Koronisia wetlands into the Ambracian Gulf. 13
The Ambracian Gulf which comprises a series of marshes and lagoons and is one of the most important wetland systems in Greece. It has been designated as a Ramsar site in 1975, as a special protection area on the conservation of wild birds. The Ambracian Gulf also hosts a rich fish fauna, with several commercial fish species. Mullets (known as “petali”), sea bass, breams wild shrimps known as gambary are the specialties at the lagoon. The lagoons are still fished the traditional way known as «ivaria” or “divaria”. These are constructions with canes that, while they allow the free entry of fishes from the sea, prevent them to return and thus entrap them.

GASTRONOMY ENJOY THE GENUINE FLAVOUR OF THE SIMPLE FRESH FOOD. Paleros cuisine is full of flavour and variety based on what is now known as the Mediterranean diet. Fresh fish from Paleros Bay, fruit and vegetables from organic gardens, meat from animals raised in a natural environment and extra virgin olive oil make up this healthy diet. The Mediterranean diet is a gastronomic delight that leaves your taste buds wanting more. Imaginative dishes together with the more traditional cuisine are always close by.

SUSTAINABLITY 52
53
IMPROVE ENERGY EFFICIENCY. WE GO GREEN.
LOCAL FOOD SOURCING. From the local farms to the consumer ’s table
With great respect to this beautiful place, we implement environmentally friendly practices, including solar panels, charging points for electric vehicles and LED lighting system installation.
REDUCE - REUSE - RECYCLE. NOTHING IS WASTED. Aiming for a zero-waste policy and way of living, we choose to use biodegradable toilet paper, bamboo toiletries, reworked fabrics and eco-friendly cleaning and laundry products. We also use a waste recycling system that is managed by a certified body that includes on-site waste separation of glass, plastic, paper, batteries and more. Most of the Little Ionian’s furniture is made from recycled teak wood sourced from Indonesia. Indonesian teak wood is sustainable and offers double (or more) the longevity of Latin American-sourced teak. The clear advantage of using recycled teak wood is that no new trees need to be cut down in order to meet the demand for it. This tropical wood was once heavily harvested and when reused, living trees can remain intact.
Βoth in terms of health and taste, promoting the benefits of sustainable nutrition amongst our guests, is one of our most important priorities. We advocate local products, we source our food from small family farms and controlled fishing. At a private 16 acre estate, the basket is filled daily with the freshest products available and with great care they are turned into wonderful plates. Organic, local and fair-trade produce is served at the Little Ionian.
WATER CONSERVATION. Water, one of the basics sources of life, runs clean from the melting snow of the mountains in the area. The commitment is to preserve the amounts of clear water for the next generations. Rainwater is collected and used for all irrigation purposes. We use this resource with great respect by reducing water pressure, installing dualflush WC and adopting water bead laundry systems.
MICROCLIMATE IMPROVEMENT. A comfortable outdoor temperature is essential in order to enjoy the summer holiday. In the outdoor areas of the Little Ionian, the temperature drops through the natural air flow in between the buildings, the shades and pergolas, whilst the evaporation of the pool water produces natural evapotranspiration.

TRUST THE PEOPLE IN THE REGION. They know best. In a region that seems frozen in time, the company has become as one with its inhabitants. It incorporates them into its workforce so that they can teach us. With a sense of responsibility towards future generations and with an awareness of everybody ’s potential, the company organises its operation based on this premise. Mutual understanding, peace and security are achieved through shared cultural values, acceptance of diversity and the importance of heritage. We hope to educate our guests by collaborating with local organisations, committing to protect the natural environment and by promoting both bio-agriculture and bio-tourism. People in Paleros will welcome you with their natural sense of hospitality, a virtue that has made Greece such a popular tourist destination over the years. In ancient times, Zeus, who was the God of hospitality, still lives in their hearts.
56
BIOCLIMATIC ARCHITECTURE.
BIODIVERSITY CONSERVATION.
The use of the sustainable energy sources, provided by nature, to create a high standard of living with a low environmental footprint. Returning to the basics of traditional local housing, practices were taken into consideration during the stages of design, in order to minimise the energy consumption and airconditioning. This is achieved by using plenty of natural light inside the suites adjusted by black out shades, individual deep shaded exterior spaces and natural air flow through the suites.
Gardens are created with native plants, therefore, they acclimatise to the local conditions, allowing them to live in their natural environment and reducing their need for excessive human intervention. Bee-attracting flowers ensure the continuous pollination of species and secures the habitat of the bees, vital for the preservation of ecological balance and biodiversity in nature.
