – a consumer and a business owner. Although the Covid pandemic came with slight relief for businesses in the form of a wage subsidy if you qualified, many business owners will feel that this country that is build on the back of SMEs carried much of the burden. They then turn the corner – the traffic light system is lifted – and without a chance to breathe a mask-free breath another potential ‘cost’ hits them in the face with the Government’s proposed $3.5 billion Income Insurance Scheme. Tearing your hair out as a business owner is a daily occurrence. One of the country’s larger employers Woolworths NZ (Countdown owner) which employs more than 20,000 people in NZ, said it understands the reasoning behind the scheme but did not support the current design. And that is significant. This is a business that instead of the issue of closed doors faced the major problem of keeping up with stocking the shelves during lockdowns, not laying off staff, and for it the scheme would “take much-needed earning” from their employees. Of course, with the current design scheme of employer/employee contributions, the cost to Woolworths NZ would also be significant. That’s a business which has boomed – what of those that

SEAWEED SUPERFOOD…

ALGAE RESEARCH REACHES TWO-YEAR MILESTONE

W

ork has started on analysing a native seaweed and other microalgae with potential superfood status, in a global research project involving New Zealand and Singapore. The milestone in the project to extract novel proteins has been reached after a workshop was hosted by the Riddet Institute at Massey University in Palmerston North. The research project to determine the physio-chemical properties, health benefits and digestibility of the seaweed extracts began in late 2020, with the native seaweed karengo and international microalga Chlorella thought to have value as alternative protein sources. Karengo is related to nori, which

is widely produced and eaten as the seaweed wrap in sushi, while Chlorella is produced and marketed internationally as a health supplement. The research is funded by the Ministry of Business Innovation and Employment’s Catalyst Fund. The $3 million global study is led by New Zealand’s Cawthron Institute, in collaboration with the Riddet Institute, the University of Auckland, Plant & Food Research, Singapore’s Agency for Science, Technology and Research (A*STAR), the Singapore Institute of Food and Biotechnology Innovation (SIFBI) and the Bioprocessing Technology Institute. The Riddet Institute is a Centre of Research Excellence (CoRE), hosted by Massey University, which focuses on fundamental and

advanced food research. Riddet Institute director Distinguished Professor Harjinder Singh says the nation-wide project and collaboration with Singapore could lead to innovative new products. “This collaborative effort has the potential to create new opportunities for the New Zealand food industry to export algaebased super foods,” says Singh. Workshop co-organiser and Riddet Institute project leader Dr Arup Nag says the project intended to have a face-to-face workshop to bring together international personnel every year of the threeyear project, which commenced in September 2020. But Covid-19 pandemic disruptions have meant this year’s workshop was the first. The next workshop is planned to occur in Singapore in July 2023,

when it is expected the nutritional potential for the seaweeds will be known. Nag says the research collaboration is hoping to extract the protein or carbohydrate components from the seaweeds and then use them as novel food ingredients. “There is high potential for establishing commercial algae farming by start-up ventures if this is confirmed.” The production and marketing of high-value functional foods with unique attributes would be next steps. Nag says along with the proteins, the polysaccharides (carbohydrate) component in the seaweed may also have functional benefits that can be tapped. This is also being investigated by the research team. He says Singapore has expertise in the extraction of protein from micro algae such as Chlorella and New Zealand scientists have developed the extraction process for macro algae like karengo. Other goals of the research project are to foster international research relationships and to improve future food security by diversifying food production. Karengo is a traditional food of Māori. It is rich in protein, omega-3 fatty acids, dietary fibre and a range of micronutrients, says Nag. “This seaweed is native to New Zealand but not yet harvested commercially,” says Nag. He says karengo is commonly found on rocky reefs on the intertidal foreshore, mostly on the east and south coasts of both the North and South Islands. The porphyra and pyropia groups of seaweed, to which karengo and nori belong, are thought to have a range of potential therapeutic and nutritional benefits. Human clinical trials with the protein-rich extracts will now begin in Singapore and lab/animal trials in New Zealand.

NESTLÉ INVESTS TO GIVE PLANET A BREAK Nestlé New Zealand gave chocolate lovers one more reason to enjoy their break, announcing KitKat will be New Zealand’s first food packed in a wrapper using recycled plastic. Across Australia and New Zealand more than 40 million 45g KitKat bars will be packed in the 30% recycled food grade wrapper in the next year, cutting virgin plastic use by around 250,000m2, enough to cover more than 200 x 50m swimming pools. Nestlé New Zealand CEO Jennifer Chappell said the company was on a mission to cut its virgin plastics use by a third by 2025. “We’re focussed on less packaging and better packaging. This is a journey of ongoing innovation. While we have made progress in a number of areas, the KitKat 45g bar wrapped in 30% recycled soft plastic, the first of its kind, is a huge stride in the right direction. “Consumers are increasingly paying attention to the recyclability of the products they use. This innovation is a win-win for KitKat fans; they can give the planet a break, while they take their break. The 30% recycled content wrapper will keep the chocolate crisp, fresh and delicious and the wrapper also remains recyclable through the Soft Plastics Recycling Scheme.”

HUCKLEBERRY SIGNS FIRST WHOLESALE DEAL WITH WOOLWORTHS NEW ZEALAND Organics grocer Huckleberry and Woolworths New Zealand (WWNZ) have announced the first wholesale agreement for WWNZ to provide a range of groceries to Huckleberry stores, with access to a greater product range at better prices cited as key benefits for Huckleberry’s customers. Huckleberry has grown from a single small specialty shop to a leading health and wellness business with four organic grocery stores in the North Island along with a burgeoning e-commerce site. New owners 2121 Group took over the business in February 2022 and are on a mission to provide customers with quality organic grocery options at more competitive prices. Darren Guo, Huckleberry managing director, says the Government’s push for supermarkets to open up their wholesale channel was just the impetus they needed to get conversations started. “Eating organic food shouldn’t be out of reach for anyone, which is why we strive to give Kiwi shoppers access to the organic options they want, at the most competitive prices. “The partnership with Woolworths’ wholesale business is a big win for our customers as we can access a much broader organics range at better prices thanks

to their volumes and scale. We have always had a steadfast commitment to products and produce from New Zealand, plus now we can add so much more variety from around the world. “It’s exactly what the industry and our customers need during this time of high inflation,” says Guo. Following the Commerce Commission’s market study into the retail grocery sector, and its final recommendations published in March, the Government confirmed its expectation that the major supermarkets work to open up their wholesale channels. In June, WWNZ called for early expressions of interest from potential wholesale customers and has since also set up a new business, New Zealand Grocery Wholesale, to focus on understanding the demand for groceries through the wholesale channel, negotiating with suppliers on aspects like price, volume and supply, working to set up the systems needed, and getting the

business up and running. Steve Sexton, WWNZ’s director NZ grocery wholesale and local, says while the business isn’t able to provide wholesale supply at a large scale yet, getting this first agreement in place with a multistore competitor like Huckleberry is important and shows WWNZ’s genuine commitment to encouraging more competition in New Zealand. “We’re really transparent about the fact that currently, the whole WWNZ business is set up to service our Countdown, SuperValue and FreshChoice stores. Starting a wholesale business and all the complexity that brings isn’t an easy task - but we’re determined to get there. We’ve been working hard to get this agreement in place and we are confident it will be the first of many. “We are a large retailer in the New Zealand market, but small by international standards, so we understand some of the frustrations that Huckleberry

experiences in accessing range and good prices. We know that we’re in a better position to help provide that access than smaller NZ-based businesses, and we’re committed to doing that for the benefit of Kiwi consumers. “It’s going to need a bit of experimentation as we work through order quantities, demand, delivery and logistics, and test and learn so we can quickly scale for other wholesale customers in the future. We are currently in discussions with more than 50 retailers and other organisations who have reached out to us. The grocery sector is built around fastmoving goods and efficiency which does present challenges working with small, one-off retailers, but it’s our view that we can do this - and we’re giving it a really good shot to make a difference,” says Sexton. WWNZ’s New Zealand Grocery Wholesale business operates separately from Countdown, SuperValue and FreshChoice, with a different buying team having discussions with suppliers around products, supply and potential wholesale volumes. “The support from suppliers is critical for wholesale to be a success,” says Steve Sexton. “The government has been really clear that it wants to see wholesale opening up so we’ve all got to play our part.”

FARRAH’S EXPANDS ITS KETO RANGE Farrah’s is introducing two new low-carb options to its existing range, including its first ketofriendly wrap and the first lowcarb tortilla available in New Zealand supermarkets, giving consumers even more choice. The Keto-friendly Wrap contains an ultra-low 2.5g of carbs per wrap and joins a line-up of three other Low Carb Wraps in Farrah’s existing range – Original, Plant-based Protein, and Supergrains – which have proven a hit with consumers. Farrah’s Low Carb Tortilla contains 45 percent less carbs with only 6g of carbs per tortilla, compared to its original tortillas.

Farrah’s general manager, Mike Murray, says Farrah’s is excited to build on last year’s successful launch of its original Low Carb Wrap range with an even lower carb Keto-friendly Wrap for people following low carb and Keto dietary lifestyles or those wanting to try something new. “We know from the response from customers to our initial Low Carb Wrap range that there is a lot of demand for these options, not only from those who are carb-conscious but also from anyone who wants a lighter meal without compromising on taste and quality.”

DIGITAL AGRICULTURE A SIGNIFICANT OPPORTUNITY TO NZ’S PRIMARY INDUSTRIES Digital agriculture is creating a significant opportunity to enhance New Zealand’s primary industries, including economic, environmental, and social outcomes.

WHITTAKER’S NEW HAZELLA Whittaker’s has release Hazella, a 250g block that features a silky-smooth hazelnut gianduja centre encased in Whittaker’s classic 33% cocoa Creamy Milk chocolate. “With the harmonious balance between the delicious gianduja filling and generous Whittaker’s classic Creamy Milk chocolate shell, we think Hazella is simply perfection wrapped in perfection,” says Whittaker’s product development manager, Megan Sinclair.

The latest AgritechNZ report creates a baseline of digital adoption across the primary sector to better understand the motivations, pressures and barriers faced by farmers and growers in adopting new tools, AgritechNZ chief executive Brendan O’Connell says. The research was designed to provide actionable insight for agritech businesses, industry groups and public agencies who seek to unleash the potential of digital agriculture and develop strategies to support farmers and growers. “There is a deep richness in the findings and attitudes to digital adoption. A total of 59% of the surveyed population lean

towards the adoption of digital technologies,” O’Connell says. “But this is for very different reasons and with different pathways to participation depending on the mix of motivations, pressures, and barriers. “A total of 41% of respondents sided with not seeing much value in using digital technology to run their business. “This is a high proportion, though not unexpected considering knowledge levels are low, and the value of data sharing is still to be unlocked. “While there is a healthy population of trailblazers across all sub-sectors and age groups, on the whole, the willingness to

and growers are data sharing.” The biggest barriers to data sharing revealed by the survey included that farmers and growers did not believe their data would have value to anyone else. There is a low recognition of the value in the data held on farm and a difficulty in unlocking the value of shared data. There is also a lack of clarity around who would want the information and why. “This is what can lead to confusion, mistrust and fear. Confidence comes from knowing who is using it and for what,” O’Connell says. “Adoption on use of digital technology is highest in farm business management, such as accounts, payroll and health and safety solutions. “This may be the entry point for digital technology on farms, with many tools having been around for a long time. “Across the primary sector, the lower adoption areas are water, irrigation management, plant and crop management and effluent management.”

WASHDOWN SOLUTIONS FROM METTLER-TOLEDO BOOSTING YOUR PRODUCTIVITY EVEN IN HARSH ENVIRONMENTS

A

s a food manufacturer, a key challenge you probably face is finding the right balance between producing high quality products and maximising your productivity. In the current economic climate, combatting rising costs is also a primary concern. Investing in innovative technology designed to help you address these challenges can deliver both productivity and cost reduction benefits

10

OCTOBER 2022

over the lifetime of your product inspection equipment and that’s where Mettler-Toledo can help. The company offers a range of washdown checkweighers and combination systems to help you meet these challenges.

THE CHALLENGES OF HARSH PRODUCTION ENVIRONMENTS Your products may be produced in harsh and/or wet environments and so reducing bacterial

contamination risks is vitally important. This is made all the more challenging when regular and strict cleaning routines are required. You may have concerns about how the machinery will hold up under continued cleaning with hot, high-pressure water and caustic detergents, or how to minimise cleaning downtime. Moreover, you may be worried that the system requires time to dry before restarting and returning to full functionality.

“Fortunately, our washdown checkweighers can start accurately weighing products again immediately after cleaning. We can help you maximise uptime and reduce user errors with the intelligent design and user-friendly features of our washdown product inspection systems,” says Jürgen Kress of Mettler-Toledo.

HIGH PERFORMANCE IN HARSH ENVIRONMENTS “At Mettler-Toledo we design our

systems with advanced features to reduce bacterial contamination risks.” For example, the company’s washdown checkweighers are robustly designed with open frames and sloped surfaces to avoid pooling or collection of moisture where bacteria can thrive. “Thanks to sealed cable connectors and an IP69 rated electrical cabinet, you do not need to worry about moisture ingress causing unexpected downtime. In fact, the entire system is IP69 rated, including the interface, so it does not need to be covered up prior to cleaning. “In addition, we offer IP69 rated FlashCell Electromagnetic Force Restoration (EMFR) technology in our checkweighers, which is at the heart of our load cells.” These load cells are designed to operate with exceptional precision at high speeds. They can withstand extreme temperatures and maintain weighing accuracy irrespective of the frequency or duration of the cleaning regimes in place. These washdown systems therefore help you comply with numerous food safety standards and maintain your brand reputation.

release conveyor belts that are easy to adjust allow you to quickly dis- and re-assemble your washdown system. It only takes around 90 seconds to remove these belts for thorough cleaning, says the company. Rollers and glide plates can also be removed and replaced in a matter of moments, thereby keeping downtime to an absolute minimum. Production can be resumed right after the washed elements have been reinstalled. Indeed, you can even have two sets of conveyors, so one can be immediately installed while the other is being cleaned, further reducing downtime. “All of our washdown systems support failsafe operation so

potential user errors are greatly reduced as the systems are designed to be intuitive and easy to use. For example, our C35 Checkweigher has self-adjusting elastic belts, meaning there is no need for straining upon reassembly, minimizing potential belt-related problems after reassembly,” says Kress.

BOOST YOUR PRODUCTIVITY Washdown solutions from MettlerToledo can help you to boost your productivity by keeping your production lines running smoothly, even at high throughputs. For instance, the C33 washdown Continued on page 12

checkweigher offers remarkable weighing accuracy at a throughput rate of 250 packs per minute. The CM3 washdown system combines metal detection and precision weighing in a single, space-saving device, ideally suited as a critical control point (CCP). This combination system has dual reject bins and is therefore able to quickly identify the reasons products were rejected, saving time and money. “We realise that any unplanned downtime can have a significant impact on your profit margins and at Mettler-Toledo our goal is to help our customers meet their business needs. Having the right product inspection solutions for your application is essential for brand protection and profitability. With minimal downtime thanks to our helpful systems, you will see your productivity increase and quickly recoup your investment costs.”

SUPPORTING COMPLIANCE The company says that it understands that as a food

manufacturer, compliance is very important to your business. You want to uphold the various standards and regulations your industry is subject to in order to sustain your hard-won reputation and keep consumers safe. “Mettler-Toledo is your trusted partner in achieving these goals. All of our conveyor materials that come into direct contact with food fully comply with Regulation (EC) 1935/2004, Regulation (EU) 10/2011 as well as the relevant FDA regulations. “We also support good data governance as our systems connect to open interfaces such as OPC UA, PackML and Fieldbus. This means that you can access and analyse production data whenever and wherever is convenient for you. In addition, we offer our own data management software, ProdX, to further enhance your data collection efficiency.” With over 20 years of experience and expertise, Mettler-Toledo can advise you which product inspection solution will give you

the best value and outcomes for your application. The right choice will help you avoid costly and damaging product recalls and help ensure only high-quality products leave your facility and reach your customers. As compliance requirements become more demanding, the company's product inspection equipment can help you meet them, even in the most challenging of environments.

IN SUMMARY Product inspection systems for harsh environments have to be reliable, precise and resilient. These are the qualities offered by Mettler-Toledo washdown checkweighers. “Whether you choose a single system or a checkweighing and metal detection combination system, you will benefit from increased productivity and reduced production costs.” If you are looking for more information on washdown solutions and the benefits they offer download the free eGuide at https://www.mt.com/cw-wd-au.

A KIWI SUCCESS STORY…

Fletcher International Exports’ owner Roger Fletcher standing in front of one of the newly installed Milmeq SSO plate freezers.

PARTNERSHIPS DELIVER 200TH MILMEQ PLATE FREEZER INSTALLATION

M

HM Automation’s story began nearly 150 years ago in 1884 in Christchurch, in the South Island. Today, the company operates on a global stage, designing and delivering systems to many of the leading food processing companies internationally. A milestone installation is the result of an enduring partnership between two future-focused companies in the Australasian meat industry. MHM Automation has recently commissioned the 200th Milmeq plate freezer at Fletcher International Exports’ sheep meat processing plant in New South Wales. MHM Automation sales manager – Australia, Chris Carter, says the project was the result of a longstanding relationship between the companies. “Fletcher International Exports has always been an innovator in the meat industry. They’re constantly looking to new technology to improve the quality of their product and the performance of their business, and we’re proud to work with them to develop and deliver industry-leading equipment. “It’s fitting that this milestone installation is for Fletchers,” he says. The development and provision of plate freezers to the meat industry

14

OCTOBER 2022

was led by Milmeq in the 1990s. Today, Milmeq plate freezers are the largest horizontal plate freezers in the world and continue to be the fastest and most energy efficient system for freezing cartons of meat. The latest project saw the installation of two new plate freezers at Fletcher International Exports’ Dubbo plant, each standing at 12 metres high, with a capacity of 2,560 cartons and the ability to completely freeze cartons of cold boned product in less than 24 hours. The new installations bring the total number of Milmeq plate freezers installed for Fletcher International Exports across both its plants to eighteen, three of which feature the latest technology innovation, single station opening (SSO). The SSO plate freezer model was a collaborative development between Milmeq (now part of MHM Automation) and Fletcher International Exports, with the first commercial prototype being commissioned at Fletcher’s Dubbo processing site in 2015. The SSO mechanism allows products to be automatically loaded and unloaded one station at a time, keeping the remaining stations closed and product in those stations in contact with the plates to continue the freezing process. The SSO design increases the effective

refrigeration, to ensure regulatory compliance. Fletcher International Exports owner, Roger Fletcher says the technology delivered by MHM Automation was second to none. “The MHM Automation team share our pioneering spirit and have worked closely with us to help scale-up our operations and cement our reputation as an industry leader. Their plate freezers are enabling us to deliver a superior product to our customers, while also reducing our environmental footprint,” he says. Milmeq plate freezers are a key contributor to reducing the plant’s electrical energy consumption, delivering savings of up to 30% over the blast freezing method traditionally used. Freezing in plate freezers more than halves the time required to freeze cartons of meat, which results in better shelf life for the export meat products. Cartons frozen in the plate freezers have completely flat presentation, allowing 10% more cartons to be stacked into each 20-foot shipping container, effectively reducing shipping costs. Completely automated loading and unloading operation, with integrated infeed and outfeed conveyors, reduces the plant’s reliance on manual labour as well as the health and safety risks associated with manual handling and working in a frozen environment.

“Fletcher International Exports has always been an innovator in the meat industry. They’re constantly looking to new technology to improve the quality of their product and the performance of their business, and we’re proud to work with them to develop and deliver industryleading equipment. It’s fitting that this milestone installation is for Fletchers.”

MEAT AND DAIRY BENEFITS

FROM ‘DOWN UNDER’ MANUFACTURING

n Australasian leader in meat, dairy and livestock wastewater treatment, CST Wastewater Solutions, is now fully manufacturing its rotary drum screen and screw screen/ compactors locally to enhance quality and certainty of supply in Australia and New Zealand. The company had made its mark in both countries for more than 25 years with dozens of highly robust and cost-efficient screening and compacting installations, including gut washers used by Thomas Foods International, anticlogging and environmental/OHS installations in one of Australia’s largest tanneries, rotary drum screens used by food processing leader Beak and Johnston,

and multiple rendering plants throughout New Zealand. “Our experience with the meat, dairy, and livestock industry tells us that not only do they need certainty of supply of technology vital to their efficiency and sustainability objectives, but also this technology needs to be of the highest quality and reliability to deliver the absolute best ongoing performance,” says CST Wastewater Solutions managing director Michael Bambridge. The switch to local production also enables CST Wastewater Solutions to offer full stainless-steel products with these same world-respected standards of Australasian metals engineering, replacing carbon steel components and further improving corrosion resistance in harsh industry environments. Such testing environments – in

which the screens, compactors, and wedgewire and perforated drums are typically used – extend from the toughest environments, including meat, dairy, poultry, fishery, and livestock plants, but also equally testing and proving environments in municipal sewerage, waste management and water supply networks on which entire communities and enterprises depend. “In many industrial plants, these screens allow the important product recovery of fat and proteinaceous material, which is all worth money to companies seeking to maximise their use of resources,” says Bambridge. The screen and compactor technology – which is a first line of defence in preventing blockages, overflows and environmental – is integral not only to processing operations, but also to the sustainability of livestock industries sharing valuable water resources with nearby communities, and wishing to maintain their social license to operate. “Integral to the new, locally manufactured rotary drum screens and auger extractors is industrybest screening, which provides 50% finer apertures for greater waste solids extraction and recovery,” says Bambridge. “We have been moving progressively to local manufacture for the past two years now, to maintain quality leadership and guarantee reliable supply as Covid has wrought havoc with imports. “Shortages and erratic supplies have had a knock-on effect right through the wastewater engineering sector, so we took the decision early to give our customers and edge in quality and certainty. “Not only does local manufacture deliver a more robust and lowmaintenance product – and better whole-of-lifecycle value – but it places the customer next to the source of supply for spare parts, future extensions and retrofits to boost performance long-term.”

ENHANCING FOOD SAFETY AND QUALITY IN MEAT AND SEAFOOD

M

eat and fish have their own unique food safety and quality issues, largely related to the processing of these products. The muscle tissue of meat and fin fish, says Professor Steve Flint of Massey University, is generally sterile until slaughter and filleting expose these nutritious surfaces to microorganisms. Microorganisms quickly attach to these tissues and colonise these surfaces as biofilm, which can be very difficult to remove. “Contamination in meat and seafood processing plants is kept to a minimum through traditional cleaning and sanitizing methods. While these are useful in maintaining hygiene of the processing environment, they have limitations such as inactivation with large amounts of organic material and the enhanced resistance of biofilms.

An additional concern is the environmental disposal of the cleaners and sanitisers. We can do better,” says Flint, professor of Food Safety and Microbiology and team leader Food Bioscience at Massey University. Flint says there is renewed interest in enzyme-based cleaners for use on both product contact surfaces and the product itself. Traditionally these have been an expensive option but there are some recent developments that promise cheaper alternatives with the potential for re-use. “Enzymes can be selected for specific targets that can act directly on microorganisms or the components of a biofilm. These enzymes are commercially available for industrial use. The challenge is selecting the right enzyme and avoiding enzymes that may damage products. “For example, for meat and seafood, protease and lipase

enzymes would not be appropriate as they potentially react with protein and fat in meat and seafood resulting in spoilage. However, enzymes that target bacterial specific components, and in particular biofilm components, have a promising future in the cleaning and sanitation of meat and seafood processing plants.” Recently, a start-up company in the US suggested a selection of thermophilic, acidophilic enzymes that have the potential to be re-

used. These are aimed at food manufacturing plants, and Massey University has started trials for several food applications. “If successful, this will open- up a range of possibilities for a sustainable, effective alternative to current cleaning and sanitation systems.” Contact Massey University if you are interested in the most recent developments or to join the new intake of the Master of Food Safety and Quality to learn more.

necht, the “world’s leading brand of knife sharpening technology” is now available in New Zealand, and according to distributor Highgate Group it’s already had a significant impact for New Zealand food processors. With a portfolio ranging from compact hand knife sharpening machines to 6-axis grinding robots, “Knecht offers the latest in cutting edge robotics and automation technology”, enabling New Zealand food processors to maximise blade sharpness levels across their plants, including boning, skinning and slicing knives to bowl cutter blades, slicers blades and mincer plates. “Food processors in New Zealand and Australia have been quick to embrace this innovative technology, reaping the benefits of consistently sharp knives, including increased productivity and meat yield, reduced kniferelated injuries, increased team morale and staff retention, and increased overall profits,” says Alister Joyce, general manager of Highgate Group. Highgate Group is the exclusive partner for Knecht in Australia and New Zealand. Working closely with a number of meat processing plants, Highgate Group has facilitated the integration of robotic sharpening equipment into everyday operations.

edge is a thing of the past – now the worker just needs to focus on maintaining their knife edge throughout their shift. “Moving into the future of robotic knife sharpening couldn’t have come at a better time, with global challenges around workforce availability and absenteeism only on the rise.”

THE WAY OF THE FUTURE

Innovation usually comes at a significant cost but thanks to the incredible results achieved with Knecht sharpening machines, most companies have experienced

REDUCING KNIFE-RELATED INJURIES As the saying goes, ‘a sharp knife is a safe knife’. Highgate Group says that a precisely sharpened knife significantly reduces the risk of accidents and reduces absenteeism and injury claims due to repetitive strain injuries (RSI) and musculoskeletal disorder (MSD). “In only three months, companies have reported up to 70% less knife-related injuries.”

INCREASING PRODUCTIVITY AND YIELD With every knife hand equipped with a sharp knife, food processors have seen an increase in productivity which has enabled them to safely increase their line speed and their production throughput. “This increase in sharpness levels has also meant that less meat is left on the bone, increasing overall yield by 0.5% and counting.”

SYSTEMS FOR SUPERIOR CONVENIENCE FOOD

T

here are many factors to consider when determining the best oven or fryer for your meat, seafood or poultry application says supplier Heat and Control. “Advanced processing methods and industry changing equipment is helping food processors achieve greater yield, efficiency and safety than ever before — so they can create the products consumers love.”

AIRFORCE INPINGEMENT OVEN A genuine impingement oven is the industry standard for manufacturers producing par and fully cooked ready-to-eat meats. A true impingement oven will use high velocity airflow above and below the belt that is distributed evenly across the width of the belt, and along the length of the oven. “Heat and Control’s AirForce Impingement Oven can cook dramatically faster than other comparable ovens through the

use of technology that quickly and evenly transfers heat across the full width of the product conveyor.” The company says it has been proven to deliver faster cooking and greater uniformity than any other impingement oven and can cook your chosen meat product to precise specifications thanks to a patented moisture-controlled heating system which delivers higher yields and, uniform cooking across the width which means you don’t over-cook the product on one side of the oven.

SURECOAT BREADING APPLICATOR The Heat and Control SureCoat breading applicator can uniformly apply predust, breading and flake coatings to meat, poultry and seafood products. The breading is quickly transferred by large diameter, adjustable-speed augers. The top and bottom coating can be adjusted independently for superior coverage of all product surfaces using flour or batter

pre-dust, granular and non freeflowing breadings, even delicate Japanese-crumb and flake coatings.

BRANDERS AND SEARERS The Heat and Control range of quality branders and searers can give food producers the control they need for surface enhancement when preparing and cooking high quality prepared food products. “Precise control enables different finishes to be achieved through the number of burners used and the adjustment of the individual angle and height of each burner in addition to variable conveyor speed to control the exposure time.” Branding can be applied to the top, bottom, or both sides and can include custom markings such as diamonds. The floating ring top wheel can conform to variations in product thickness such as that found in chicken breast fillet. Control over branding colour is easily adjustable and there is the ability to adjust branding depth and speed to suit a product’s requirements. The rotary brander includes a variable speed conveyor, belt rinse system for easy clean-up, and selfcontained combustion and control systems. The operating and combustion controls are fully pre-piped and wired to reduce installation time and costs. Remote control panels and rollaway units on casters allow for more production flexibility and can be custom made to suit your specific plant requirements. AROMA-RICH FREEZE CONCENTRATION FOR BEVERAGES AND LIQUID FOODS

G

EA has introduced the new GEA IceCon Compact series to produce liquid food concentrates at this year’s international tradeshow Drinktec 2022, held recently in Munich, Germany. The standardised compact plants ensure gentle concentration of liquids into syrup while preserving flavour and ingredients. They are mainly used for high-quality fruit extracts, juices and dairy drinks, alcoholic products or even cold-brew coffee, but are just as suitable for vinegar concentrates. Freeze concentration plants remove the water from liquid foods to purify the product or to concentrate the flavour into a small volume for transport and further processing. This process achieves the highest selectivity because the grown ice crystals bind only the water. When this is removed at the freezing point, the result

is a concentrated syrup in which quality, aroma and all ingredients are completely preserved. The newly developed compact series is an integrated solution for manufacturers with small to medium production volumes who require a dewatering capacity of 100 to 900 kg. Operated continuously, the plant freezes and concentrates at low temperatures without the need to interrupt the process for cleaning. The units are delivered skidmounted and tested, requiring little effort for installation and commissioning. Since the energy is recovered through a pre-cooling line and the system is electricpowered, the carbon footprint could be reduced even further with green power. To match container transport standards, the compact freeze concentrators are available in three sizes – IceCon Compact 25, IceCon Compact 40, and IceCon Compact 60.

POWERING UP POWDER… HEAT EXCHANGER MAKES ALL THE DIFFERENCE TO LARGE PROCESS COMPANY

L

earning from example is a quick way for local food manufacturers and processors to get ahead – with others having gone through the trials and tribulations to find the solution for you. Family-owned for four generations, Huntapac is one such an example, with the leading UK grower and supplier of root crops such as carrots and parsnips. Following a reorganisation of the business in 2019, the company wanted to develop new value-led product options and so installed a stateof-the-art line to produce carrot powder, with a heat exchanger from HRS Heat Exchangers forming a key part of the new

process. Established near Preston in northern England by William Hunter in 1942, Huntapac initially grew a range of crops for fruit and vegetable markets in the North West, before starting to supply leading supermarkets almost fifty-years ago. The company was a major producer of root crops (carrots and parsnips), salads and brassicas (such as cauliflower and broccoli) until a few years ago, when it decided to rationalise its operations and concentrate solely on the root crops. The business grows more than 1,300 hectares of carrots and parsnips across the UK, from Suffolk to Scotland, all of which

are taken to the company’s factory at Holmes near Preston for washing and packing. With the increased focus on root crops, the company was keen to add value to the five per cent of the crop which is not suitable for its packing customers and looked at a number of options before deciding on the production of carrot powder. “Five per cent may not sound like a lot, but when you are washing up to 400 tonnes of carrots a day, it soon adds up,” says Huntapac’s commercial director Steven Kay. “We researched a few methods because there are lots of different Continued on page 28

PROCESSING exchangers themselves, HRS supplied two feed hoppers and an HRS BP Series positive displacement pump to feed the puree into the heat exchanger. The heat for the process is supplied from a dedicated steam boiler and the line has a capacity of 500 kg of puree per hour. The warmed puree is then passed over a drying drum where it is dried to create a flaked product which is milled down into the finished powder. “Pre-heating the puree before the drier performs two main functions,” explains HRS UK sales manager, Andy Ensor. “Warming the puree makes it easier to move through the line as it has less resistance, but the biggest benefit is that it reduces the amount of energy needed to dry the puree making the overall process more

efficient.” Production of carrot powder began in the first half of 2021 and the line now produces around 60kg of dried finished product an hour. The carrot powder is produced under Feed Materials Assurance Scheme (FEMAS) accreditation and is used as an ingredient in animal feed. “With the tight margins involved in fresh produce, it is important to maximise the value of the crop which has cost you money to grow, and this line allows us to utilise the entire crop,” says Kay. “The line has been designed to be able to handle other crops, but we have initially chosen to focus on carrots and although we have had to make tweaks as you do with any new process, we are now very happy with the quality and of the product that we are producing.”

“The biggest benefit is that it reduces the amount of energy needed to dry the puree making the overall process more efficient.”

drying techniques available, and we felt that the process that was right for use was to puree the carrots, put them over a drying drum and then mill the flake that results into a powder.” In early 2020, plans began in earnest for the powder production line. As the first of its kind in the country, this took a lot of consultation between all the parties involved, including equipment suppliers such as HRS heat exchangers. The process begins when the carrots are diced and then pureed, after which they are fed into the heat exchanger. This consists of two HRS R Series rotary scraped surface heat exchangers placed in series, which raise the temperature of the carrot puree from 10 °C to 60 °C. As well as the heat

EA has officially opened the doors to its new purpose-built facility in Horotiu, north of Hamilton. Established in 1974, GEA Avapac designs, manufactures and exports powder packing systems for bulk packages ranging from 10kg to 1500kg for the food and dairy sectors. The new $25 million 4,000 sqm facility is home to a team of 60 employees, including design, assembly, engineering, R&D and administration. There are many features that make it a comfortable and efficient place to work. But it has also been built with the future in mind. “Every detail of the building design has been challenged to ensure the layout and product flow adheres to lean practices to ensure wastage is minimised, from incoming parts through to completed packing lines ready for shipping,“ says Neil Simmons, GEA Avapac senior director powder packing. “Particular emphasis has been

put into providing and promoting a sustainable environment that all staff can be proud of. The building encompasses sustainability features, including energy efficient heating and ventilation, double glazing and LED zoned-controlled lighting. There are also electric vehicle and bike charging stations for staff use.” The facility is capable of bringing major reductions in energy and water requirements. “We have installed two 20,000 litre tanks that collect 40,000 litres of rainwater from the rooftop, reducing the amount of town water we will use for irrigation. And the warehouse roof has been designed for future installation of solar panels and a battery bank.” Another key design point for the new building was efficient manufacturing. “The previous premises was originally designed as a fabrication facility and was not suitable for efficient manufacturing of packing lines. The new building has dedicated bays for assembly and testing. There is also allowance for

FACTORY

INDUSTRY 5.0 – HERE TO STAY, WHAT YOU NEED TO KNOW ABOUT IT

and ease-of-use. “There is still a misconception that anyone dealing with robots needs to come from a robotics background, but this is simply not the case.” A free online training session from UR Academy spans 90-minutes and will ensure that individuals with no prior robotics background are able to unbox and perform simple material transfer applications in a matter of hours: “Thanks to its small footprint and safety features, with the appropriate risk assessment in place, cobots can fit into existing workspaces and processes quickly and easily.”

DEPLOY AND REDEPLOY

I

ndustry 5.0 is taking off faster than we could have imagined according to Universal Robots. While some say its just a buzzword, many are now reaping its true benefits and the factory floor will never be the same. In fact, Universal Robots predicts that the natural adoption of Industry 5.0 will continue to accelerate for the foreseeable future. “Industry 5.0 is benefiting from a lot of ‘groundwork’ that its predecessor Industry 4.0 has done to date,” comments Masayuki Mase, country manager for Universal Robots Oceania. “It’s

the natural progression of Industry 4.0 rather than a completely new concept. “The term ‘Industry 4.0’ first came to light more than a decade ago and the uptake was rather slow. However, many years later, we are benefiting from a wealth of knowledge, industry insights, enhanced systems and tangible results, and this has largely paved the way for Industry 5.0.”

SHAPING OUR NEW WORK REALITY Industry 5.0 is a term used to describe people working alongside robots (collaborative robots, fondly dubbed ‘cobots’) and smart

machines. “We believe that people should work with robots, not like robots,” he says. “We want to empower a change in the way in which work is done.” Industry 5.0 has also been a catalyst in attracting young talent to the manufacturing sector. “While in the past large robots were deployed to work in cages, employees are now presented with the unique opportunity to work alongside robots. This has reignited interest by the younger generations in the industry and has made the production floor an exciting place to be again.” Another key drawcard is centred around accessibility

“Interestingly, the initial resistance stems from both the initial cost outlay and potential disruption to the factory floor: neither of which should be of concern,” says Mase. One of the biggest drawcards of a cobot, says Universal Robots, is that they can be redeployed to another location to take on a range of different applications – with minimal planning and costs. “Thanks to their small footprint, flexibility, and versatility, cobots can be used across an array of applications on the factory floor. They can also be fitted with a wide range of end effectors to match various applications. This strong value proposition is a key drawcard for many manufacturers. “Cobots also aid businesses in achieving critical goals such as making the working environment safer, increasing productivity, overall equipment effectiveness and ultimately increasing profits.”

The future is modular.

EIT WINE SYMPOSIUM

SAMPLES SOME OF THE BEST

T

he Advancing Viticulture and Wine Related Research symposium, organised by EIT’s School of Viticulture and Wine Science and held at EIT’s Hawke’s Bay Campus recently, attracted academics and industry players from across the country in person and online. The symposium, which followed on from last year’s successful inaugural event, saw researchers from the University of Auckland, Lincoln University, Plant & Food Research, Otago Polytechnic and EIT present last Thursday. Sue Blackmore, the head of EIT’s School of Viticulture and Wine Science, says the interest from researchers and the industry support for these symposiums has been fantastic. “EIT is pleased to be able to host a diverse group from across the country. It is great to see Lincoln University out in force, University of Auckland staff and students, Otago Polytechnic and Plant & Food Research representation from Marlborough and Hawke’s Bay. “The intent of this gathering is to provide established and emerging researchers from across New Zealand research organisations, in quite diverse areas of wine related research, an opportunity to present in a formal setting and gain feedback from each other and the wine industry.” About 100 people attended throughout the day to hear 16 speakers share their research across five sessions; the NZW Pinot Project, vine health, applied oenology, vineyard perspectives and the current issues facing the local wine industry. Professor Paul Kilmartin, from the School of Chemical Sciences at the University of Auckland, was one of two keynote speakers. “This is a great event for EIT and people like Sue and Rory (Dr Rory Hill, Programme Coordinator and Lecturer – Wine Business

Sue Blackmore, the Head of EIT’s School of Viticulture and Wine Science; Dr Rory Hill, EIT programme coordinator and lecturer – wine business and innovation; and EIT viticulture and wine science lecturer Dr Chandré Honeth; at the recent wine research symposium. and Innovation) should be congratulated fully because there is a real need to have this for our researchers to be able to meet and interface with the wine industry.” He presented on pre-fermentation additives that enhance varietal thiols in Pinot gris, Chardonnay and Sauvignon Blanc wines. His work centred on the NZ Sauvignon Blanc and how what happens during harvest can change the style of wine. “The aromas are very much affected by what happens at harvest. The vineyard is important. In fact, the wisdom is the wine is made in the vineyard and the winemaker perhaps should be a bit hands off and allow the full expression of the grape. “We know though that differences in yeast and how you make the wine are important. But that small transition period of bringing

the grapes in sounds like it’s not important, but whether you machine harvest or handpick, and how many antioxidants you put in, are very important things for the style of wine you get.” Professor Hirini Matunga, Professor of Māori and indigenous development and Professor of indigenous planning at Lincoln University, gave the second keynote address and spoke on ‘Whenua – Terroir by another name?’ “I’m really drawing to attention the fact that sense of place within the context of Aotearoa can’t be seen in an a-historical way, it’s got to be seen through the prism of colonisation as well and land confiscation and the Treaty of Waitangi.” He says this cultural, political lens has largely been absent from the discussion around wine

production. “There are very few, as I understand it, Māori wine growers and Māori wine producers and that’s been until relatively recently.” Three current EIT researchers also presented papers. Viticulture and wine science lecturer Dr Chandré Honeth presented on the impact of using undervine clover to manage mealybug and leafroll virus on vine physiology and metabolism in a Merlot vineyard planted on the Gimblett Gravels. Dr Victor Ye spoke about sensorial characterisation by polarized partial napping and ultra-flashing profiling, while another EIT lecturer in viticulture and wine science, Jane Qin’s presentation was on characterisation of commercial Hawke’s Bay Chardonnay wines – chemical composition and winemaking intentions.

software for rapid and cheap chemical analysis of liquids such as wine, pharmaceuticals and wastewater. Its flagship CloudSpec platform enables spectroscopy to be performed directly on cloudy samples – for chemical analysis and data analytics to improve production processes – which was not previously possible without extensive sample processing.

Winemakers use Marama Labs’ technologies to analyse wine to target and control the style of wines much earlier in the winemaking process, ensuring product consistency, improving quality and maximising consumer satisfaction. Marama Labs CEO Dr Brendan Darby says being selected as one of only 200 startups worldwide

for Battlefield finalist is immense. Zuckerberg, Benioff, Musk, Kalanick, Mayer, Dorsey and many other startup stars have been on the Disrupt stage long before they were in the headlines. “We cannot wait to showcase Marama Labs and share our vision with the world’s leading tech thought leaders at TechCrunch Disrupt. Our clients integrate our platform into their winery operations, capturing chemical data to support their production decisions – and it’s exciting to see CloudSpec’s rapid uptake as a standard tool in the industry. Recently we launched in the US, and we’ve already landed some of the biggest wineries in the US, if not the world, as customers. Being selected as a finalist for such an iconic event is a huge recognition for our team and the New Zealand deep tech industry,” he says. CloudSpec, based on patented research from Te Herenga Waka— Victoria University of Wellington, has been used by some of New

Zealand’s most iconic wineries and winemakers for multiple years. Earlier this year, CloudSpec was launched into the US wine market and is seeing adoption across California, Washington and Oregon – from ultra-premium boutique wineries in Napa Valley to very large-scale producers. Marama Labs plans to target future markets where cloudy liquids pose a major problem for chemical analysis, such as pharmaceutical production and wastewater monitoring. TechCrunch Startup Battlefield 200 finalists get to showcase their company at the conference exhibit, attend the masterclass series and network in person with investors. Of the 200 companies, 20 will be selected to pitch on the huge Disrupt stage in front of thousands for a chance to win $100,000 and the Disrupt Cup. Startup Battlefield alumni represent 900+ companies with over 121 successful exits (IPOs or acquisitions), including Dropbox, CloudFlare and FitBit.

Delivering flexible and highly accurate fluid management SMC Corporation’s LSP series of liquid dispense pumps accurately dispenses fluids with high precision and stability, even at low flow rates. This compact, solenoid type diaphragm pump delivers reliable, leak-proof performance. “The LSP series pump is proven to accurately dispense fluid volumes between 5 µL and 20 µL each time it is energised - with a repeatability of approximately 1%,” says Guiomar Fernandez, product manager for SMC Corporation Australia New Zealand. “The LSP is a truly flexible solution. The customer can easily adjust

the armature stroke with an adjusting screw, to adjust the dispense volume to their specific application needs.” Incorporating a built-in shut-off valve that prevents leaks, this pump efficiently handles a range of fluids, including reagents and cleaning liquids, with temperatures between 10 and 50° C. In addition, the LSP pump is self-contained and does not require priming, even if the pump is dry and there is no liquid in the suction line. For more visit www.smcanz.com
