Meet Theresa and Susan. For the past two years, three times a week, this sweet mother-daughter duo hits the therapy pool at the Veale Wellness and Aquatic Center. The pool features easyaccess entry and exit points with safety railings, as well as a PVC wheelchair. Its novel design is the same depth throughout. Director of Therapy Mimi Pekarek reports that members can receive one-on-one therapy in the pool, or enjoy any of the water exercise classes, including a combination of aerobic and strength as well as Ai Chi (Tai Chi done in the water). ig Leaf Coffee Company is a family business. That alone doesn’t make us necessarily unique or even special, but what does make us different is that what we do isn’t initially obvious to customers. It has to be explained. Let’s get started by telling you what we’re not. We’re not a coffee shop or café. We don’t carry bakery items, ice cream or sandwiches along with our coffee. We focus on one thing. Roasting specialty coffee. Coffee is the seed of the coffee fruit. When this fruit is harvested by the farmer, it is called green coffee and must be processed by fully washing off the skin and pulp (washed method) or baking in the sun (natural/honey process) and dry milling it. The farmer can then sell it to the world through multiple outlets. We only purchase specialty grade green coffee, which scores at 80 points or above on a 100-point scale indicating the quality classification of the coffee. Coffee roasting is the manufacturing

process we use to turn that green seed into a usable product. The seed is tumbled over heat in the drum of a coffee roasting machine. This is a delicate process since a number of things can impact the finished product. If the heat is too high without enough air flow, the seed with burn on the outside but remain green on the inside, resulting in a sour or bitter coffee. As a roaster, every “recipe” includes green coffee, heat, airflow, drum rotation and ambient temperature. I have dedicated years of my life to studying, understanding and perfecting this complicated process that is different for every bean. Hopefully this explains why we don’t serve coffee by the cup. ddie Police is an Ironman. The 44-year-old Perry, Ohio, resident has competed in more than 100 races. He’s run 20 marathons and endured nine triathlons, including Ironman Triathlons, which consist of a 2.4-mile swim, a 112-mile bicycle ride, and a full 26.22-mile marathon. He’s competed all over the Midwest and as far away as St. Croix and New Zealand. “It all started for me back in 2002 when four buddies bet me that I couldn’t run the Cleveland Marathon in under four hours,” Eddie recalls. “I had just two months to train, plus I changed my eating habits. I ran the marathon in 3:42.” Eddie ran that race in 50-degree weather in a torrential downpour, so a fellow competitor suggested that if he could finish with such a good time in such bad conditions, he should consider a triathlon. “The next thing I knew I was competing in a triathlon at Maumee Bay,” Eddie says. “And I was hooked.”

“I Just Trained Through the Pain” Eddie has been training almost every day for the past 20 years, even when his legs began to ache. “My legs have felt sore, heavy and throbbing for 15 years,” he says. “I thought it was because of all the training I was doing, so I just trained through the pain. I never thought it could be varicose veins. All this time I thought varicose veins were a problem for older people, especially older women. ou often see a runner spending a few minutes stretching out their big muscles before a run—the quads, hamstrings and glutes. But you hardly ever see them doing stretches to their feet, which act as shock absorbers to the whole body. I caught up with Dr. Danielle Shaper, founder of Finesse Footcare in Lyndhurst, to find out why that’s so important. “Just a few simple stretches for the small muscles, tendons and ligaments of the feet can prevent short- and long-term injury,” she says. “They can also strengthen the foot and increase its overall flexibility. Stretching after a run is just as important as before. One of the most common and painful ailments I see that affects runners is plantar fasciitis, which can be prevented with stretching.” This time of year, with people transitioning from treadmill runs to openroad runs means getting used to uneven pavement. Buying the right footwear is also important. “You don’t want anything overly flexible,” she explains. “You should opt for the most supportive shoe possible for foot and ankle stability. The Grolleau grape is an ancient French grape finding new life with millennials due to new and innovative techniques in winemaking. “The Grolleau grape variety is only found in the Loire Valley of France and is widely used in sparkling wines,” Jim Sperk of the Northern Ohio Wine Guild says. “The name of the grape is derived from the French word grolle, meaning ‘crow,’ and reflects the dark, almost black color of the berry. Despite its dark color, its thin skin renders it low in tannins.” Jim says that the grape has been used for many years exclusively for rosé wines and is often blended with the Gamay grape. The best of these wines come from the Anjou area of France. “Recent winemaking methods using the Grolleau grape have resulted in light red wines that are low in alcohol with a vibrant acidity, making it good for everyday drinking,” Jim says. “For those reasons, new wine drinkers are drawn to these red wines that are a great choice

when you want to sit back and relax. An Authentic Gift

I

t’s never too late to discover what you are destined to do with your life. For local photographer Joseph John, this realization sparked into existence at 52 years old. “Since I was a young boy, I have always been of the belief that each of us has been blessed with an authentic gift to offer the world—a skill or talent that is innate to each of our unique beings,” Joseph says. “Some ability that just comes naturally to us with minimal toil and effort but produces outlier results. Something that brings good into the world. I had spent many years of my life in search of my authentic gift, my special ability, my passion.” For over 30 years, Joseph embodied an intrinsic skill and passion for photography that he kept only for personal enjoyment. A chance meeting on a weekend getaway led to Joseph discovering his own authentic gift that he was now ready for the world to see. On this getaway, Joseph met artist Cynthia Davis, owner of Hive Alive Art Studio in Marietta, Ohio. He grew comfortable with Cynthia as they spoke and he was compelled to show her his photography—something he loved, but never shared with anyone, even his loved ones. “Not only did I want to show her my work, but I also felt compelled to,” Joseph says. As their conversation continued, Cynthia suggested that Joseph place some of his work in her studio. “And in that single moment, I began to feel a spark of life again,” Joseph

smiles. “I went home, built a makeshift studio to work in and within a few weeks, I had some of my work in her studio. A couple weeks later I would purchase some wall space at Stella’s Art Gallery, where my work received a warm response from fellow

artisans.” This was the revelation Joseph needed to feel alive again. “Suddenly, it all became clear to me—at 52 years old—I knew what I wanted to be, what I had to be,” he says. “I had finally realized my own authentic gift. I am a black and white photographer, and I always have been, I just didn’t know it until now.” A few weeks later, Joseph submitted three pieces to his first juried art show, all of which found space on the show wall. His piece titled “House of Coal” went on to win the show’s People’s Choice award. Joseph does have one color photo, Drive, pictured above. As a black and white photographer, this is the only incolor photo that he will produce for sale to the general public. “Since I have realized my authentic gift, my cup is neither half-full nor half-empty— my cup runneth over,” Joseph smiles. “My limited vocabulary does not allow me to convey the joy that now occupies my heart. Korean BBQ Meatloaf Prep time: 10 minutes Rest time: 30 minutes Cook time: 60 minutes Makes: 1 meatloaf Serves: 8

Ingredients For Meatloaf: 1 ½ lb. ground beef 1 lb. sweet pork 1 C sweet onion, chopped 2 T garlic, minced 2 C panko 2 eggs 2 T fermented gochujang 1 T roasted red chili paste 1 T Korean chili flakes 1 T galangal (or substitute dried ginger) 1 T coconut palm sugar (or substitute brown sugar) 2 T soy sauce For Glaze: 10 oz. apricot jelly 2 T Sialang honey (or substitute local honey) 3 T kecap manis (or substitute ketchup) 8 T fermented gochujang 1 T Korean chili flakes 2 T sesame oil 1 t galangal (or substitute dried ginger)

Here’s How 1. In a large bowl, combine all of the ingredients for the meatloaf and mix until well combined. Rest the meatloaf mixture for 30 minutes or until the panko has softened. 2. Meanwhile, in a separate bowl, whisk together the ingredients for the glaze sauce. Separate about 3-4 tablespoons into a second bowl and set aside. 3. Preheat the oven to 350°F. Spread the meatloaf mixture into a greased loaf pan and mound over the top. Brush 3-4 tablespoons of the reserved glaze on top of the meatloaf. Bake the meatloaf for 40-45 minutes, until the internal temperature reaches 140°F. 4. While the meatloaf is cooking, pour the rest of the glaze into a sauce pot over medium-high heat. Bring to a simmer and reduce for 20-25 minutes, until the sauce has thickened significantly. 5. When the meatloaf reaches an internal temp of 145°F, pour the glaze reduction over the top of the meatloaf. Return to the oven and continue to bake until the internal temperature of the meatloaf reaches 160°F. 6. Rest the meatloaf at room temperature for 30 minutes prior to cutting to fully set the meatloaf. Sprinkle on sesame seeds and green onions for garnish. Serve warm and enjoy! very month when I sit down to write this column, my mind looks to the past for inspiration—elements of my childhood in the deep South, the glory days of the 1960s and ’70s, and comparing yesterday and today. I have to work hard to stay focused on the present, to write a column on artificial intelligence, for example, which I did back in January. This month, I was going to write about how there are no longer any good dads on television like there were in the heyday of Ward Cleaver on Leave It to Beaver and Mike Brady on The Brady Bunch, and how TV dads became either self-absorbed simpletons or bumbling buffoons about the same time Homer Simpson arrived on the scene. But after some research, I learned I was wrong. There are still lots of dutiful, loving dads on TV. I just don’t watch those shows. Beyond the television (a device my own father use to call “the peep hole into paradise”), today’s real-life dads seem pretty responsible, sharing child-rearing duties far more equally with moms than in my parents’ day. Instead of passing out cigars in the maternity ward, today’s dads are on the front lines in the delivery room. They take their kids grocery shopping and drive carpools. “Soccer dads” are almost as common as “soccer moms.” Almost. See, I’m doing it again—comparing yesterday and today. It’s hard not to, given that I have 61 years in the rearview mirror and far fewer ahead of me. But I don’t want to become that guy, the old man who talks incessantly about the past, repeats “back in my day,” has never been on Instagram, and who doesn’t know who Billie Eilish is. Oops, I may already be that guy. Of course, it’s difficult to discuss the present without wading into politics, and Mimi won’t stand for that. She understands that her magazine is a guest in our readers’ homes, so we work to keep politics out of it. The stars of the show within our pages are the quality, locally owned businesses we feature. Perhaps I’d be better off writing about the future, which I do not believe will be as dystopian as we all seem to fear. That said, I don’t recall any TV dads being worried about the future 50 years ago. Living on the cusp of the personal computer revolution—and using microwave ovens and automatic dishwashers for the first time while standing in the shadow of

the awesome achievement of landing on the moon—utterly filled us with hope about the future with its flying cars and enhanced leisure time. Today, we worry about social media destroying our mental health and artificial intelligence annihilating us all. Shoot, I’m doing it yet again, comparing yesterday and today.

The collective brain we call the internet has all the world’s knowledge at our fingertips, so we no longer view intelligence as just knowing stuff through memorization. Now we can reward those who use information in creative and innovative ways. That’s going to lead to greater and greater innovation in every field—from science and technology to entertainment. The internet is still the Wild West. We have yet to figure out how to mine all the promise of the Information Age out of the dark rock of misinformation, but I believe we’ll get there, or, rather, our children will.
