hateau Elan Winery & Resort is many things - it’s a resort, a place to experience luxury, partake in exquisite dining, and make memories through a
variety of activities, but first and foremost, Chateau Elan is a winery. Every year, Chateau Elan produces tens of thousands of bottles of over 30 different unique, awardwinning types of wines, spanning from sparkling to reds to whites to muscadines and everything in between, all produced under the direction of the Chateau’s greatest asset, Simone Bergese. Simone’s work is extremely intricate and demanding all throughout the year, but perhaps the most vital annual timeframe with no room for error is from mid-August to early November, otherwise known to winemakers as the prime harvest season for grapes. Originally from Ceresole d’Alba, Italy, Simone Bergese knows everything there is to know when it comes to producing any variety of wine imaginable. Bergese holds a degree in oenology and viticulture from the Turin University in Northern Italy, and has worked as the chief winemaker in prestigious wineries across Italy and America since 2003. Simone began his journey at Chateau Elan in 2012, and he has paved the path for the winery’s mass success that it currently holds. Since Simone’s arrival, Chateau Elan has multiplied its wine production by six times, making it one of the largest wine producers on the East Coast. Bergese is also to thank for more than 300 prestigious awards that Chateau Elan has won in wine competitions all over the United States. His plans for the winery’s future are to keep exploring new possibilities in order to enhance the current portfolio of native and vinifera varieties, all while remaining in accordance with his strict and successful winemaking philosophy. Simone has established an ideology at Chateau Elan’s winery where intuition and experience will consistently trump textbook winemaking rules. This applies to the entire winemaking process, but is vital to keep a priority during harvest season. Even if instructions state to harvest a strain of grapes at one time, Simone can remarkably look at a cluster of grapes and instinctively identify when will be the choice time to harvest it for the finest and boldest results possible. In an environment like North Georgia where it can be freezing in the morning, scorchingly hot in the afternoon, and thunderstorming at night all within the same day, it’s

knowledge and preparation that goes behind the growing and harvesting operations. “We analyze the sugar content and acid concentration” of a grape before harvesting, Simone said. “When we taste, we look for aromatic precursor presence.” Grapes for Chateau Elan’s different wines are mostly grown on the resort’s vineyards, but some specific strains are grown in different regions across both Georgia and California, so it’s important to distinguish and understand the differences between the areas’ differing geographies, soils, and climates. Georgia’s soils vary little with red-clay dominating and loamy/sandy loam textures making up most of the rest. Everyone that’s ever lived in Georgia for a period of time knows that the weather can be summed up by two words: unpredictable and erratic. This makes climate a big hurdle to overcome in both the growing and harvesting processes, which is where experience and instinct become essential to the job and Simone excels year after year without flaw. When it finally becomes time to harvest the annual 400 tons of grapes from the vines, there’s two methods to get the task done. First, mechanical harvesters are typically used to acquire the bulk of the grapes. These machines are cost-effective and quick, however they’re often a little too quick, as they are sometimes rough and imprecise. Mechanical harvesters also give winemakers an overwhelming amount of fruit to convert at once, which increases the likelihood that some grapes may expire before entering production. The other method is hand-harvesting, which is much more delicate on the fruit and gives winemakers a much steadier flow of product to convert into wine. The only drawback of hand-picking is that it’s a much lengthier process than using machines, and it costs a lot more to pay individuals to do so. 1 cup orange juice, concentrate

1/2 cup Woodford Reserve Bourbon
1/4 tsp ground cinnamon
2 tbsp butter
1/4 cup brown sugar
1/4 tsp allspice
1/4 cup brown sugar
1 tsp salt
1/4 tsp white pepper
1/4 cup Woodford Reserve Bourbon
1/4 tsp ground clove 1/4 cup Woodford Reserve Bourbon 1/4 cup sorghum 1 tbsp soy sauce 3 tbsp butter salt, to taste
Combine the ingredients for the brine, and stir until the sugar is dissolved. Add the chicken and let sit for an hour. Dry the chicken. Combine the orange juice concentrate, all the spices, bourbon, sorghum and soy sauce together in a small sauce pan. Bring to a simmer and reduce by half. Heat 1 tablespoon of butter in a heavy bottomed pan. Saute´ the chicken breasts skinside down until golden. Flip the breasts, cook for three minutes. Add the orange sauce to your sauce pan, bring to a simmer and put into a 350-

375 degree oven for about 15 minutes until the chicken is fully cooked. Remove the breasts from the pan and hold in a warm place while you finish the sauce. Add the Woodford Reserve to the sauce and bring to a simmer until lightly thickened. Check the salt, add to taste. Swirl in the last of the butter and serve the sauce over the chicken. Melt the butter in a heavy bottomed saute´ pan. Add the orange slices and cook until dark brown on both sides. Garnish your dish with caramelized orange slices and enjoy.

2 lemons, zested 3 cups all-purpose flour
1 quart strawberries, capped & sliced
1 tsp kosher salt
1 pint blueberries
1 tsp baking powder
2 tbsps sugar
1/2 tsp baking soda

1 cup buttermilk or sour cream
Preheat oven to 350 degrees. Grease a 10” bundt pan very liberally with butter, then dust with f lour. Cream the butter and sugar together until f luffy. Add the eggs one at a time, mixing in between each egg. Fold in the lemon zest and bourbon. Sift together the f lour, salt, baking powder and baking soda. Fold into the butter and sugar alternating with the buttermilk or sour cream. Bake for 50 minutes or until a toothpick comes out clean. Combine the sugar and bourbon in a small pan and simmer until the sugar has dissolved.
Add the butter and stir together until melted. Add a dash of vanilla. Turn out the cake and pour the glaze over the top. Glaze will harden and crystallize. Place strawberries in a medium bowl and sprinkle sugar over the top. Fold the sugar carefully into the berries and let them sit for 5 minutes. Add the blueberries and bourbon and blend together. Set aside. Combine the bourbon and sugar together in a small saucepan and simmer until sugar is dissolved. Let the syrup cool. Combine with very cold heavy cream. Whip to soft peaks.

1 cup champagne

2 ½ tbsp gelatin powder
½ teaspoon lemon juice
2 teaspoons gelatin powder
½ teaspoon vanilla
2 cups heavy cream
Begin to ma ke the mousse by heating the ⅓ cup of heav y crea m with the powdered sugar in a sma ll saucepa n. Once the mixture is heated, temper the yolk s a nd thoroughly combine. Then add gelatin powder and cook until it is f ully dissolved. Add your white chocolate a nd heated mixture in a separate bowl and mix a ll of the ingredients. Set a side when ever y thing is f ully incorporated. Then with a stand mixer, with the whisk attachment or a separate bowl start whipping the 2 cups of heavy cream. Once the cream has been whipped, add a little bit to the chocolate mixture. Then gradually fold the rest of the chocolate mixture into the whipped cream. Pour into a mold, cup, or pan, whichever you decide.
Then start making the gelee by heating 1 cup of water and 1 ¼ cups of sugar together in a saucepan. Stir in the gelatin and champagne and cook until dissolved. Let completely cool and pour over the mousse. Place in the refrigerator until ever ything sets. Last but not least let’s make the sorbet. Use a food processor or blender and pulse t wo cups of raspberries until puree forms. Strain the juice in a bowl and discard the rest. Add in all the other ingredients and keep in the bowl or transfer to a container. Place it in the freezer for a couple of hours and place it back in the blender and blend until smooth. Put it back in the freezer until it sets. W hen you are ready to ser ve take ever ything out and enjoy.

Whipped Cream
10 graham crackers
1 14 oz can of condensed milk
2 cups heavy cream
2 tbsp sugar
6 tbsp key lime juice
½ cup powdered sugar
5 tbsp butter
2 egg yolks
1 tsp vanilla
1 oz coconut, optional
1 lime, zested 3 cups mango puree
Preheat oven to 300°F. Then begin to make the graham cracker crust. Start by pulsing the graham crackers in a food processor or blender. Once the graham crackers are crushed finely, set to the side. Melt the butter and set it to the side. In a bowl mix together the graham cracker crumbs, melted butter, and sugar. If you want to add f lavor I personally love adding coconut at this point. Once combined place the crust in a prepared tart pan and spray with a small amount of oil. Press the crust on the

bottom and bake for 10 minutes. While the crust is baking start preparing the filling. Combine all of the ingredients together in a bowl and pour into the pan. Bake for 20 minutes or until it doesn’t jiggle in the center anymore. Cool and chill in the refrigerator for a couple of hours or overnight. When ready to serve make your own whipped cream by beating the heavy cream, sugar and vanilla together until f luffy. Serve with a dollop of whipped cream and enjoy.

Whipped Cream
3 cups Oreo crumbs
3 8 oz blocks of cream cheese
2 cups heavy cream
5 tbsp melted butter
¾ cup sugar
½ cup powdered sugar
2 cups Nutella
1 tsp vanilla
1 tbsp vanilla ½ tsp salt 6 oz heavy cream 4 eggs
Preheat oven to 300°F and start making the crust. Put the Oreo cookies in a food processor or blender and pulse until fine. Then melt the butter and mix into the Oreo crumbs. Place the mixture in a 9” pan, press the crust on the bottom and bake for 10 minutes. While the crust is baking proceed to make the cheesecake filling. In a mixer with a paddle attachment combine the cream cheese, sugar, and Nutella until smooth. Then add the eggs one at
a time, scraping each time. Lastly, add the heavy cream and pour the filling over the Oreo crust. Bake the cheesecake in the water bath for 45 minutes to an hour or until it no longer jiggles. When you can touch the top without it getting on your finger that’s the perfect time to take the cheesecake out. Cool and chill in the refrigerator overnight. When ready to serve make your own whipped cream by beating the heavy cream, sugar, and vanilla together until fluffy. Enjoy.
